PUFFY APPLE OMELET

With all the eggs our chickens produce, I could make this omelet every day! It's a pretty festive-looking dish, but you could fix it anytime-including for a light supper. -Melissa Davenport, Campbell, Minnesota

3 tablespoons all-purpose flour
1/4 teaspoon baking powder
1/8 teaspoon salt, optional
2 large eggs, separated, room temperature
3 tablespoons 2% milk
1 tablespoon lemon juice
3 tablespoons sugar
TOPPING:
1 large apple, peeled if desired, and thinly sliced
1 teaspoon sugar
1/4 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375°. Mix flour, baking powder and, if desired, salt. In a small bowl, whisk together egg yolks, milk and lemon juice; stir into flour mixture. , In another bowl, beat egg whites on medium speed until foamy. Gradually add sugar, 1 tablespoon at a time, beating on high after each addition until stiff peaks form. Fold into flour mixture., Pour into a 9-in. deep-dish pie plate coated with cooking spray. Arrange apple slices over top. Mix sugar and cinnamon; sprinkle over apple., Bake, uncovered, until a knife inserted in the center comes out clean, 18-20 minutes. Serve immediately.

You'll be surprised how wonderful sauteed apples and eggs taste together! Serve warm with apple butter or maple syrup.

¼ cup butter
3 large apples - peeled, cored and diced
6 eggs, lightly beaten
1 pinch salt
1 pinch black pepper
¼ cup heavy cream
1 teaspoon white sugar

Steps:

  • In a large skillet or frying pan, melt butter over medium heat. Add apples and saute until tender but not completely cooked.
  • Heat a lightly oiled omelet pan or medium sized skillet. Whisk together eggs, cream, salt, pepper and sugar. Pour egg mixture into omelet pan. When bottom of omelet has begun to set, place half of the apple mixture on top of the eggs.
  • When bottom of omelet is completely cooked, fold over omelet, cover and cook through. Serve warm with remaining apples on top or on the side.

1/2 cup thinly sliced peeled tart apple
2 teaspoons sugar
1/4 teaspoon ground cinnamon
2 tablespoons butter, divided
3 large eggs
3 tablespoons water
1/8 teaspoon salt
1/8 teaspoon pepper
Sweetened whipped cream

Steps:

  • In a small nonstick skillet, saute the apple, sugar and cinnamon in 1 tablespoon butter. Remove from skillet and set aside., In the same skillet, melt remaining butter over medium-high heat. Whisk the eggs, water, salt and pepper. Add egg mixture to skillet (mixture should set immediately at edges)., As eggs set, push cooked edges toward the center, letting uncooked portion flow underneath. When the eggs are set, spoon apple mixture on one side; fold other side over filling. Slide omelet onto a plate. Serve with whipped cream.

APPLE, CHEDDAR, AND BACON OMELET

Cheddar and apples are great together, and the combination gets even better when you add some superior-tasting slab bacon. Any sweet-tart apple-Macoun, Mutsu, Greening, Winesap-works well here.

Number Of Ingredients 6

3 extra-large eggs
2 slices thick slab bacon, cut into 1/4-inch pieces
1/4 sweet-tart apple, cored, peeled, and thinly sliced
Kosher salt and freshly ground black pepper to taste
1 teaspoon unsalted butter
1/4 cup grated sharp white Cheddar cheese (1 ounce)

Steps:

  • Using a whisk or a fork, beat the eggs in a small bowl until frothy.
  • Sauté the bacon in an 8-inch nonstick skillet over medium heat for 5 minutes, or until crisp. Transfer the cooked bacon to paper towels; set aside. Drain all but 1 tablespoon of the bacon fat from the skillet and either discard it or reserve it for another use.
  • Sauté the sliced apple in the remaining bacon fat for 3 minutes, or until softened. Season lightly with salt and pepper.
  • Return the bacon to the pan. Sauté the bacon and apple until hot. Add the butter and when sizzling, pour the eggs into the pan, tilting the pan gently to evenly distribute the eggs around the bacon and apple. Let the eggs cook and set for about 5 seconds.
  • Using a silicone or rubber spatula, gently pull the cooked egg from the edges toward the center of the pan, while allowing the liquid egg to run underneath and onto the hot pan. When the sides of the omelet begin to rise up the edge of the pan, flip the omelet. It is done when it's nicely set but not overly firm. There should be a hint of just-cooked egg in the center of the omelet.
  • Sprinkle the Cheddar cheese evenly over the top of the omelet. Using the spatula, fold the omelet in half and slide it onto a serving plate.

2 tablespoons unsalted butter
2 teaspoons sugar
1 sweet apple such as Fuji or Gala, peeled, halved, cored, and cut into 1/4-inch-thick slices
3 large eggs
2 tablespoons crème fraîche or sour cream
2 tablespoons dulce de leche*
Garnish: confectioners sugar for dusting (optional)

Steps:

  • Melt butter in a 12-inch nonstick skillet over moderate heat until foam subsides. Add sugar and cook, stirring, until dissolved, about 1 minute. Add apple and cook, turning slices over once, until golden and just tender, 5 to 8 minutes.
  • Whisk together eggs with a pinch of salt. Pour eggs over apple and cook over moderately low heat, lifting up cooked egg around edge occasionally with a heatproof rubber spatula to let raw egg flow underneath, until omelet is set but top is still slightly moist, about 2 minutes. Dollop crème fraîche and dulce de leche across center of omelet. Fold bottom third of omelet over filling using a heatproof plastic spatula. Holding skillet over a plate, carefully tilt skillet until omelet slides out and almost half is touching plate, then turn skillet upside down, as if trying to cover plate, to make omelet fold over itself. Cut omelet in half and divide between 2 plates.

GOAT CHEESE AND APPLE OMELET



Goat Cheese and Apple Omelet image

This omelet of green apples and goat cheese is an unusual pairing -- at least in the omelet world -- but a wonderful one from Garrett Oliver, the brewmaster of Brooklyn Brewery. On the day we made this recipe, he paired the dish with a glass of Blanche de Chambly, a Belgian-style wheat beer made in Canada.

3 tablespoons butter
1/2 Granny Smith apple, peeled and sliced 1/4-inch thick
Pinch sugar
1 small log of fresh goat cheese, about 4 ounces
2 extra-large eggs
1 tablespoon milk
Coarsely ground black pepper

Steps:

  • Melt half the butter in a small nonstick saucepan or wok over medium heat. Add apple and cook until slices start to brown, then add sugar. Stir slices until nicely browned, about 5 minutes. Remove from heat and set aside. Cut 3 slices of goat cheese, 1/2 inch thick.
  • Beat eggs and milk together, just until uniform; do not overbeat. Heat remaining butter in an omelet pan or small nonstick pan over high heat. When butter foams, add eggs and reduce heat to medium-low. When omelet is about half firm, carefully turn it over.
  • Arrange goat cheese on one half of omelet; cover cheese with apple slices. Fold omelet in half, turn off heat and leave for one minute. Place omelet on a warm plate, and sprinkle with black pepper. Serve immediately, with a witbier.
