BAKED APPLE FRENCH TOAST

Baked Apple French Toast image

A lovely mash-up of French toast and apple pie, this prep-ahead baked apple French toast has all the makings of a special holiday brunch dish.

Provided by Jennifer Segal

Categories     Breakfast & Brunch

Time 1h10m

Yield 8

Number Of Ingredients 13

One 1-lb challah or raisin challah
5 large eggs
1½ cups half & half
3 tablespoons maple syrup
2 tablespoons bourbon (optional; replace with apple cider or half-&-half if desired)
1 teaspoon vanilla extract
Heaping ¼ teaspoon salt
4 tablespoons unsalted butter
4 large Granny Smith apples, peeled and thinly sliced
¼ cup + 2 tablespoons packed dark brown sugar
6 tablespoons maple syrup
1 teaspoon ground cinnamon
Confectioners' sugar and/or maple syrup

Steps:

  • Butter a 9 x 13-inch or 3-QT baking dish. Slice the bread into ¾-inch-thick slices.
  • In a large bowl, whisk together the eggs, half & half, maple syrup, bourbon, vanilla, and salt.
  • Dip each slice of challah into the custard mixture for about 5 seconds, then arrange in an overlapping pattern in the prepared baking dish. Be sure the entire bottom of the dish is covered with the bread. Pour any remaining custard over the bread. Set aside.
  • In a large sauté pan, melt the butter over medium-high heat. Add the apples, brown sugar, maple syrup, and cinnamon. Cook, stirring frequently, until the apples are softened and the sugar-syrup is thickened, about 8 minutes. Spoon the apples and sugar-syrup evenly over the bread, making sure not to leave any of the syrup behind. If not baking immediately, cover the dish with plastic wrap and refrigerate overnight. Otherwise, proceed with the recipe.
  • Preheat the oven to 350°F and set an oven rack in the middle position.
  • Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and continue baking until puffed and golden, about 20 minutes more. Remove from the oven and, using a fine sieve, dust with the confectioners' sugar. Serve with maple syrup.

STUFFED APPLE FRENCH TOAST WITH PRALINE TOPPING

Stuffed Apple French Toast with Praline Topping image

This decadent and rich French toast casserole is a big hit at my Christmas breakfast each year. It's a big recipe because I'm always serving a crowd but it's easily scaled down for smaller portions. The tart apples are a beautiful balance with the deliciously sweet praline topping. I've been working on this recipe for a few years and finally got it perfect! Enjoy! Serve with warm maple syrup.

Categories     Breakfast and Brunch     French Toast Recipes

Time 9h30m

Yield 18

Number Of Ingredients 17

2 loaves challah, cut into 1-inch thick slices
1 stick unsalted butter
¼ cup packed brown sugar
1 ½ teaspoons ground cinnamon, divided
½ teaspoon salt
6 Granny Smith apples - peeled, cored, and thinly sliced
10 large eggs
2 cups half-and-half
2 cups heavy cream
2 teaspoons vanilla extract
½ teaspoon ground nutmeg
2 sticks unsalted butter, melted
1 cup packed brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg

Steps:

  • Butter an 11x18-inch casserole dish and layer with 1/2 of the bread slices, covering the bottom completely.
  • Melt butter in a large frying pan over medium heat. Add brown sugar, 1 teaspoon cinnamon, and salt and stir to combine. Add apple slices and cook until crisp-tender, soft but still maintaining their shape, about 10 minutes. Remove from heat and let cool for 5 minutes.
  • Spread cooled apple mixture over bread layer in the pan. Top apple mixture with remaining bread slices, overlapping if necessary for good coverage.
  • Whisk eggs, half-and-half, heavy cream, vanilla extract, remaining 1/2 teaspoon cinnamon, and nutmeg together in a large bowl. Pour over casserole, making sure to cover the bread evenly with the egg mixture. Cover with foil and refrigerate, 8 hours to overnight.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine melted butter, brown sugar, pecans, corn syrup, cinnamon, and nutmeg in a bowl. Spread topping evenly over the casserole.
  • Bake in the preheated oven until puffed and lightly golden, 40 to 45 minutes. Check halfway through cooking time and cover with foil if the bread is browning too quickly. Let cool for about 10 minutes before serving.

  • Syrup. Something simple and sweet for your French toast is of course syrup! I love the classic maple syrup but there’s definitely other kinds you can try.
  • Fresh Fruit. For a refreshing way to enjoy your French toast, top it off with some fresh fruits. I love strawberries, blueberries, and bananas. If you want a little something extra, mix and match the flavors with your chosen syrup or sprinkle on some powdered sugar.
  • Peanut Butter. A spoon of peanut butter will also go great with your French toast. I like sweet and creamy peanut butter but you can also try it with something crunchier or saltier.
  • Bacon. For a big breakfast lover like me, bacon is simply too good to resist! I love a good sweet and savory combo and French toast and bacon is no exception.
  • Ham and Cheese. Monte Cristo breakfast, anyone? A ham and cheese French toast sandwich is a great on-the-go meal. I like to use turkey ham with Swiss cheese, just like a regular Monte Cristo sandwich but with the added sweetness of French toast.
  • Nutella. Here’s one the kids will definitely love. Nutella and French toast will be a sure, picky-eater-proof hit on the breakfast table. Really, you can’t go wrong with this!
  • Cinnamon. There’s something about the scent of cinnamon that makes any sweet treat taste even better! Sprinkling just a bit of ground cinnamon over your French toast is a great way to add flavor.
  • Peaches and Cream. Here’s a combo that’s made its way to the hall of fame of dessert combos: Peaches and Cream! You can make it simple with some fresh peaches and whipped cream or go all in with some fried or glazed peaches and vanilla ice cream.
  • Mozzarella and Honey. If you want another sweet and savory combo, you’re going to love this one! Mozzarella and honey go perfectly together. Their subtly savory and mildly sweet flavors compliment each other oh so well.
  • Coconut Flakes. Craving a tropical-themed breakfast? Add some coconut flakes to your French toast! The coconut flavor is subtle so you might want to add some fruit as well.
