- Cook green beans according to package directions; drain. Add mushrooms and keep warm. Combine the butter, rosemary and basil; drizzle over bean mixture and toss to coat. Sprinkle with almonds.

Steps:
- Blanch green beans for 5 minutes in boiling salted water.
- While the green beans are blanching, place large saute pan over medium-high heat. Add the olive oil and unsalted butter. Add mushrooms and saute until golden brown, 3 to 4 minutes. Add sliced scallions, saute 1 minute more. Pull green beans out of water and carefully add to pan.
- Season with salt and pepper. Remove from pan and finish with 1/2 cup toasted almonds. Serve.

FRENCH GREEN BEANS SAUTéED WITH MUSHROOMS AND ALMONDS
I created this Asian-inspired dish last night. It is permissible for phase one of the South Beach Diet and we LOVED it. I used frozen french beans from Trader Joe's, but fresh beans would be wonderful! Amounts are highly approximated; I didn't measure when making this, but this is pretty similar to what I did. (If using fresh beans, you'd probably want to blanch them in boiling water and then plunge in ice water, and *then* add to the pan.)

Steps:
- Heat oil over medium heat.
- Sauté garlic until soft, being careful not to let it burn.
- Add sliced mushrooms and sauté until they look fairly cooked and shiny (about 5 minutes).
- Add almonds and sauté for a couple more minutes.
- Finally, add frozen green beans and splash of soy sauce.
- Stir frequently until beans are just cooked and, of course, no longer frozen.
- If not on the south beach diet or watching sugar intake, you could add oyster sauce or other Asian condiment to the mixture.

- In a large saute pan (I used an iron skillet) warm butter and olive oil over medium heat, just until butter is melted.
- Add green beans and sliced shallots.
- Next, add balsamic vinegar and seasonings.
- Toss green beans with tongs until all seasonings are evenly distributed.
- Adjust heat as needed from medium to medium low and saute for 5-7 minutes.
- Add 2 TBSP of broth and toss green beans.
- Cover and cook until desired tenderness is reached, tossing and adding broth as needed to ensure the green beans do not scorch.
- Once done place green beans in a serving dish and garnish with toasted almonds.

- Wash and trim the green beans. Line up a handful of beans and cut off the tips in one slice. Only remove the tougher ends, those that were attached to the stem. You don't have to remove the top side with the tender shoots. Halve the beans if very long.
- Bring a pot of water to a boil. Add salt generously and 1 teaspoon butter. Cook the green beans until tender but still crisp, about 6 - 7 minutes or to your liking.
- While the green beans are cooking, fill a large bowl with water and add ice cubes and set it aside.
