FRESH APPLE CAKE
Perfectly spiced cake with chunks of fresh apple. Frosted with brown butter cream cheese and a drizzle of caramel sauce! The perfect cake for fall!

Steps:
- IMPORTANT: Make sure all your ingredients are at room temp (see notes at the bottom of the recipe)
- Preheat oven to 350 F (177 C)
- Peel the apples and core them using an apple corer or a knife.
- Cut the apples into 1/4 inch pieces and place into a bowl.
- Squeeze 1/2 a lemon over the apples to prevent browning. Set aside
- Sift together flour, baking soda, salt, ginger, nutmeg, cinnamon and cloves. Set aside.
- Add butter to a stand mixer with the paddle attachment and cream until smooth.
- Add sugar and oil to the butter and cream on medium until the mixture is white and fluffy.
- Add egg and vanilla to the butter mixture and mix until combined.
- While mixing on medium, add in dry ingredients in thirds and mix until combined
- Fold in applesauce and chopped apples until combined
- Grease three, 8 inch pans with cake goop or another type of pan release.
- Bake layers at 350 for 30 minutes, or until a toothpick comes out clean. Layers will be thin.
- Let cake rest in the pan until it's cool enough to touch, then flip out onto a wire rack.
- Make sure to cool completely before stacking. (Wrap in plastic wrap and place in fridge or freezer to speed up the cooling process.)
- Place softened butter in the bowl of your stand mixer with the whisk attachment and mix until smooth.
- Add in your cream cheese and mix until smooth
- Add in your browned butter and mix until smooth and creamy
- Add in your powdered sugar one cup at a time while mixing on low until all the powdered sugar is added. Do not over-mix.
- Add in your salt and vanilla until combined.
- Place sugar and water in a medium-sized pot. Cover with the lid and bring to a boil on medium-high heat.
- Remove lid and place a candy thermometer in the pot. Continue cooking the sugar until thermometer reads 350º (hard crack stage) or it's a deep golden brown color. Do not stir.
- Remove the sugar from heat and slowly whisk in butter. Be careful, it will bubble up.
- Whisk in cream and salt.
- Let caramel cool completely before using it for the drip

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan.
- Prepare the topping by mixing together the brown sugar, cinnamon, nutmeg, and chopped pecans.
- Sift together the flour, baking powder, baking soda, and salt.

- 1. Preheat oven to 325 F. Grease a 10" tube pan, 2 loaf pans or a 13x9" cake pan.
- 2. Sift flour, baking soda, salt, cinnamon and cloves into a bowl; set aside.
- 3. Cream together butter and sugar; add eggs and oil. Mix well.
- 4. Add dry ingredients; stir until blended.
- 5. Stir in chopped apples. Add nuts (if desired).
- 6. Stir until completely blended.
- 7. Pour batter into the greased pan.
- 8. Bake 1 to 1 1/2 hours or until toothpick inserted into center comes out clean. (Check it after the 1 hour time, mine is always just about done then.)
- 9. Cool cake.
- 10. When cooled, sprinkle with confectioners' sugar, if you like. It's just as good without any topping at all.

- Preheat oven to 350°F. Grease a Bundt pan and set aside.
- In a large mixing bowl, whisk together the flour, sugar, salt, baking soda and cinnamon. Add the eggs, oil and vanilla and beat on low with an electric mixer, just until blended. Using a spatula, fold in the nuts and apples.
- Scoop the batter into the prepared Bundt pan and smooth the top. Bake at 350°F for 70 - 90 minutes or until a wooden skewer comes out with no wet batter. A few moist crumbs is fine. Baking times may vary depending on the kind of apples used.

- In a small mixing bowl combine the cream cheese, butter, powered sugar and vanilla. Beat on low with an electric mixer. Add a little milk to thin, if needed, or more powdered sugar to reach the desired consistency. If you prefer a glaze instead of thick icing, reduce the powdered sugar to 1 cup.

- Heat oven to 350°F. Spread pecans in ungreased shallow pan. Bake uncovered 6 to 10 minutes, stirring occasionally, until light brown. Cool.

- Position a rack in the center of your oven and preheat the oven to 350°F. Butter or coat a 9-inch round baking pan with nonstick spray. Line the bottom of the pan with a round of parchment paper.
- In a large bowl, whisk the brown sugar and eggs until pale and foamy, about 1 minute. Add the oil, vanilla, cinnamon, nutmeg, salt, and whiskey and espresso powder, if using. Whisk until smooth and emulsified.
- Add the flour, baking powder, and baking soda and whisk until well-combined and smooth.
- Use a rubber spatula to fold in the apples and ¼ cup of the nuts.
- Pour the batter into the prepared pan and use an offset spatula to gently smooth the top, making sure the apples are well dispersed and go all the way to the edges of the pan. Tap the pan gently on the counter to release any air bubbles. Sprinkle the remaining ¼ cup nuts over the cake.
- Bake until puffed and golden, and a tester inserted into the center comes out clean, 30 to 40 minutes. There may be a bit of moisture on the tester from the apples. Set the pan on a rack to cool for about 15 minutes. Run a thin knife around the edge and carefully turn the cake out onto a cooling rack. Then invert it again so that it's puffy side up, if desired.
- Store the cake, wrapped tightly, at room temperature or in the fridge for up to two days.

- Mix together your apples, nuts, cinnamon, and vanilla. Set this bowl aside.
- In another bowl, beat together the liquid, oil, and the eggs. Set this aside

APPLE GOOEY BUTTER CAKE
I grew up in St. Louis, and we are proud to be the home of the legendary Gooey Butter Cake! The legend goes like this: The first cake was made sometime in the 1930s, the result of an accident by a careless baker named John Hoffman who worked at St. Louis Pastries Bakery in the south side of the city. He mistakenly reversed the proportions of butter and flour in his cake batter, with way more butter than flour in the recipe, the cake was a buttery blob that spread out all over the pan! He refused to throw it away and named it Gooey Butter Cake, what a delicious accident! There are many variations to this "accident", here, I have given you the basic recipe and added a layer of apple compote for the fall season, the apples go between the crust and the topping. It's important not to overbake the cake, or you won't have the "gooey" part that we love so much! I know you'll love this as much as we do!

- To make the apples, add the butter to a medium saucepan over medium heat and stir until melted, now add in the brown sugar and stir until the sugar has dissolved then add the cinnamon and apples. Stir and cook the mixture simmer for 15 minutes or until the apples are soft. Remove from the heat.
