YAM FRIES
These quick & easy yam fries are a great alternative to french fries {a big weakness of mine!} & are so easy to make! I served them with turkey burgers...Yum!

Steps:
- Preheat oven to 375.
- Just wash your yams well & cut them into pieces of your desired size, I like them a bit thicker.
- Toss them in 1 tlbs. oil {you can use others but grapeseed oil is best since it doesn't become toxic once it reaches certain temps like oilve oil may}.
- Lay them out on a cookie sheet, meaty part facing down & season with kosher salt or I used Mrs. Dash since it's salt-less. Bake for 20 mins or until the thickest pieces are tender!

MOM'S EASY SWEET FRIED YAMS
This is easy since it uses the canned yams in syrup. My Mom would make this as a side dish for broiled fish when I was a kid. You drain the yams and heat the oil and fry them until the edges brown and crisp...very easy and good. I use Princella Cut Sweet Potatoes, cut yams in light syrup. Funny, it says sweet potatoes and yams on the can. Bruce's is another brand that I use too.

Steps:
- In a large skillet, heat about 1/2 inch of oil until hot, but not too hot.
- Add the yams and let them brown on the edges and a surface.
- Gently turn the yams over to brown the other side.
- You may have to do this in batches, depending on the size of your pan.
- Drain on paper towels.

30-MINUTE SEASONED SWEET POTATO / YAM FRIES (BAKED NOT FRIED)
Perfectly zesty sweet potato fries to accompany veggie burgers and a ton of other dishes-- you'll love them even if you're not as big a fan of sweet potatoes!

Steps:
- Scrub the sweet potatoes and leave the skin on (best part.).
- I like using a french fry cutter (it works sort of like those apple corer/slicer things) for this but if you don't have one, just use a knife to cut the potatoes into shoestrings.
- Put the raw fries into a mixing bowl, and pour in the olive oil. Toss well to coat.
- Add the seasonings and toss well again.
- Arrange the fries on a baking sheet and bake at 400F for 10 minutes.
- Turn the fries with a spatula and bake for another 10 minutes.
- Blot any excess oil with paper towels, serve, and enjoy!
SWEET POTATO FRENCH FRIES
My girls would not eat sweet potatoes when they were little till I tried french frying them. Now Paula loves them candied, fried, french fried, baked, etc. Erica still will not eat them except french fried, but she loves them french fried.

- Fry in deep fat as you would french fries.
- Drain on paper towels.

FRIED SWEET POTATOES OR YAMS
A tasty side dish! Every year at my church's annual fish fry these potatoes are included on the menu. Everyone looks forward to this treat! Great with pork chops! Very easy to prepare. Cut potatoes into thick round "wheels".

Steps:
- Cut potatoes in round "wheels" about 1/2 inch thick and immediately immerse in water to not discolor.
- Drain and pat dry with paper towel. Fry on low heat until golden brown and stick tender in the middle.
- Place on paper towels and salt immediately.
- Serve and enjoy!

FRENCH-FRIED YAMS
Steps:
- Peel the yams, and cut them crosswise, slightly on the diagonal, into 1/8-inch thick slices. Stack a few slices at a time and cut them into matchstick strips about 1/8 inch wide. There should be about 6 cups.
- Heat the oil in a deep-fat fryer or skillet to a temperature of about 360 degrees. Add half of the potato sticks, and cook about 5 minutes or until crisp. Drain and pat dry on paper towels. Add the remaining potato sticks, and cook and drain in the same manner. Add to the first batch and serve.
