French Chicken Salad with Tarragon & Grapes image

Enjoy this salad over a bed of greens. Or serve it on toasted light rye bread lined with green leaf lettuce leaves.

2 Tbsp Uncooked scallion(s) minced
1 tsp Fresh tarragon chopped
1 tsp Whole-grain mustard
0.25 tsp Kosher salt
0.125 tsp Black pepper
1 cup(s), chopped Cooked skinless boneless chicken breast(s) or diced
0.5 cup(s) Red seedless grapes halved
2 Tbsp Uncooked celery minced

Steps:

  • Stir together yogurt, scallion, tarragon, mustard, salt and pepper; set aside.
  • Combine chicken, grapes and celery in a small bowl; pour yogurt dressing over top and toss to combine.
  • Serving size: 3/4 c

Try serving this distinctive chicken salad in avocado halves or in an oven-roasted tomato.

1/4 teaspoon Dijon mustard
1 tablespoon red-wine vinegar
1 tablespoon olive oil
1 cup diced chicken
1 heaping tablespoon minced red onion
1 heaping tablespoon minced celery
2 teaspoons chopped fresh flat-leaf parsley
Coarse salt and ground pepper, to taste
Avocado or beefsteak tomato, if desired

Steps:

  • Whisk together mustard, vinegar, and oil; toss with remaining ingredients.
  • To serve in an avocado half: Slice avocado in half lengthwise, and remove pit; mound chicken salad in each avocado half (makes 2 servings).
  • To serve in a roasted tomato: Preheat oven to 400 degrees. Slice top off a large beefsteak tomato; scoop out flesh to form a shell, and brush inside with a bit of olive oil. Bake until slightly softened, 3 to 5 minutes. Let cool slightly, then fill with chicken salad.

FRENCH CHICKEN LIVER AND GREEN BEAN SALAD WITH GARAM MASALA



French Chicken Liver and Green Bean Salad With Garam Masala image

1 tablespoon red wine vinegar
1 teaspoon Dijon mustard
1 garlic clove, smashed to a paste with a little salt
Salt
pepper
3 tablespoons extra virgin olive oil
1/2 pound small green beans, topped and tailed
Salt
12 chicken livers, trimmed, about 1 pound
2 teaspoons garam masala (see Note)
2 tablespoons clarified butter, ghee or olive oil
18 cherry tomatoes, halved, optional
6 small handfuls salad greens (about 5 or 6 ounces)

Steps:

  • For the vinaigrette: Mix the vinegar, mustard and garlic in a small bowl. Add a little salt and pepper, and whisk in the oil.
  • Cook the green beans in boiling salted water until barely tender, about 2 minutes. Drain, cool and set aside.
  • Pat the livers dry with paper towels, then season on both sides with salt and the garam masala.
  • Heat the butter or oil in a wide skillet over medium-high heat. Add the seasoned livers in one layer and let them brown, about 2 minutes. Turn them over and cook 1 minute more, leaving them pink at the center. Remove from heat.
  • Dress the beans and tomatoes, if using, with half the vinaigrette, and add a little salt and pepper. Dress the greens with the rest of the vinaigrette, and pile them on a platter or individual plates. Top the greens with the beans, the tomatoes, if using, and the warm chicken livers.

This basic chicken salad is a family favorite. I like to use baked thighs or breasts that have been sprinkled with basil or rosemary.

½ cup mayonnaise
1 tablespoon lemon juice
¼ teaspoon ground black pepper
2 cups chopped, cooked chicken meat
½ cup blanched slivered almonds
1 stalk celery, chopped

Steps:

  • Place almonds in a frying pan. Toast over medium-high heat, shaking frequently. Watch carefully, as they burn easily.
  • In a medium bowl, mix together mayonnaise, lemon juice, and pepper. Toss with chicken, almonds, and celery.
