FRENCH FRIED ONIONS
A homemade alternative to the Durkee® brand. I use these for casserole recipes. I will never buy store-bought French fried onions again. This recipe makes a lot! I often just use one onion and about 1/2 cup of milk and 1 cup of flour with seasonings if I just want to use them for one dish. Warning: You may have to make what the original recipe calls for because they are so yummy and you won't be able to stop eating them!

Steps:
- Soak onions in milk for 5 minutes.
- Combine flour, garlic powder, onion powder, white pepper, and salt. Add a handful of onions and toss to coat. Remove and repeat with remaining onions, one handful at a time.
- Heat oil in a large skillet or deep fryer. Fry onion in batches, stirring as needed, until evenly browned, 2 to 3 minutes each. Drain on paper towels and season with more salt. Store in an airtight container.

Steps:
- Heat oven 400F degrees.
- Thaw Pastry shell for 10 minutes at room temp (do not prick the shell).
- Bake shell for 7 minutes.
- Reduce oven temp to 375F degrees.
- Sprinkle the cheese and 1 1/3 cup onions into the shell.
- Combine eggs, milk, Salt& pepper.
- Whisk until mixed well but not frothy.
- Pour over the cheese& onions.
- Sprinkle with Paprika.
- Bake 45 minutes or until a knife inserted in the center comes out clean.
- Let stand for 10 minutes.
- Top with the remaining onions& serve.

QUICHE SEVILLE
This is a very easy quiche. I serve it for breakfast when I have guests with muffins and fresh fruit.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Bake thawed pastry shell at 375 degrees F (190 degrees C) for 10 minutes. Remove from oven and let cool. Reduce oven temperature to 350 degrees F (175 degrees C).
- Meanwhile, in a medium bowl, combine the sour cream, bacon, cheese, French-fried onions, eggs, Worcestershire sauce and ground black pepper. Mix all together well and pour into the cooled pie shell.
- Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes, or until quiche is set.

FRENCH FRIED ONION TOPPED QUICHE - STEPH
This delightful quiche is one that a very good friend made for a church function I recently attended. This is a very versatile recipe with little preparation.

- Cook the broccoli or spinach; drain well. If using bacon, fry and crumble; if using ham, chop into small pieces. Put all of this in an unbaked pie crust; pour the beaten eggs over all and top with the cup of cheddar cheese.
- Bake at 350 degrees for 45 minutes. Take out of oven and sprinkle crushed french fried onions over the top of the quiche. (Use enough to cover the entire top of the quiche). Put back in over for 5 - 10 minutes; watch carefully not to burn.
- Let set for about 15 minutes before cutting. ENJOY! This is a versatile recipe and can even be made without any meat or sausage can be used in lieu of bacon or ham.

- In a large sauté pan melt the butter with the olive oil. Add the onions and bay leaf. Cook and stir patiently until they’re brown and soft, about a half hour. Once browned, sprinkle with flour and a dash of salt and cook another 2 minutes. Set aside to cool. Remove the tomato petals from the sheet, let cool.
- Roll out the dough, press it into a quiche or pie pan. Pierce the bottom with a fork. To keep its shape, set parchment or aluminum foil in the center and fill with pie weights or dry beans. Bake for 5 minutes. Remove weights, brush the pastry with beaten egg and return to oven for 7 minutes. Cool slightly.
- Whisk the eggs and cream in a bowl. Stir in about one-third of the cheese, salt, pepper and thyme. Stir in the cooled onions and then pour into the pastry shell. Arrange tomatoes in decorative pattern on top. Sprinkle on remaining Gruyère. Bake for 25 to 35 minutes until firm, slightly browned and a bit puffy.
