OVEN FRENCH TOAST



Oven French Toast image

This oven baked french toast works great with strawberries.

Number Of Ingredients 8

250 ml butter milk/milk (I used 125ml milk + 125ml buttermilk, any ratio works)
2 eggs
1 tbsp sugar
pinch of salt
1/4 tsp ground nutmeg (or cinnamon)
lemon zest extract (or fresh lemon zest)
5 old slices of bread (any bread is fine, however, very dark breads will influence the overall texture, lighter breads will make a lighter and more neutral tasting French toast, but really, just use left overs!)
8 strawberries (but more is better)

Steps:

  • Just like any french toast, first make the egg mix, before draining the bread. Mix the (butter) milk, eggs, sugar, salt, nutmeg and zest (extract) in a deep bowl.
  • Take an oven dish and slightly grease the sides if not non-stick. I used a glass oven dish.
  • Soak the slices of bread in the egg mixture one by one and place in the oven dish.
  • Place sliced strawberries in between the different layers of bread. Make sure they cover each other up nicely and there's no empty spaces between the slices. Feel free to push down slightly. Pour the remaining mixture over the slices.
  • Leave to rest for at least 10 minutes to assure the breads all soak up the mixture properly (especially if your bread has started staling or is cut in thick slices).
  • Bake in the over at 180C for 40 minutes, until the top is a nice golden brown and all the egg has cooked.
  • Once baked enjoy with more fresh strawberries and if you have a sweet tooth some sugar syrup or icing sugar.

1 cup half-and-half
3 large eggs
2 tablespoons honey, warmed in microwave for 20 seconds
1/4 teaspoon salt
8 (1/2-inch) slices day-old or stale country loaf, brioche or challah bread
4 tablespoons butter

Steps:

  • In medium size mixing bowl, whisk together the half-and-half, eggs, honey, and salt. You may do this the night before. When ready to cook, pour custard mixture into a pie pan and set aside.
  • Preheat oven to 375 degrees F. Dip bread into mixture, allow to soak for 30 seconds on each side, and then remove to a cooling rack that is sitting in a sheet pan, and allow to sit for 1 to 2 minutes.
  • Over medium-low heat, melt 1 tablespoon of butter in a 10-inch nonstick saute pan. Place 2 slices of bread at a time into the pan and cook until golden brown, approximately 2 to 3 minutes per side. Remove from pan and place on rack in oven for 5 minutes. Repeat with all 8 slices. Serve immediately with maple syrup, whipped cream or fruit.

3/4 cup plus 3 tablespoons butter, very thinly sliced
3/4 cup dark brown sugar
2 teaspoons vanilla extract
1/4 cup plus 2 tablespoons maple syrup, divided
kosher salt
4 large eggs
1 1/2 cups milk
3/4 cup heavy cream
1/2 teaspoon cinnamon, divided
1 loaf challah, cut crosswise into 1-inch slices (lightly toasted or a day old)
3 tablespoons granulated sugar
2 cups mixed berries, such as raspberries, blackberries and strawberries
1 lemon, juice of
1/2 cup heavy cream, lightly whipped for serving

Steps:

  • In a small saucepan, combine 1 1/2 sticks butter, dark brown sugar, vanilla extract, 3 tablespoons maple syrup, and ½ teaspoon salt. Bring to a boil over medium-high heat, whisking until smooth. Reduce heat to maintain a brisk simmer and continue cooking until thickened and slightly reduced, 3 minutes more. Transfer to an 8" x 8" baking dish and set aside to cool slightly.
  • In a large measuring cup, whisk to combine eggs, milk, cream, remaining 3 tablespoons maple syrup, ¼ teaspoon cinnamon, and ½ teaspoon salt. Place challah in two layers on top of syrup in baking dish, ripping pieces to fill spaces if necessary. Pour milk mixture over challah. Let sit one hour, flipping the top pieces of challah 2-3 times, to help custard saturate slices.
  • In a small bowl, combine 2 tablespoons sugar and remaining ¼ teaspoon cinnamon. Distribute remaining 3 tablespoons butter slices on top of bread and sprinkle cinnamon-sugar mixture on top. Place baking dish on a parchment-lined baking sheet and transfer to oven. Bake until puffed, golden, and a toothpick inserted in the middle comes out clean, about 45 minutes.
  • While French toast bakes, combine berries, lemon juice, and remaining 1 tablespoon sugar in a bowl. Toss to combine and set aside to macerate.
  • Remove french toast from oven and scoop, serving with pan syrup and macerated berries. If desired, serve with additional syrup and lightly whipped, unsweetened cream.

This recipe is an overnight French Toast recipe. It is very easy to make and cooks up well. The finished toast is not too soft, as with some overnight recipes. I prefer to make mine with Finnish Pulla Bread (a very good recipe here, just search for it), or with any decent bread from the grocery store.

1 loaf bread
1/2 cup butter
1 cup brown sugar
1 teaspoon cinnamon
7 eggs
1 1/2 cups milk

Steps:

  • Melt butter in bottom of 9 x 13 pan.
  • Sprinkle brown sugar over butter, then cinnamon over brown sugar.
  • Place as many pieces of bread in the pan as possible.
  • Mix together eggs, salt, and milk. Beat well.
  • Pour mixture over bread, cover and refrigerate overnight.
  • Pre-heat oven to 350, cook for 25 minutes, then flip french toast over and cook for an additional 20 minutes.

1 cup water
1 cup brown sugar, packed
2 Tbsp whipping cream
½ tsp ground cinnamon
1 panettone (1 lbs), paper removed
6 large eggs
¾ cup heavy whipping cream
¾ cup whole milk
¼ cup sugar
2 Tbsp unsalted butter, divided
½ cup mascarpone cheese

Steps:

  • In a medium saucepan, bring the water and sugar to a boil over high heat, stirring until the sugar dissolves. Boil until the syrup reduces to 1 cup, about 10 minutes. Remove the pan from the heat and whisk in the cream and cinnamon. Keep the syrup warm over low heat until ready to serve.
  • (The syrup can be made 1 day ahead. Cool, then cover and refrigerate. Reheat before serving.)
  • Preheat the oven to 200ºF. Preheat a nonstick griddle or large nonstick sauté pan over medium heat.
  • Using a serrated knife, remove the top from the panettone. Cut the bottom of the panettone in half crosswise. Cut each half into 4 equal pieces. In a large bowl, whisk together the eggs, cream, milk, and sugar until smooth. Working in batches, dip slices of panettone into the custard, turning to allow both sides to absorb the custard. Cook the soaked panettone slices until golden brown and firm to the touch, about 4 minutes per side. Transfer the French toast to a baking sheet and keep warm in the oven. Repeat with remaining 1 tablespoon butter and panettone slices.
  • Melt 1 tablespoon of butter on the griddle. Working in batches, dip slices of panettone into the custard, turning to allow both sides to absorb the custard. Cook the soaked panettone slices until golden brown and firm to the touch, about 4 minutes per side. Transfer the French toast to a baking sheet and keep warm in the oven. Repeat with remaining 1 tablespoon butter and panettone slices.
  • Transfer the French toast to plates. Drizzle the cinnamon syrup over the French toast and place a dollop of mascarpone on top. Lightly dust with powdered sugar and serve with fresh berries.
  • Cook's Note: The top of the panettone can be reserved and used for toast.
  • Serving suggestion: powdered sugar and assorted fresh berries.
