These moist treats will have everyone reaching for more. Folks tell me they enjoy these French Christmas cookies. In fact, the batches I make ahead for my family and store in the freezer until Christmas seem to mysteriously disappear each year-even though the chocolate topping I put on before serving hasn't been added yet! -Judy Wilder, Mankato, Minnesota

Yield about 2-1/2 dozen.

Number Of Ingredients 8

1/2 cup butter, softened
1 cup packed brown sugar
1 cup 2% milk
2-3/4 cups graham cracker crumbs
2 cups finely chopped walnuts
2 cups milk chocolate chips
TOPPING:
1/2 cup milk chocolate chips, melted

Steps:

  • Preheat oven to 375°. In a large bowl, cream butter and brown sugar until light and fluffy. Beat in milk. Gradually beat cracker crumbs into creamed mixture. Stir in walnuts and 2 cups chocolate chips., Fill 2-in. foil baking cup liners three-fourths full. Place 1 in. apart in 15x10x1-in. baking pans. Bake 10-12 minutes or until set. Remove from pans to wire racks to cool completely., Drizzle with melted chocolate; let stand until set. Store in an airtight container in the refrigerator.

1 1/4 cups sugar
1 cup confectioners' sugar
1 cup softened butter (unsalted)
1 cup oil
2 eggs (beaten)
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon salt
1 1/2 teaspoons pure vanilla extract
4 cups flour (all purpose)

Steps:

  • Mix all the dry ingredients together in a large mixing bowl. In another small bowl combine the softened butter with the oil, the beaten eggs and vanilla. Incorporate into the dry ingredients.
  • Refrigerate for 1 hour.
  • Roll into 1 inch balls. Mash down with a glass dipped in granulated sugar. Give 1 1/2 inches between cookies to allow them to spread out when baking.
  • Bake at 375°F till edges turn lightly tan. Cool before removing from cookie sheet.

Now, add in the egg yolk, orange zest, and vanilla extract and mix until the egg is completely incorporated. Add the flour and mix just until the flour is incorporated; don’t mix anymore than you need to.
  • Wrap the dough in plastic wrap and pat down so that you get a 1 inch disc. Refrigerate the dough until it’s thoroughly chilled, about 1 hour.
  • Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside. Take your dough out of the fridge and let the dough sit on the counter for about 15 minutes to slightly thaw. If you try to roll the dough out right away, you’ll end up with a lot of cracks in the dough.
  • Dust your counter space with flour and place the dough on this surface. Roll the dough out so that it measures 1/4 inch thin. Always roll the dough in one direction, rotating the dough every once in awhile; don’t roll back and forth.
