FRENCH CUT STEAK

1 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
Kosher salt and freshly ground black pepper
1 (1 pound) skirt steak, cut in half
2 tablespoons vegetable oil, divided
1/4 cup butter, divided
2 medium sweet onions, sliced
1/3 cup white wine
2 tablespoons red wine vinegar
1/3 cup beef stock or broth

Steps:

  • In a small bowl, combine spices and salt and pepper. Liberally season the steak with the rub and let rest 15 minutes on the counter.
  • Meanwhile, in a saute pan, heat 1 tablespoon oil and 1 tablespoon butter over low heat. Add onions, season and cook until soft and caramelized, about 20 minutes.
  • In a large saute pan, heat the remaining 1 tablespoon vegetable oil with 1 tablespoon butter over high heat. Place steaks in the pan and sear until nicely browned, about 3 minute per side for medium-rare. Remove pan to plate to rest 10 minutes.
  • Place the saute pan over high heat and deglaze with wine and vinegar until reduced by 1/2. Add onions to the pan with beef broth and reduce by half. Salt and pepper, to taste. Remove from heat and whisk in remaining 2 tablespoons of butter. Slice steak and fan to serve. Top with sauce.

1 - 2 boneless ribeye or scotch fillet (, 2.5 cm / 1" thick, approx 300g/10 oz each (Note 1))
1 tbsp vegetable oil
Salt and pepper
75g / 5 tbsp unsalted butter (, cut into 1.25cm / 1/2" cubes (Note 2))
6 sprigs fresh thyme or 3 sprigs rosemary
5 garlic cloves (, peeled and smashed to split (Note 3))

Steps:

  • Bring to room temp: Take the steak out of the fridge 30 minutes prior to bring to room temperature.
  • Dry steaks: Pat dry with paper towels.
  • Heat skillet: Heat oil in a heavy based skillet over high heat until it is very hot - you should see smoke!
  • Season: Sprinkle each side of the steak generously with salt and pepper, then immediately place in the skillet.
  • Sear Side 1: Cook for 2 - 2.5 minutes until you get a great crust, then turn.
  • Garlic Butter: Leave for 1 minute, then push steaks to one side and toss in butter, garlic and thyme. BE CAREFUL - the thyme will sputter!
  • Baste: As soon as the butter is melted, continuously spoon the butter over the steak until it's cooked to your liking - 2 minutes in total for the 2nd side for medium rare (52C/125F, chart below for other doneness temps)
  • Basting also renders fat on the side of the steak - use tongs to sear the edges at the end if you want it browned more.
  • Rest: Transfer steak to a plate and cover loosely with foil, rest for 5 to 10 minutes.
  • Serve steak with a bit of the butter from the skillet drizzled on top. Pictured in post with Crispy Smashed Potatoes.

4 tenderloin steaks, 6 to 8 ounces each and no more than 1 1/2 inches thick
Kosher salt
2 tablespoons whole peppercorns
1 tablespoon unsalted butter
1 teaspoon olive oil
1/3 cup Cognac, plus 1 teaspoon
1 cup heavy cream

Steps:

  • Remove the steaks from the refrigerator for at least 30 minutes and up to 1 hour prior to cooking. Sprinkle all sides with salt.
  • Coarsely crush the peppercorns with a mortar and pestle, the bottom of a cast iron skillet, or using a mallet and pie pan. Spread the peppercorns evenly onto a plate. Press the fillets, on both sides, into the pepper until it coats the surface. Set aside.
  • In a medium skillet over medium heat, melt the butter and olive oil. As soon as the butter and oil begin to turn golden and smoke, gently place the steaks in the pan. For medium-rare, cook for 4 minutes on each side. Once done, remove the steaks to a plate, tent with foil and set aside. Pour off the excess fat but do not wipe or scrape the pan clean.
  • Off of the heat, add 1/3 cup Cognac to the pan and carefully ignite the alcohol with a long match or firestick. Gently shake pan until the flames die. Return the pan to medium heat and add the cream. Bring the mixture to a boil and whisk until the sauce coats the back of a spoon, approximately 5 to 6 minutes. Add the teaspoon of Cognac and season, to taste, with salt. Add the steaks back to the pan, spoon the sauce over, and serve.

4 Tbsp butter
softened
Juice of 1⁄2 lemon
1 small shallot
minced
1 clove garlic
peeled and grated
1 Tbsp minced fresh chives
1 tsp Dijon mustard
1 tsp Worcestershire
1 lb skirt or hanger steak
Salt and black pepper to taste

Steps:

  • Combine the butter, lemon juice, shallot, garlic, chives, mustard, and Worcestershire in a mixing bowl. Stir to thoroughly combine. Reserve on the countertop. Preheat a grill, grill pan, or cast-iron skillet over high heat. Season the steak all over with salt and plenty of black pepper. Cook the steaks, turning frequently, for about 8 minutes total (depending on the thickness), until well browned on both sides and firm but still easily yielding to the touch. Rest for at least 5 minutes before slicing. Top each steak with one-fourth of the butter, and serve with the hot fries from our Crispy Oven-Baked Fries recipe.

Another recipe for the Zzar World Tour - Floozies, in the French category. It is from the Colorado Cachet Cookbook, and I tried it the first time September 2, 1987. Preparation and cooking times are an estimate. You can simmer on the stove, bake it in a 350 degree oven or cook in a slow cooker.

2 lbs round steaks (cut into serving size pieces)
1/2 cup all-purpose flour
salt and pepper
2 tablespoons butter
1 tablespoon olive oil
2 large onions, sliced
1 garlic clove, minced
1 cup white wine
1 cup beef bouillon
2 teaspoons soy sauce
1/8 teaspoon pepper
1 cup cheddar cheese (grated)
1/2 cup sour cream

Steps:

  • Dredge steak with flour seasoned with salt and pepper.
  • Brown on both sides in the butter and oil.
  • Remove steak from pan and add onions to the skillet and saute until golden.
  • Stir in the garlic, wine, beef bouillon, soy sauce and pepper being careful to stir up all the browned bits from the bottom of the skillet.
  • Return steak to the skillet.
  • Cover and simmer slowly for 1 1/2 hours or until meat is very tender.
  • Remove meat to a platter and keep warm.
  • Stir the cheese into the onions and pan juices until melted.
  • Then stir in the sour cream and heat but do not boil.
  • Pour the sauce over the meat and serve.

When we lived in Geneva, there was a famous restaurant that only served one thing: entrecote. Also known as steak-frites, it's thin-sliced hanger steak cooked to order, covered in the most addictive herb butter sauce I've ever had. People literally line up out the door every night to get in--and this is why. After playing with several bloggers' guesses about the sauce ingredients, including some that involved chicken livers, this combination came pretty darn close to our memory of the experience. Serve with shoestring fries.

¼ cup dry white wine
