OEUFS BROUILLES A LA MICHEL GUERARD (FRENCH SCRAMBLED EGGS WITH CAVIAR)

Oeufs Brouilles a la Michel Guerard (French Scrambled Eggs with Caviar) image

Provided by Food Network

Categories     appetizer

Time 1h

Yield 4 servings

Number Of Ingredients 8

6 large eggs
1 tablespoon butter
2 tablespoons creme fraiche
6 tablespoons finely chopped shallots
1 tablespoon finely chopped chives
Salt and freshly ground black pepper
3 ounces caviar
12 long thin pieces of toasted bread

Steps:

  • With a serrated knife, cut each egg shell about 1/2-inch from the pointed end. Empty the raw eggs into a bowl and reserve. Wash the egg shells (tops and bottoms) in warm water, then turn them upside down on a towel to dry completely.
  • Over very low heat melt the butter in a saucepan just large enough to hold the eggs. Beat the eggs with a whisk, pour through a sieve into the warm butter, and return to the very low heat. Beat constantly with the whisk, gradually increasing the heat, until the eggs are thick and creamy, not solid.
  • Remove the eggs immediately from the heat and continue whisking while adding the cream, shallots, chives, salt and pepper.
  • Place the dried eggshells in egg cups. Using a teaspoon, carefully fill each shell 3/4 full with the creamed eggs, then finish filling each shell with 1 tablespoon of caviar. The caviar should be slightly domed on top. Place the little top of each shell on the caviar. Serve with toast.

FRENCH SCRAMBLED EGGS: HOW TO MAKE SOFT SCRAMBLED EGGS ...
2020-05-18 French scrambled eggs take a lot more time and attention than American-style scrambled eggs (which we LOVE, too). • In a small mixing bowl, use a fork to beat together the eggs, milk, salt, and pepper. Mix until the eggs are an even light yellow color, but don't go out of your way to incorporate any more air than you need to. (That's one reason to use a fork instead of a whisk to mix.)
  • Set a small, good-quality nonstick pan over low heat. For four to eight eggs, an 8-inch pan works well. It's easier to control the heat when you have a bit of depth to the eggs rather than a very shallow layer.
  • Add the butter to the pan and swipe it around with the spatula to lightly coat the whole pan. When there's a light layer of melted butter on the pan but most of the butter is still solid, pour in the egg mixture.
  • From now until approximately INFINITY, stir the eggs constantly with a wooden spoon or silicone spatula. This will take about 15-20 minutes total, depending on the heat of the low setting on your stove. (For reference: On my professional gas range, I use the low setting rather than the even lower simmer. On the little electric burner that I use to make videos, I started on the low setting and ended up turning it up just a touch to somewhere between low and medium-low.) For the first four to five minutes, it will seem like nothing is happening. The eggs will remain liquid with no curds forming. But slowly bringing the eggs up to temperature will make all the difference in the final process, so don't rush it. Just keep stirring constantly, running your spatula around the entire bottom and sides of the pan. The color will go from brighter to darker yellow over these first few minutes, but you might not notice since it will be very gradual. If nothing at all has happened after about five o

  • 1. Crack each egg into a small bowl so that you can remove any shell, if necessary, then transfer to a mixing bowl. Repeat with the remaining eggs.
  • 2. Season with kosher salt. Whisk. (While it is perfectly fine to beat the eggs using a fork, Chef Keller prefers using a whisk.) For further refinement, blend the eggs using a blender or immersion blender and pass the blended eggs through a chinois.
  • 3. Set saucier over low heat. Add 3 tablespoons (approximately 48 grams) of butter to the saucier and pour in the eggs. Begin whisking slowly and continuously to emulsify in the butter and to gently cook the eggs.
  • 4. As eggs are still semi-liquid but are beginning to resemble porridge, turn off the heat. Look for small curds beginning to pull away from the bottom and sides of the saucier.
