SLOW COOKER FRENCH DIP SANDWICH (MELT IN YOUR MOUTH!)



Slow Cooker French Dip Sandwich (Melt in Your Mouth!) image

Slow Cooker French Dip Sandwiches are filled with tender chunks of roast beef with thin slices of melted mozzarella cheese all held together by a soft hoagie bread all dipped in au jus sauce. This warm, savory and comforting sandwich is a MUST!

3-4 pounds chuck roast
Salt and Pepper
2 Tablespoons olive oil
1 can beef consommé
1 can beef broth
1 onion (sliced)
1 Tablespoon soy sauce
2 Tablespoons Worcestershire Sauce
4-5 hoagie rolls
8 slices mozzarella cheese

Steps:

  • Generously season each side of the roast with salt and pepper. In a large skillet add the olive oil and turn to medium high heat. Sear each side of the roast for 3-4 minutes until it gets a golden brown crust.
  • Place the roast into the slow cooker. Add the beef consommé, beef broth, onion, soy sauce, And Worcestershire sauce.
  • Cook on low heat for 8-10 hours or on high for 5-7 hours. Remove the roast from the slow cooker and shred with a fork and place on hoagies with a slice of cheese. Broil the tops in the oven to melt the cheese and serve.
  • Generously season each side of the roast with salt and pepper. Turn the instant pot to saute and add thee olive oil. Sear each side of the roast for 3-4 minutes until it gets a golden brown crust. Turn the instant pot off.
  • Add the Add the beef consommé, beef broth, onion, soy sauce, And Worcestershire sauce. Add the lid to the pot and seal. Cook on high pressure/manual for 60 minutes. Do the nartural release for 20 minutees and then quick release. Remove the roast from the instant pot and shred with two forks.

1-1/2 teaspoons beef base
1 teaspoon dried thyme
1 beef rump roast or bottom round roast (3 pounds), cut in half
1 medium onion, quartered
1/2 cup reduced-sodium soy sauce
2 garlic cloves, minced
1 bay leaf
1/2 teaspoon pepper
8 cups water
2 tablespoons Dijon mustard
2 loaves French bread (1 pound each), split and toasted
12 slices part-skim mozzarella cheese
1 jar (4-1/2 ounces) sliced mushrooms, drained

Steps:

  • Combine beef base and thyme; rub over roast and place in a 5-qt. slow cooker. Combine the onion, soy sauce, garlic, bay leaf and pepper; pour over roast. Add water., Cover and cook on low for 8-9 hours or until meat is tender. Remove roast to a cutting board; cool slightly. Strain cooking juices, reserving onion; skim fat from juices. Discard bay leaf. Thinly slice meat., To assemble sandwiches, spread mustard over bread. Top each bottom with three slices cheese; layer with beef, remaining cheese, mushrooms and reserved onion. Replace tops. Cut each loaf into four slices; serve with reserved juices.

1/2 cup reduced-sodium soy sauce
1 teaspoon beef bouillon granules
1 bay leaf

2 teaspoons salt-free onion-herb blend
1/2 cup plus 2 tablespoons water
1 cup reduced-sodium beef broth
8 oz thinly sliced cooked reduced-sodium roast beef (from deli)
4 hoagie buns (2.5 oz each), split
4 slices (3/4 oz each) reduced-fat Swiss cheese, cut in half

Steps:

  • Heat oven to 500°F. Heat 12-inch skillet over high heat. Spray onion with cooking spray; add to skillet. Stir in 1/2 teaspoon of the herb blend. Cook 11 to 12 minutes, stirring frequently and adding water 2 tablespoons at a time, until onion is golden brown.
  • Meanwhile, in 2-quart saucepan, heat broth and remaining 1 1/2 teaspoons herb blend over medium heat until hot. Remove from heat; add beef, pushing beef down into liquid until covered. Let stand 5 minutes.

