PEAR AND ROQUEFORT TART

Pear and blue cheese is a classic combination and one that Eric Lanlard puts to good use in this savoury tart recipe.

For the pastry
225g plain flour, plus extra for dusting
110g chilled unsalted butter, cut into pieces, plus extra for greasing
1 free-range egg yolk, plus an extra yolk, beaten, to seal (see tips)
2-3 tbsp chilled water
For the filling
3 ripe pears, quartered and cored (we used conference pears)
2 tsp olive oil
100g British free-range smoked bacon lardons
150g mascarpone
2 medium free-range eggs, beaten
50ml whole milk
2 tsp chopped fresh thyme, plus extra sprigs to garnish
150g roquefort cheese, crumbled
You will also need
23cm fluted tart tin with a removable base

Steps:

  • To make the pastry, put the flour and a pinch of salt in a bowl, then add the chilled butter and rub in, using your fingers, until the mixture resembles fine breadcrumbs. Stir in the egg yolk, then gradually add just enough chilled water to bring the mixture together into a firm dough - don't add too much water or the dough may become sticky. (Alternatively, whizz the flour, salt and butter in a food processor until it resembles fine breadcrumbs, then add the egg yolk and the water. Pulse to bring the dough together.)
  • Roll out the dough into a circle on a lightly floured surface to the thickness of a £1 coin, then loosely roll the pastry around the rolling pin. Unroll it over a lightly greased 23cm fluted tart tin with a removable base, then gently push the pastry into the tin using a little ball of floured pastry to help you ease it into the tin's edges and flutes. Roll the rolling pin over the top to trim the edges. Prick the base all over with a fork, line the case with baking paper and fill with baking beans. Chill for 30 minutes.
  • Meanwhile, heat the oven to 200°C/fan180°C/gas 6. Blind bake (see our how to video below) the pastry case for 20 minutes, then remove the paper and beans and bake for 10 minutes more until the pastry begins to turn golden. Remove from the oven, brush the pastry with beaten egg yolk (see tips), then return to the oven for 5 minutes.
  • Arrange the pears in neat circles to cover the base of the case. Bake for 10-12 minutes until the pears begin to soften. Heat the oil in a frying pan and fry the lardons until golden, then set aside. Turn down the oven to 180°C/fan160°C/gas 4.
  • Put the mascarpone in a bowl and stir briefly to soften, then add the beaten eggs and milk. Stir until smooth and combined. Season with a little salt and lots of black pepper (the bacon and roquefort are salty), then stir in the chopped thyme.
  • Scatter the cooked lardons and the roquefort over the softened pears, then pour over the mascarpone mix. Sprinkle over some small thyme sprigs and bake for 25 minutes or until the filling is set and golden. Once cooked, leave to cool in its tin before removing.
  • Serve at room temperature with lightly dressed salad leaves.

Another variation on the theme of almost-instant tarts, this one combining a lovely creaminess with a certain piquancy from the Roquefort. (Perfect for veggies too.) NOTE: This recipe is from the book Delia's How to Cheat at Cooking, which was published in 2008; therefore you may have difficulty finding the exact named shop ingredients that were available then. We have kept these recipes on the site, as we know many people have successfully adapted them to what is currently available

1 x 230g Fresh Pastry Flan Case (Frozen)
100g Roquefort, Shropshire Blue or Cashel Blue
225g leeks (about 2 medium leeks), trimmed, washed and thinly sliced
1 tablespoon butter
4 spring onions, including the green parts, chopped
225ml double cream
2 eggs
1 tablespoon fresh ready-grated Parmesan

Steps:

  • Pre-heat the oven to gas mark 6, 200ºC. First, pop a baking sheet into the centre of the oven while it's pre-heating. Meanwhile, melt the butter in a frying-pan, add the chopped spring onions and leeks and cook them over a medium heat for 5-6 minutes. Now, using oven gloves, place the pastry case, still in its foil container, on the baking sheet, arrange the onion-and-leek mixture over the base and crumble the Roquefort on top. Whisk the double cream and the eggs together in a jug, season and then pour this over the cheese and leeks. Sprinkle the Parmesan over the surface, then transfer the baking sheet to the centre of the oven. Reduce the heat to gas mark 4, 180ºC and bake the tart for 35-40 minutes, till golden and firm in the centre. Leave to rest for 10 minutes before serving with a tossed green salad. Note: this can also be made in 6 frozen tartlet cases; cook as above.

SPINACH, BACON & ROQUEFORT TART



Spinach, bacon & roquefort tart image

Take a simple sheet of puff pastry and transform it into this fabulous spinach, roquefort & bacon tart. It's perfect for an easy lunch

320g sheet puff pastry
1 beaten egg
125g shop-bought creamed spinach
8 cherry tomatoes , halved
50g roquefort , crumbled
3 rashers streaky smoked bacon

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Roll out the pastry onto a lined baking sheet. Using the tip of a sharp knife, mark a 2cm border around the edge. Brush the pastry all over with the egg and bake for 10 mins. Leave for 5 mins, then press down the centre with your hands, leaving the border. Top with the spinach, tomatoes and roquefort, and return to the oven for 10-15 mins. Meanwhile, fry the bacon until very crispy. Drain and chop or break into shards and scatter over the tart.

2 cups milk
4 eggs
3/4 cup plain flour
3/4 cup Roquefort cheese
salt & pepper

Steps:

  • Bring the milk to a boil.
  • Preheat the oven to 375°F.
  • Meanwhile, in a salad bowl, crush the Roquefort cheese with a fork.
  • Add an egg and mix, then add the flour and keep crushing with the fork in order to obtain the smoothest mixture that you can. Add the last 3 eggs, one by one, while beating like an omelette.
  • Add a little salt (Careful! Roquefort cheese can be very salty) and generous pepper.
  • Pour the milk slowly in the mixture while mixing.
  • Pour the preparation in a non-stick pan and bake in oven for 35 minutes.
  • Serve warm or at room temperature on a bed of lettuce.

  • Prepare fennel filling: Heat butter in a frying pan and add fennel, thyme, salt and pepper -- use very little salt as the cheese will be salty. Press a piece of buttered foil on top, cover and sweat the fennel, stirring occasionally, until very soft but not brown, 20-30 minutes. Meanwhile, make the custard: Whisk egg, egg yolk, milk, cream, nutmeg, salt and pepper in a bowl just until mixed.
  • When fennel is soft, add Roquefort cheese and stir to melt the cheese. (I skipped this step because I thought the cheese would be nicer if left crumbled to melt as the tart baked, partly for texture and partly for taste) Spread mixture evenly in base of pastry shell and pour over custard. Gently mix fennel and custard with a fork.
  • Bake the tart in heated oven until done, 30-35 minutes. Let cool slightly before un-molding. Serve warm or at room temperature.
