Everyone wants to have a few great brunch recipes that can be made ahead of time. This is one of them. The flavor of this French toast? Think Bananas Foster-minus the rum.

1 1/2 cups packed brown sugar
1/2 cup butter or margarine, melted
1/4 cup light corn syrup
1/2 cup chopped walnuts
3 medium bananas, sliced
1 loaf (about 1 lb) sliced unfrosted firm cinnamon bread
6 large eggs
1 1/2 cups milk
1 teaspoon vanilla
Powdered sugar, if desired

Steps:

  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In large bowl, stir brown sugar, butter, corn syrup and walnuts until smooth. Gently stir in bananas. Spoon mixture into baking dish.
  • Reserve ends of bread for another use because they don't soak up the egg mixture very well. Arrange 2 layers of bread on banana mixture, tearing bread to fit if needed.
  • In medium bowl, beat eggs, milk and vanilla with wire whisk until well blended. Pour over bread. Cover tightly; refrigerate at least 1 hour but no longer than 24 hours.
  • Heat oven to 325°F. Uncover; bake 45 to 55 minutes or until knife inserted in center comes out clean. Serve portions upside down, spooning sauce from bottom of dish over each serving. Sprinkle with powdered sugar.

1/2 cup fat-free milk (skim)
1 large egg
1 tablespoon light-brown sugar
1/4 teaspoon ground cinnamon
Coarse salt
1/2 tablespoon butter
4 slices whole-wheat sandwich bread
1 banana
4 teaspoons pure maple syrup

Steps:

  • In a large shallow bowl, whisk together milk, egg, sugar, cinnamon, and a pinch of salt.
  • Dip bread, one slice at a time, into egg mixture, pressing down so bread absorbs liquid. In a large nonstick skillet, melt butter over medium heat. Place all 4 slices in skillet; cook 2 minutes per side or until golden brown.
  • Meanwhile, cut banana crosswise into 1/4-inch-thick rounds. Divide bread between two plates; top with banana and syrup. Serve.

This is very rich and delicious and is perfect for impressing your company. I love it, but usually scale it down quite a bit since it's just me. It's in my B&B arsenal.

4 bananas, sliced
1 cup brown sugar
1/2 cup Bourbon
2 tablespoons butter
6 eggs
1/4 teaspoon salt
2 tablespoons vanilla
1/2 cup cream (you may sub in half & half)
8 slices thick white bread (I use Texas Toast)

Steps:

  • To make sauce: In a small pan, melt butter and brown sugar over medium heat; carefully add bananas and simmer for 2 minutes. Remove from stove and add bourbon; return to flame and continue simmering an additional 2 minutes. Cover and keep warm until ready to use.
  • To make batter: In a large bowl, whisk eggs and salt. Add vanilla. Pour in cream, continuing to whisk until well blended.
  • Melt 1 to 2 tablespoons butter in a large frying pan over medium-high heat. Dip each bread slice in batter and cook each side until golden brown. Repeat with remaining bread slices.
  • Transfer 2 bread slices to individual plates and top with banana slices and sauce. Serve with maple syrup or powdered sugar.

It's a delicious, fast breakfast pleaser for company. You don't even need maple syrup for it because it's so sweet and moist. My mother made this with my aunt for Christmas and its a fav for us all.

1 cup cream (half and half or milk is fine too)
6 large eggs
1/4 cup maple syrup
2 tablespoons brown sugar
1 teaspoon vanilla
1/4 teaspoon salt
8 slices bread

Steps:

  • Preheat oven to 400°F.
  • Mix together all the ingredients-make sure the brown sugar is dissolved.
  • Pour into a deep baking pan and soak the pieces of bread (you can soak them overnight if you want) with a large spatula. Take pieces of bread out and put on a baking sheet and then you can pour the excess batter over the bread again.
  • Cook for 6-8 minutes, then flip each piece of bread over and cook for about 6-8 minutes more.