1 large onion, thinly sliced

6 medium shallots, thinly sliced
2 bunches scallions, chopped (white and greens parts separated)
1 1/2 cups sour cream
1 cup mayonnaise
2 teaspoons white wine vinegar
2 teaspoons Worcestershire sauce
6 cloves garlic
Kosher salt
1 teaspoon extra-virgin olive oil
1/2 teaspoon celery salt
Pinch of cayenne pepper
Freshly ground black pepper
1 3-to-4-pound beef eye round roast
4 cups low-sodium beef broth
2 stalks celery, roughly chopped
1 small onion, roughly chopped
3 sprigs parsley
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 teaspoons dry sherry
6 6-inch Italian rolls, split and lightly toasted

Steps:

  • Make the onion spread: Heat the vegetable oil in a large skillet over medium-low heat. Add the onion and a pinch of salt; cover and cook, stirring, until golden, about 35 minutes. Add the shallots and scallion whites; cover and cook, stirring, until browned, about 25 more minutes. Stir in the scallion greens, then remove from the heat and let cool.
  • Chop the onion mixture and transfer to a bowl. Add the sour cream, mayonnaise, vinegar, Worcestershire sauce and 1 teaspoon salt. Cover and refrigerate at least 2 hours and up to 1 day.
  • Make the beef for the sandwiches: Mince the garlic, then sprinkle with 1 teaspoon salt and mash into a paste with the flat side of a large knife. Transfer to a bowl; add the olive oil, celery salt, cayenne and 1/2 teaspoon black pepper. Cut small slits all over the beef with a knife, then use your fingers to push the garlic paste into the slits. Cover; refrigerate at least 1 hour or overnight.
  • Preheat the oven to 425 degrees F. Bring the beef to room temperature. Sprinkle with 2 teaspoons salt and 1/2 teaspoon pepper. Place on a rack in a roasting pan; add 1 cup broth, 3/4 cup water, the celery, onion and parsley to the pan. Roast 10 minutes, then reduce the oven temperature to 350 degrees F and roast until a thermometer inserted into the center of the beef registers 115 degrees F, about 45 more minutes. Transfer to a cutting board; let rest 20 minutes. Strain the pan juices; reserve.
  • Meanwhile, make the jus: Melt the butter in a medium saucepan over medium heat. Add the flour and cook, stirring, 1 minute. Whisk in the reserved pan juices and the remaining 3 cups broth and bring to a boil, whisking. Remove the pan from the heat and stir in the sherry.
  • Brush the rolls with some of the onion spread. Thinly slice the beef against the grain. Dunk the slices in the jus, then layer on the rolls. Serve the remaining jus in small bowls for dipping.

1 baguette ((or your favorite rolls))
1 Tablespoon olive oil
1 shallot ((chopped))
1 Tablespoon all-purpose flour
10 ounces beef consommé ((use 2 cans if you like a lot of dipping sauce))
1 teaspoon steak seasoning ((I prefer McCormick Montreal))
3/4 pound lean roast beef ((thinly sliced))
4 slices Swiss cheese ((thinly sliced))

Steps:

  • Preheat oven to 400°F. Slice the baguette into 4. Then cut horizontally to make the sandwiches.
  • In a large skillet over medium heat, add olive oil and heat for 1 minute. Add shallots and sauté for 2 minutes. Add flour and sauté 1 more minute.
  • Slowly whisk in beef consommé. Bring to a boil over high heat. Reduce heat to low and simmer. Add steak seasoning and mix until combined.
  • Separate roast beef and place in the au jus sauce until warm. Using tongs, place an equal portion of beef on each section of baguette or rolls. Top with a slice of cheese. Bake for 3-5 minutes, or until the cheese has melted.
  • Serve with a small bowl of the extra au jus for dipping.

1 boneless ribeye loin or sirloin (about 4 to 5 pounds)
1 tbsp. kosher salt
2 tbsp. black pepper
1/2 tsp. ground oregano
1/2 tsp. ground thyme
2 whole large onions, thinly sliced
5 cloves garlic, minced
1 whole packet French onion soup mix (dry)
1 can beef consomme
1 c. beef broth or beef stock
1/4 c. dry sherry or white wine (optional)
2 tbsp. Worcestershire sauce
1 tbsp. soy sauce
1 c. water
10 whole crusty deli rolls or sub rolls, toasted

Steps:

  • Preheat the oven to 475˚ degrees. Tie the piece of meat tightly with a couple of pieces of kitchen twine.
  • In a small bowl, mix together the salt, pepper, oregano and thyme. Rub the seasoning mixture all over the surface of the beef. Place the beef on a roasting rack in a roasting pan and roast it to medium-rare, about 20 to 25 minutes, until it registers 125˚ degrees on a meat thermometer. (If you want it less pink, go to 135˚.) Remove the meat to a cutting board and cover it with foil.
  • Place the roasting pan on the stovetop burner over medium-high heat. Add the onions and garlic and cook, stirring, for 5 minutes, until they are soft and golden. Sprinkle in the soup mix, then pour in the consomme, broth, sherry, Worcestershire, soy sauce, and water. Bring it to a boil, then reduce the heat to low. Simmer for 45 minutes, stirring occasionally, to develop the flavors. Add more water if it starts to evaporate too much. Pour the liquid through a fine mesh strainer and reserve both the liquid and the onions.
  • Slice the beef very thin. Pile the beef and caramelized onions on the toasted rolls, then serve with a side of jus.

