1/2 cup (4 ounces) VS or VSOP Cognac
1/2 cup (4 ounces) simple syrup
1/3 cup (3 ounces) freshly squeezed lemon juice (2 lemons)
2 cups ice cubes
1 (750 ml) bottle good Champagne, chilled
4 long strips of lemon zest

Steps:

  • Pour the Cognac, simple syrup, and lemon juice into a cocktail shaker and add the ice. Shake for at least 30 seconds (it's longer than you think!). Pour the mixture into 4 Champagne flutes to fill each glass about two-thirds full. Fill the glasses with Champagne, garnish with the lemon zest, and serve ice cold.

One .33-ounce package strawberry popping candy, such as Pop Rocks
1 lemon wedge
2 ounces Passion Tea-Infused Gin, recipe follows
1 ounce Simple Syrup, recipe follows
1 ounce lemon juice
Very dry champagne, for topping
3 passionfruit tea bags
About 2 cups gin
1 cup sugar

Steps:

  • For the rim: Put the popping candy in a shallow dish. Rub the lemon wedge around the rim of a coupe glass, then roll the rim in the popping candy.
  • For the cocktail: Put the Passion Tea-Infused Gin, Simple Syrup and lemon juice in a cocktail shaker with ice. Shake vigorously, then strain into the rimmed glass. Top off with champagne.
  • Put the tea bags in a 16-ounce mason jar, then fill with the gin. Leave at room temperature, giving it a little swirl every half hour, for 3 to 4 hours. Remove the bags.
  • Combine the sugar and 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the sugar dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator up to 1 month.

This big, bright take on the French 75 skips the bubbly classic's gin or cognac, instead adding sweetly herbal, lower in A.B.V., blanc vermouth. Serving it up and over ice in a Collins glass is a nod to how early French 75s were served. (The ice continues to dilute the drink as you sip.) Or serve up in a Nick and Nora or coupe.

1 ounce blanc vermouth, such as Dolan or Noilly Prat
1 ounce sweet bay-peppercorn shrub
1/2 ounce fresh lemon juice
3 to 4 ounces Champagne or dry sparkling wine
Lemon twist

Steps:

  • In an ice-filled shaker, combine the vermouth, shrub and lemon juice. Cover and shake vigorously until well chilled. If serving over ice, fill a Collins glass with ice and strain the cocktail into the glass. If forgoing the ice, strain into a Nick and Nora or coupe glass. Top with Champagne and finish with the lemon twist.

Steps:

  • Pour the lemon juice, sugar syrup and gin into a cocktail shaker then fill up with ice.
  • Shake well then strain into a champagne flute. Top with a little champagne, leave to settle (as it will bubble up) then fill up with more champagne. Swirl gently with a cocktail stirrer then garnish with a strip of lemon zest if you like.

1 teaspoon simple syrup
½ fluid ounce lemon juice
5 fluid ounces brut champagne, chilled
1 slice lemon

Steps:

  • Chill cocktail shaker and glass (champagne flute or collins glass) in the freezer. Add ice to shaker. Pour gin, simple syrup, and lemon juice into shaker. Shake well. Fill chilled glass half full of ice, then strain cocktail into the glass. Top with champagne and garnish with a lemon slice.

6 strips of fresh lemon peel removed with a vegetable peeler
Special Equipment
6 (6-oz) glasses

Steps:

  • Make ice cubes:
  • Stir together juice and sugar until sugar is dissolved. Stir in water, then pour into an ice tray and freeze until hard, about 3 hours.
  • Make drinks:
  • Stir together vermouths and lemonade ice cubes in a pitcher until vermouth is chilled. Run a lemon strip around rim of each glass and drop into glass. Fill glasses with vermouth mixture, including ice cubes.

1 cup water
1 cup sugar
4 cups ice cubes, divided
1 cup Bombay Sapphire gin or other premium gin, divided
1/2 cup fresh lemon juice, divided
1 750-ml bottle Champagne

Steps:

  • Stir 1 cup water and 1 cup sugar in medium saucepan over medium heat until sugar dissolves; bring to boil. Reduce heat; simmer 3 minutes. Chill until cold. (Simple syrup can be made 1 month ahead. Cover and keep chilled.)
  • Place 8 coupe glasses or Champagne flutes in freezer and chill at least 2 hours. Place 1 cup ice, 1/4 cup gin, 2 tablespoons lemon juice, and 3 tablespoons simple syrup in cocktail shaker. Shake well, then strain into 2 chilled glasses or flutes. Repeat 3 more times with remaining ice cubes, gin, lemon juice, and simple syrup to make 6 more drinks. Divide Champagne among glasses and serve.

3 egg whites, at room temperature
1/8 teaspoon salt
1 cup sugar
2 drops red food coloring
1 teaspoon almond extract
1 1/4 cups shredded coconut

Steps:

  • Preheat oven to 300°F.
  • Place the egg whites in a glass mixing bowl with the salt.
  • Beat until the whites are stiff and slowly add 1 cup of sugar, beating constantly.
  • Gently fold in the red food coloring, extract and coconut.
  • Do this very slowly to avoid deflating the mixture.
  • Drop the mixture from a teaspoon onto a greased and well floured baking sheet (I use ungreased parchment paper).
  • Bake about 30 minutes.
  • Turn the oven off and let the kisses sit in the oven for 1 1/2 hours.
