- In a small bowl, lightly beat the eggs. Heat butter in a small saucepan over medium heat until foamy. Add eggs and cook, whisking, until they begin to set; gently whisk in milk and chives. Remove from heat and serve with toasted bread.
FRENCH SCRAMBLED EGGS
This comes from the most recent edition of "The Joy of Cooking." Takes a little elbow grease, and you'll need a double boiler. These are the creamiest, richest and most lucious tasting scrambeled eggs I've ever eaten!

Steps:
- Place 1-inch of water in the bottom of a double boiler and heat until boiling, reduce the heat to very low.
- When the water is simmering, place the top of the double boiler over the water.
- Add 1 tablespoon of the butter and heat until melted.
- Meanwhile, whisk the eggs in a medium bowl just until combined.
- Add 1 tablespoon butter, cut into small pieces, salt to taste and a grinding of pepper.
- Pour into the double boiler.
- Cook, stirring constantly with a wooden spoon or heatproof rubber spatula, until eggs are thickened into soft curds, 10 to 15 minutes.
- To serve, place a slice of toast on the side of each of two plates and spoon the eggs into the center.

- Combine eggs, salt, and pepper; stir briskly with a fork until blended.
- Melt butter in a large skillet, rotating skillet to coat bottom; add egg mixture.
- Cook over medium-low heat, stirring constantly, until eggs are firm, but still moist.
- Remove from heat; stir in cream.
- Serve immediately.

OEUFS BROUILLES A LA MICHEL GUERARD (FRENCH SCRAMBLED EGGS WITH CAVIAR)
Steps:
- With a serrated knife, cut each egg shell about 1/2-inch from the pointed end. Empty the raw eggs into a bowl and reserve. Wash the egg shells (tops and bottoms) in warm water, then turn them upside down on a towel to dry completely.
- Over very low heat melt the butter in a saucepan just large enough to hold the eggs. Beat the eggs with a whisk, pour through a sieve into the warm butter, and return to the very low heat. Beat constantly with the whisk, gradually increasing the heat, until the eggs are thick and creamy, not solid.
- Remove the eggs immediately from the heat and continue whisking while adding the cream, shallots, chives, salt and pepper.
- Place the dried eggshells in egg cups. Using a teaspoon, carefully fill each shell 3/4 full with the creamed eggs, then finish filling each shell with 1 tablespoon of caviar. The caviar should be slightly domed on top. Place the little top of each shell on the caviar. Serve with toast.

- In a small mixing bowl, use a fork to beat together the eggs, milk, salt, and pepper. Mix until the eggs are an even light yellow color, but don't go out of your way to incorporate any more air than you need to. (That's one reason to use a fork instead of a whisk to mix.)
- Set a small, good-quality nonstick pan over low heat. For four to eight eggs, an 8-inch pan works well. It's easier to control the heat when you have a bit of depth to the eggs rather than a very shallow layer.
- Add the butter to the pan and swipe it around with the spatula to lightly coat the whole pan. When there's a light layer of melted butter on the pan but most of the butter is still solid, pour in the egg mixture.
- From now until approximately INFINITY, stir the eggs constantly with a wooden spoon or silicone spatula. This will take about 15-20 minutes total, depending on the heat of the low setting on your stove. (For reference: On my professional gas range, I use the low setting rather than the even lower simmer. On the little electric burner that I use to make videos, I started on the low setting and ended up turning it up just a touch to somewhere between low and medium-low.) For the first four to five minutes, it will seem like nothing is happening. The eggs will remain liquid with no curds forming. But slowly bringing the eggs up to temperature will make all the difference in the final process, so don't rush it. Just keep stirring constantly, running your spatula around the entire bottom and sides of the pan.