Grill seasoning blend for steak, such as Montreal Steak Seasoning Blend, or, coarse salt and pepper
4 torpedo sandwich rolls, split

Steps:

  • In a large, shallow skillet over moderate heat, melt butter. Add shallots to butter and saute 2 minutes. Add flour to butter and shallot and cook a minute longer. Whisk in sherry and cook liquid out. Whisk in consomme in a slow stream. Bring sauce to a bubble and allow to simmer over low heat until ready to serve sandwiches.
  • Pile meat loosely across your cutting board or a large work surface. Season meat with grill seasoning or salt and black pepper. Set out 4 ramekins or small soup cups for dipping sauce, 4 dinner plates and 4 split torpedo rolls. To assemble, using a pair of kitchen tongs, dip meat into loose au jus sauce and pile into rolls. Set ramekins or cups with extra dipping sauce along side the sandwiches.

  • Put a Beef roast in a large stock pot or crock pot.
  • Dump in the beef broth, french onion soup, rosemary, and garlic.
  • Cook on low for 6-8 hours.

  • Split the french rolls and butter the inside of the rolls. Place rolls on a baking sheet.
  • Layer a generous amount of beef on each roll.

1/2 cup coarsely-ground black pepper
FOR THE DIPPING SAUCE
1 (10.5 ounce) can beef broth
1/2 cup water

Steps:

  • Set the oven to preheat to 425°F.
  • Meanwhile, place the beef on rack in a shallow baking pan, then press the pepper into the meat.
  • Roast for 30-45 minutes. The beef is done when a thermometer inserted into the thickest part of the meat reads 135°C.
  • Then, place the beef on a cutting board and let it sit like that for 15 minutes, then slice it thinly.
  • Transfer the beef drippings into a medium-sized saucepan, then add all the ingredients for the dipping sauce. Bring the mixture just shy of a boil, then take it off heat, cover it, wait for 10 minutes, then serve.

2.5 lbs beef chuck roast (left at room temperature for 15 minutes)
2 tsp kosher salt
1/2 tsp black pepper
1/2 tsp garlic powder
1 onion (thinly sliced)
1/2 cup red wine
14 ounces beef broth
1 bay leaf
1 tbsp kosher salt (or to taste)
6 soft rolls
3 tbsp butter (melted)
1/2 tsp garlic salt
6 provolone cheese (slices )
flat-leaf parsley (for garnish (optional))

Steps:

  • Add olive oil to the Instant Pot. Using the display panel select the SAUTE function.
  • Season the beef with salt, pepper and garlic powder.
  • When oil gets hot, brown the meat on all sides, 3-4 minutes per side. Meat will not be cooked through. Transfer browned meat to a shallow dish and cover loosely with foil.
  • Add onion to the pot and saute until soft, 3-4 minutes.
  • Add wine to the pot and deglaze by using a wooden spoon to scrape the brown bits from the bottom of the pot.
  • Add beef broth and bay leaf to the pot. Put the meat back into to the pot, turning once to coat.
  • Turn the pot off by selecting CANCEL , then secure the lid, making sure the vent is closed.
  • Using the display panel select the MANUAL or PRESSURE COOK function*. Use the +/- keys and program the Instant Pot for 100 minutes.
  • When the time is up, let the pressure naturally release for 25 minutes, then quick-release any remaining pressure.
  • Carefully remove the meat from the pot to a cutting board and shred.
  • Strain remaining liquid. Reserve onions to serve with the sandwich (optional).
  • Use a spoon or fat separator to skim fat from remaining juices. Discard fat. Season au jus with 1 tbsp kosher salt, or to taste.
  • Slice open rolls, brush with melted butter and garlic salt and set under a broiler 2-3 minutes, until lightly toasted.
  • Top toasted rolls with shredded beef and cheese. Return to broiler for 2-3 minutes, until cheese begins to melt.
  • Top with chopped parsley (optional) and serve with au jus for dipping.
