1-1/4 cups sugar
1/3 cup cornstarch
1 cup cherry juice blend
4 cups fresh tart cherries, pitted or frozen pitted tart cherries, thawed
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon almond extract
PASTRY:
2 cups all-purpose flour
1/2 teaspoon salt
2/3 cup shortening
5 to 7 tablespoons cold water
1 large egg, beaten, optional

Steps:

  • Preheat oven to 425°. In a large saucepan, combine sugar and cornstarch; gradually stir in cherry juice until smooth. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from the heat. Add cherries, cinnamon, nutmeg and extract; set aside., In a large bowl, combine flour and salt; cut in shortening until crumbly. Gradually add cold water, tossing with a fork until a ball forms. Divide dough in half so that one ball is slightly larger than the other. , On a lightly floured surface, roll out larger ball to fit a 9-in. pie plate. Transfer dough to pie plate; trim even with edge of plate. Add filling. Roll out remaining dough; make a lattice crust. Trim, seal and flute edges. If desired, brush with egg wash., Bake for 10 minutes. Reduce heat to 375°; bake until crust is golden brown, 45-50 minutes. Cool on a wire rack.

2 tablespoons sugar
1 cup milk
1/2 cup all-purpose flour
1/2 cup sugar
3 large Land O Lakes® Eggs
1 teaspoon vanilla
1/2 teaspoon almond extract
2 tablespoons powdered sugar

Steps:

  • Heat oven to 350°F. Place cherries in greased 9-inch pie pan; sprinkle with 2 tablespoons sugar.
  • Place milk in 5-cup blender container; add all remaining ingredients except powdered sugar. Cover; blend at medium speed 1-2 minutes or until smooth. Pour over cherries.
  • Bake 40 -50 minutes or until knife inserted in center comes out clean. Sprinkle with powdered sugar. Serve warm. Store refrigerated.

1 (3 ounce) package cream cheese, softened
½ cup confectioners' sugar
½ teaspoon vanilla extract
¼ teaspoon almond extract
1 cup heavy whipping cream
1 (9 inch) pie shell, baked
1 (12 ounce) can cherry pie filling

Steps:

  • In a small bowl, combine cream cheese, confectioners' sugar, vanilla, and almond extracts. Beat with an electric mixer until light and fluffy. In a separate medium bowl, beat whipping cream until stiff. Carefully fold cream cheese mixture into whipped cream.

2 pounds fresh sour cherries (tart) cherries (or 3 pounds drained and thawed frozen cherries), pitted (6 cups)
1 cup sugar
1/4 cup cornstarch
1/2 teaspoon pure vanilla extract
2 tablespoons unsalted butter, cut into small pieces
Essential Pate Brisee
All-purpose flour, for surface
1 large egg, lightly beaten with 2 tablespoons heavy cream, for egg wash

Steps:

  • Make the filling: Preheat oven to 375 degrees. Toss together the cherries, sugar, cornstarch, and vanilla in a bowl.
  • Make the crust: Roll out 1 disk pate brisee to a 1/8-inch thickness on a lightly floured surface. Fit dough into a 9-inch pie plate. Pour in filling; dot with butter. Refrigerate while making top crust.
  • Roll remaining disk pate brisee to a 1/8-inch thickness on a lightly floured surface. Cut out 4 to 5 holes using a 3/4-inch round cookie cutter or pastry tip. Place on top of pie.
  • Trim bottom and top crusts to a 1-inch overhang using kitchen shears and press together to seal around edges. Fold edges under; crimp as desired. Freeze for 20 minutes.
  • Brush crust with egg wash. Bake pie on a foil-lined rimmed baking sheet set on the middle rack, until pie is bubbling in center and crust is golden, 1 1/2 to 1 3/4 hours. Transfer pie to a wire rack and let cool before serving.

1 cup drained jarred high-quality maraschino cherries, such as Luxardo
2 tablespoons lemon juice
3 tablespoons sugar
2 strips lemon peel (using a peeler)
1 cup dark rum
1/2 cup milk
1/2 cup heavy cream
3 large eggs, beaten
1/2 teaspoon almond extract
2 tablespoons honey
Two 1 1/2-inch thick challah bread slices
2 tablespoons unsalted butter
Confectioners' sugar, for dusting
2 lemons, zested

Steps:

  • Combine the cherries, lemon juice, sugar and lemon strips in a small saucepan over low heat. Cook until the mixture has thickened, about 20 minutes. Remove the pan from the heat, add the rum and return it to the heat to burn off the alcohol, about 1 minute or until the flame is gone.
  • Whisk together the milk, cream, eggs, almond extract and honey in a shallow bowl. Soak the bread in the custard mixture.
  • Heat the butter in a large saute pan wide enough to fit both pieces of bread over medium heat until frothing. Drain off the excess custard from the bread, add the slices to the pan and cook the on both sides until golden brown, 4 to 5 minutes a side.
  • Finish in a 375 degrees F oven if the center is still wet, 5 minutes at most.
  • Serve by placing the French toast on a platter, along with the cherries jubilee sauce. Finish with the zest of the lemons and a dusting of confectioners' sugar.

  • In a large bowl, stir the cherries, sugar, cornstarch, lemon juice, vanilla, and almond extract together until thoroughly combined. Cover filling and place in the refrigerator as you roll out the pie dough or for up to 24 hours.
  • On a floured work surface, roll out one of the discs of chilled dough (keep the other one in the refrigerator). Turn the dough about a quarter turn after every few rolls until you have a circle 12 inches in diameter. Carefully place the dough into a 9×2 inch pie dish. Tuck it in with your fingers, making sure it is smooth. Use a slotted spoon to spoon and spread the cherries into the crust. Reserve the juice for the next step. Refrigerate pie, uncovered, as you reduce the juices in the next step.
  • Pour the few Tablespoons of leftover juice into a small saucepan over low heat. Cook and stir for 3-4 minutes or until juice has slightly reduced and thickened. Cool for 5 minutes, then pour over cherries in filling. Do your best to gently toss together– doesn’t have to be perfect. The reduction will harden and thicken as a result of mixing with the cold cherries. This is normal and it will melt again in the oven. Dot the pieces of butter on top of the filling.

  • Remove the bowl and form the dough into 2 equal balls using your hands (do not overhandle). Place 1 ball between two large sheets of parchment paper, and roll out the round to about 11 inches in diameter; place on a baking sheet (do not remove the paper).
  • Set a rack in the top third of the oven and preheat to 375°F. Grease a 9-inch round cake pan with butter. Add a parchment round to cover just the bottom of the cake pan.
  • Remove the dough rounds from the refrigerator; let rest at room temperature for about 5 minutes. Carefully peel away the paper on both sides of the larger round.
  • In a small bowl, beat the remaining egg with a few drops of water. Brush the top of the dough generously with the egg wash. Then, using a small, sharp knife, create a pattern of crisscrossed lines.
  • Bake until the top is golden, 30–35 minutes. Remove to a rack and let cool 5 minutes. Use a paring knife to dislodge the cake’s edges from the pan. Invert the cake onto a flat plate, then invert again onto another plate or stand.
