FRENCH ONION GREEN BEAN CASSEROLE

- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch casserole dish.
- Heat 2 tablespoons of butter in a large skillet over medium heat. Stir the onions into the pan; cook and stir until very soft and golden brown, about 15 minutes. Stir in sherry vinegar. Transfer to a small bowl, and reserve.
- In the same skillet, melt 2 more tablespoons butter. Whisk in 2 tablespoons flour. Stirring constantly, cook over medium heat until the flour smells like baked pie crust, about 3 minutes. Slowly whisk in milk, about 1/2 cup at a time, then whisk in nutmeg, cayenne pepper, and thyme. Bring to simmer, and cook until thickened, whisking constantly, 3 more minutes. Transfer to a bowl and reserve.
- Melt remaining 2 tablespoons butter in clean skillet; stir in panko until all crumbs are coated; reserve.
- Bring a large saucepan of salted water to a boil over medium heat, and boil beans until bright green and crisp but not raw tasting, 3 to 4 minutes. Drain very well.
- Spoon half of the caramelized onions into the prepared casserole dish; top with green beans. Season with salt and black pepper. Spread reserved white sauce over the green beans; sprinkle with half of the Gruyere cheese. Top with the rest of the onions, and use the back of a spoon to push onions down into sauce and cheese. Top with the buttered panko crumbs, the remaining Gruyere, and Parmesan cheese.
- Bake in the preheated oven until hot throughout and lightly browned, about 30 minutes. Let sit 10 minutes before serving.

- In a medium sized mixing bowl, add the Mushroom Soup
- Add the milk.
- Add the Black Pepper.
- Add the Green Beans.
- Add 2/3 cup of the Onions.
- Stir mixture well.
- Spoon into a 1 ½ quart casserole dish.
- Bake at 350ºF for 25-30 minutes, or until the bean mixture is hot and bubbling.
- Gently stir the bean mixture, sprinkle the remaining onions on top.

- Spray a 9x13-inch casserole dish with a nonstick cooking spray.
- In a large bowl combined soups (do not dilute), sour cream, Miracle Whip, melted butter, shredded cheeses and the spices.

- Mix until everything is combined.
- Pour mixture into the prepared dish.
- Top the casserole with the bread crumbs and the Parmesean Reggiano cheese.

- Bring a large saucepan of salted water to a boil over high. Add green beans, and cook until beans are tender, 7 to 9 minutes. Drain and set beans aside.
- Melt 3 tablespoons of the butter in a large skillet over medium. Add sliced onions, 1 teaspoon of the salt, and 1/2 teaspoon of the pepper, and cook, stirring occasionally, until onions are deeply golden brown and very aromatic, 24 to 28 minutes. If your onions are cooking too fast and beginning to burn, lower the heat accordingly. Once onions are deeply golden brown, add sherry, and cook, stirring constantly, 1 minute. Transfer onions to a plate; do not wipe skillet clean.
- Heat remaining 3 tablespoons butter in skillet over medium-high until melted. Add flour, and cook, stirring constantly, until well blended. Gradually add half-and-half, and cook, stirring constantly, until well blended, about 1 minute, scraping to release any flour mixture from bottom of skillet. Bring to a boil, and boil, stirring often, until mixture thickens slightly, about 2 minutes. Remove skillet from heat, and add Gruyère cheese and remaining 1 teaspoon salt and 1/4 teaspoon pepper, stirring until cheese melts (about 15 seconds). Fold in green beans, making sure beans are evenly coated. Spoon green bean mixture into prepared baking dish.
