- Dry rub can be used right away or stored for up to 6 months.
- To use: spread mixed dry rub in a rimmed baking sheet or a large bowl, whichever fits the meat you are using best. Add meat and generously rub it all over with the dry rub, getting every nook and cranny, while massaging the dry rub into the meat.
- To store: For the best way to keep dry rubs fresh, use a zip-lock freezer bag and store it in the freezer. Get as much air out of the bag as you can before sealing it.(You can also store dry rub for up to 6-months in air-tight jar in a cool dark place or in the refrigerator.)

HOMEMADE FRENCH FRY SEASONING BLEND
http://www.examiner.com Recipe by cooking examiner Kristin King. "This homemade seasoning blend combines salty, sweet, smoky and spicy flavors - no ketchup necessary. Whether one is making homemade French fries or using frozen, this seasoning blend can be sprinkled on at the end or cooked onto the fry. Either way, this recipe makes enough to have on hand whenever your in the mood for fries. This seasoning blend combines a myriad of spices that all shine through when you bite into the fry. The secret ingredient in this recipe is a touch of sugar. Sugar brings out the salty sweet aspect that many people love so much. The other secret ingredient to this recipe is Penzey's Old World Seasoning Blend. Similar to a seasoning salt, Penzey's seasoning blend has celery salt which adds a nice subtle flavor. Penzey's spices can be ordered online or one can visit their store in Richmond, Virginia. If Penzey's is out of the question, use a good quality seasoning salt with a small pinch of celery salt."

RACK OF LAMB WITH GARLIC AND HERBS
Steps:
- Brown lamb:
- Heat a dry 12-inch heavy skillet over high heat until hot, at least 2 minutes. Meanwhile, pat lamb dry and rub meat all over with salt and pepper. Add oil to hot skillet, then brown racks, in 2 batches if necessary, on all sides (not ends), about 10 minutes per batch.
- Transfer racks to a small (13- by 9-inch) roasting pan.
- Coat and roast lamb:
- Put oven rack in middle position and preheat oven to 350°F.
- Stir together garlic, herbs, salt, pepper, and oil. Coat meaty parts of lamb with herb mixture, pressing to help adhere. Roast 15 minutes, then cover lamb loosely with foil and roast until thermometer inserted diagonally into center of meat registers 120°F, 5 to 10 minutes more. Let stand, covered, 10 minutes. (Internal temperature will rise to 125 to 130°F for medium-rare while lamb stands.)
- Cut each rack into 4 double chops.

JULIA CHILD'S PORK WITH ALLSPICE DRY RUB
The allspice is really what makes this recipe, adapted from "Mastering the Art of French Cooking" by Julia Child, which was featured in a New York Times article about readers' favorite recipes from her cookbooks. It is a simple process: make a dry rub, cover a well-marbled pork loin with it for at least 6 hours, and then roast or grill the meat. A few minutes' preparation before work yields a fine roast for a late supper, or the same time spent on a weekend brings a fine feast in for dinner.

Steps:
- Dry the meat well with paper towels. In a bowl or a mortar, mix the remaining ingredients together and rub into the surface of the pork. Place in a covered dish and marinate in the refrigerator for at least 6 hours or up to 2 days. Turn the meat 2 or 3 times if the marinade is a short one; several times a day if longer.
- Heat oven to 325 degrees, or a grill to medium-high. Scrape off the marinade and dry the meat thoroughly with paper towels.
- For roasting, place meat on a rack in a shallow pan and turn often until just cooked through, about 30 minutes per pound or until internal temperature reaches 140 degrees.
- For grilling, place tenderloins on oiled grate, cover, and cook for 12 to 15 minutes, turning every 2 minutes, or until internal temperature reaches 140 degrees. Cover meat with foil and let rest 10 minutes before slicing.

