BROCCOLI SUPREME
Got this recipe from my cousin (CrystalB -- chef #139350), who got it from a Company's Coming cookbook. A perfect side-dish for an Oriental meal -- mildly flavoured, slightly sweet.... just a great way to serve broccoli!!

Steps:
- Stir together first 6 ingredients and set aside.
- Heat cooking oil in wok or frying pan on medium-high. Add broccoli and garlic and stir-fry 3-4 minutes or until broccoli is tender-crisp.
- Stir cornstarch mixture and add to broccoli mixture until boiling and thickened.

CHICKEN BREASTS CHASSEUR (SUPREMES DE VOLAILLE CHASSEUR)
Steps:
- Preheat the oven to 350 F.
- Season the chicken with the salt and pepper. Warm 1 teaspoon of the oil in a large nonstick saute pan over medium heat. Carefully, lay the chicken breasts, skin side down, in the pan. Sear for 3 minutes, or until the skin has nicely browned. Transfer the chicken, skin side up, to a nonstick jelly-roll pan. Reserve the saute pan.
- Bake the chicken for 20 minutes, or until the juices run clear when the chicken is pierced with a knife.
- While the chicken is cooking, remove most of the fat from the saute pan. Add the carrots and onions to the pan. Saute over medium heat for 3 minutes, or until the vegetables begin to caramelize. Add the stock and raise the heat to high. Bring to a boil, then reduce the heat to medium. Simmer for 10 minutes, or until the liquid has reduced by half. Strain through a fine sieve into a small bowl; skim off any fat that rises to the surface.
- Warm the remaining 1 teaspoon oil in a medium saute pan over medium heat. Add the mushrooms and shallots. Saute for 5 minutes, or until the mushrooms are golden. Season with the salt. Remove the pan from the heat and add the cognac. Carefully ignite the cognac with a long match. Allow the flame to burn out, then add the wine. Return the pan to the heat.
- Bring to a boil over medium-high heat. Reduce the heat to medium and simmer for 10 minutes, or until the liquid has reduced by half. Add the reserved stock and simmer for 5 minutes, or until the sauce is thick enough to coat the back of a spoon. Stir in the tarragon. Taste and adjust the seasoning.
- Remove the skin from the chicken breasts. Carefully cut the breast meat from the breast bone and then cut each breast, on the diagonal, into 2 pieces. Place a divided chicken in the center of each of 4 warm dinner plates.
FRENCH CHICKEN BROCOLLI SUPREME
There are other recipes out there like this chicken style casserole that uses canned soups. This one is from scratch and make a huge impact on taste.

- 1. In greased 13×9 pan, layer the broccoli and chicken, then set aside
- 2. In saucepan over medium heat, combine the melted butter, cornstarch dissolved in water, chicken broth, seasonings, and milk. Stir well, and continue stirring until sauce has thickened.
- 3. Turn heat down to low, and add 1- 1/2 cups grated cheddar cheese. Stir until melted. Pour over the chicken and broccoli. Top with 1- 1/2 cups grated cheddar cheese.
- 4. Melt the butter, and add the poppy seeds, and stir well. Crush Ritz crackers in large zip-lock bag with a rolling pin. Don't crush too small. Add crumbs to the melted butter.
- 5. Sprinkle crumbs over the top of the grated cheese.
- 6. Bake uncovered at 350 degrees for about 30 minutes, or until hot & bubbly.
BROCCOLI CHICKEN SUPREME
Very comforting casserole. I've been told you could also try the sauce with other meats, but I've only ever made it with the chicken.

- 1. Place the broccoli in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil, cover and steam for 5-7 minutes or until crisp-tender. Meanwhile, in a large skillet, saute the mushrooms in the butter until tender.
- 2. In a greased 13x9x2 in. baking dish, layer 4 cups chicken, two-thirds of the mushrooms, two cans of water chestnuts and 4 cups broccoli. In a greased 8 in. square baking dish. layer the remaining chicken, mushrooms, water chestnuts and broccoli.
- 3. In a large saucepan over medium heat, melt butter. Stir in flour, seasoned salt and pepper until smooth. Gradually add the broth and whipping cream. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat.
- 4. Stir in a small amount of the hot mixture to egg yolks. Return all to pan, cook and stir until mixture reaches 160 degrees and coats the back of a metal spoon. Remove from heat, stir in lemon juice and nutmeg.
- 5. Pour 3 cups of sauce over the large casserole and remaining sauce over the small casserole; sprinkle with almonds. Bake, uncovered, at 375 degrees for 20-25 minutes or until bubbly and heated through.
