Steps:
- Pour the Cognac, simple syrup, and lemon juice into a cocktail shaker and add the ice. Shake for at least 30 seconds (it's longer than you think!). Pour the mixture into 4 Champagne flutes to fill each glass about two-thirds full. Fill the glasses with Champagne, garnish with the lemon zest, and serve ice cold.
FRENCH KISS 75
Steps:
- For the rim: Put the popping candy in a shallow dish. Rub the lemon wedge around the rim of a coupe glass, then roll the rim in the popping candy.
- For the cocktail: Put the Passion Tea-Infused Gin, Simple Syrup and lemon juice in a cocktail shaker with ice. Shake vigorously, then strain into the rimmed glass. Top off with champagne.
- Put the tea bags in a 16-ounce mason jar, then fill with the gin. Leave at room temperature, giving it a little swirl every half hour, for 3 to 4 hours. Remove the bags.
- Combine the sugar and 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the sugar dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator up to 1 month.
LOW-ALCOHOL FRENCH 75
This big, bright take on the French 75 skips the bubbly classic's gin or cognac, instead adding sweetly herbal, lower in A.B.V., blanc vermouth. Serving it up and over ice in a Collins glass is a nod to how early French 75s were served. (The ice continues to dilute the drink as you sip.) Or serve up in a Nick and Nora or coupe.

If serving over ice, fill a Collins glass with ice and strain the cocktail into the glass. If forgoing the ice, strain into a Nick and Nora or coupe glass. - Stir 1 cup water and 1 cup sugar in medium saucepan over medium heat until sugar dissolves; bring to boil. Reduce heat; simmer 3 minutes. Chill until cold. (Simple syrup can be made 1 month ahead. Cover and keep chilled.)

- Preheat oven to 300°F.
- Place the egg whites in a glass mixing bowl with the salt.
- Beat until the whites are stiff and slowly add 1 cup of sugar, beating constantly.
- Gently fold in the red food coloring, extract and coconut.