- Sweet Rub. What could be a better way to top off a list of dry rubs than one that is the best of both worlds: sweet and savory. Memphis style ribs are only a rib rub away with this recipe.
- Best Ever Steak Rub. I think the title of this recipe says it all: it's simply the best. Whether this is due to a bias of opinion on anyway, shape or form, there's no denying that when you put onion powder and garlic powder together, you'll never disappoint your guests.
- Café Mocha Rub. When a recipe's main ingredients include cocoa, coffee, and cinnamon, you've already won me (and the rest of the world) over. Keep in mind that although this recipe is applicable to more than just steaks, the flavoring of it is pretty bold and can easily overpower poultry such as chicken and pork.
- Montreal Steak Rub. Why spend the money on a tiny jar of Montreal steak mix when you can make it yourself, and in large batches? We can't think of a reason, either.
- Rib Dry Rub. When you hear the name Bobby Flay, there should be no questions asked. No necessary explanation as to why or how this rub will essentially change your life.
- Chili Coffee Rubbed Steak. Coffee and dried chipotle peppers? If you can handle the combination, you definitely don't want to pass this bad boy up. The spice blends of heat, sweet, and savory are sure to send your tastebuds on a field trip you'll never forget.
- Mexican Dry Rub. Who knew Rev Run was a grillmaster? Not us, that's for sure. But we couldn't be more thrilled that he is with this concoction of epic proportion.
- Super Dry Rub for Venison. Venison plus a good rub is the barbecue meal of your dreams. If you've never had a venison steak before, here's your in when it comes to trying excellent tested recipes.
- Italian Herb Rub. Who doesn't love a little Italian-inspired steak (or chicken) every now and then? Heck, every night is delicious in our book! This classic blend of Italian herbs pairs perfectly with a buttery topping on your medium rare steak, leaving you drooling for more.
- Barbecue Spice Rub. We wouldn't be Wide Open Eats if we didn't include a bbq dry rub, and this one is better than any recipe box list you'll find, and it's made of basic spice cupboard ingredients.

- Prep. For the rub, combine the ground coffee, brown sugar, smoked paprika, black pepper, ground fennel, granulated garlic, and onion powder in a small bowl and blend well.
- Season the ribs with kosher salt. If you can, give the salt 1 to 2 hours to be absorbed. The process of salting in advance is called dry brining. The rule of thumb is 1/2 teaspoon of kosher salt per pound of meat, but ribs are about 50% meat, so use about 1/4 teaspoon per pound. You can simply eyeball it by sprinkling on the same amount of salt you would sprinkle on the ribs if they were served to you unsalted.
- Fire up. Prepare a smoker for indirect cooking. Alternatively, you can set up a charcoal grill for 2-zone cooking by placing a chimney full of pre-heated charcoal briquets on one side of the grill's charcoal grate in order to create direct and indirect cooking zones. Adjust the smoker or grill vents to bring the temperature to about 225°F and add 2 to 3 chunks of your favorite smoking wood to the charcoal for flavor. On a gas grill, adjust the temperature knobs so that one half of the grill is off and the other half is heated enough to maintain a temperature of approximately 225°F on the indirect side.

- Cumin Steak Rub. If you watch a lot of cooking shows, you might think that cumin has become an overused spice. While it's certainly popular, there's a good reason: cumin adds a spicy flavor and a nice crusty surface to a steak with this cumin steak rub.
- Tomahawk Steak Rub. A tomahawk steak, also referred to as a cowboy steak, is a very large (30 to 45 ounces) bone-in ribeye. This cut is for the serious steak lover, and this tomahawk steak rub recipe will make the experience even better.
- Dry Chimichurri Steak Rub. Chimichurri is, of course, a sauce, but this dry chimichurri steak rub takes those flavors and puts them quickly and easily right onto your steak.
- Montreal Steak Seasoning. How Montreal became the king of spice blends is anyone's guess, but spice maker McCormick has been selling these blends for years.
- Spicy Tomahawk Steak Rub. This is a delicious, spicy tomahawk steak rub. While this rub is for larger steaks, this rub is perfect for any cut of beef. The small amount of brown sugar brings a touch of sweetness and helps to caramelize the surface of the meat under intense heat.
- Simple Steak Seasoning. If you want a simple steak seasoning, then look no further than a combination of sea salt flakes, pepper, onion powder, and garlic powder.
