- Heat oven to 325°F. Grease 9-inch glass pie plate. In medium bowl, mix apples, cinnamon and nutmeg; place in pie plate.
- In medium bowl, stir remaining filling ingredients until well blended. Pour over apple mixture in pie plate. In small bowl, mix all streusel ingredients until crumbly; sprinkle over filling.
- Bake 40 to 45 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Store in refrigerator.

- Cut pastry sheet in half. Repackage and refrigerate one half for another use. On a lightly floured surface, roll out remaining half into an 8-in. circle. Transfer to a 7-in. pie plate; flute edges., In a large bowl, combine the apples, 1 tablespoon sugar and cinnamon; place in crust. In a small bowl, combine the flour, walnuts, raisins, butter, egg and remaining sugar; spoon over top. My Mom makes the best Apple Pie I have ever tasted. Now I would like to share her secret with you. Serve with vanilla ice cream if you wish.

- Preheat oven to 450 degrees F (225 degrees C). Fit bottom crust into a 9 inch pie plate.
- In a small bowl, mix together sugar, flour, salt, cinnamon, and nutmeg. Place sliced apples in a large bowl and sprinkle with sugar mixture. Toss until apples are thoroughly coated. Spoon apples into pan.
- Dot apples with butter or margarine, then sprinkle with whiskey. Cover with top crust. Seal edges and cut steam vents in top.
- Bake in preheated oven for 10 minutes. Lower temperature to 350 degrees F (175 degrees C) and bake an additional 40 minutes. Serve warm.

This came from a long time friend. My dad, who doesn't like apple pie, likes this one. I will warn you, it's VERY sweet. I have cut the sugar. Please feel free to do so as well.

- To mix the topping ingredients together, combine flour and brown sugar. Cut in the butter using a pastry blender, two forks or food processer. Set aside.

TOM'S MOM'S APPLE PIE

- For the pie crust: Place the flour, granulated sugar and salt in a food processor. Pulse once or twice to evenly incorporate. Add the butter and lard and pulse until the fat is broken down into pea-size pieces, 5 to 6 pulses. Add the cider vinegar and 1 tablespoon of the cold water and pulse to combine. Continue adding a tablespoon of water at a time and pulsing after each addition until the dough just comes together (you may not need the full 1/3 cup water). Remove the dough from the food processor and form a third of the dough (about 9 ounces) into a disk. Form the remaining two-thirds of the dough (about 1 pound) into another disk. Wrap the disks in plastic wrap and refrigerate at least 2 hours or up to overnight.
- Position an oven rack in the lower third of the oven and preheat to 425 degrees F.
- Remove the dough disks from the refrigerator and let sit at room temperature for 10 to 20 minutes to take the chill off.
- For the filling: Combine the brown sugar, granulated sugar, cornstarch, cinnamon, salt, ginger and nutmeg in a small bowl. Set aside.
- Put the apple slices in a large bowl and stir in the sugar mixture and orange juice. Mix to combine.
- Dust a clean work surface with flour and roll out the larger disk of dough into a 13-inch round. Transfer to a 10-inch pie dish. Pour the apple filling into the shell and then evenly distribute the butter pieces over the apples. Roll out the second disk of dough into an approximately 11-by-10-inch rectangle. Cut the dough into six strips, about 11 inches long by 1 1/4 inches thick.
- Form a lattice top by laying 3 parallel dough strips vertically across the pie. Fold the middle strip of dough in half back over itself and lay one piece of dough horizontally across the middle of the pie, perpendicular to the other dough strips. Fold the original strip of dough back down. Next, lift the other two strips of dough and fold them back over themselves. Lay another strip of dough perpendicular to the folded-over dough pieces. Fold those pieces back down and repeat on the other side with the remaining piece of dough. Trim the dough around the edges of the pie dish so there is no more than a 1/2-inch overhang.
- Fold the bottom crust up and over the edges of the lattice top and crimp the edges together between your forefingers and thumbs. Place the pie on a baking sheet and transfer to the oven. Bake for 20 minutes. Remove the pie from the oven and cover the edges with foil or a pie crust shield. Return to the oven and continue to bake until the filling begins to bubble, another 35 to 40 minutes. Let cool at least 1 hour.
- For the mascarpone whipped cream: Combine the mascarpone, cream and confectioners' sugar in the bowl of a stand mixer fitted with a whisk attachment. Beat on high speed until the mixture forms soft peaks and is thick. Serve immediately or store in the refrigerator until ready to serve. (This can be made the day before.)
- Cut the pie into slices and top with the mascarpone whipped cream.
FRENCH APPLE PIE

However if you have a favorite baking apple, you could use that. If you don't wish to add the rum, use 1 teaspoon of vanilla extract in its place.

- One 8-inch (20cm) round pan, 2 inches deep, buttered
- For the apple filling, peel, halve, core, and cut the apples into thin wedges. Melt the butter in a wide saucepan or Dutch oven with a cover, and add all the remaining ingredients but the rum. Stir well and place on medium heat. Cook until the apples start to sizzle, then cover the pan and decrease the heat. Cook until the apples have exuded water, between 5 and 10 minutes. Uncover the pan and stir occasionally while the water evaporates. Remove from heat, add the rum, and spread the filling in a shallow bowl. Refrigerate the apple filling.
- For the dough, combine the flour, sugar, baking powder, and salt in the bowl of a food processor and pulse to mix. (You can also make this by hand, in a bowl.) Cut the butter into 8 or 10 pieces and add. Pulse until the butter is no longer in visible pieces. Add the eggs and pulse until the dough starts to form a ball. Invert to a floured work surface and carefully remove the blade. Wrap and chill the dough.
- When you are ready to assemble the pie, set a rack in the lowest level of the oven and preheat to 350ºF (180ºC) degrees.
- Lightly knead the chilled dough to soften it. Roll a little more than half the dough on a floured surface and line the pan. Cut away excess dough at the rim of the pan. Spread the chilled apple filling in the crust. Roll the remaining dough and cut an 8-inch (20cm) disk. Set it atop the filling and fold the dough on the side of the pan over it to seal. Use a fork to press down the folded dough and to pierce some holes throughout.
- Bake until the dough is baked through and dark golden, about 35 to 40 minutes. Cool on a rack.
- Unmold the pie to a platter keeping the bottom of the pie as the top. Combine the confectioners' sugar and water in a small saucepan and stir well. Heat to lukewarm and quickly spread on the pie. Let the icing set before serving.
FRENCH CRUMB APPLE PIE
This pie got me married! I made this pie for my husband when we were first dating. A few years later he told me that as soon as he tasted that pie he knew he was going to marry me. Now that is what I call a GOOD PIE!! Hope you enjoy it!

- 1. Bottom pie crust directions. I am going to make this as complete as I can for everyone that has never made their own pie crust.
- 2. Take flour and crisco and put it in a medium bowl.
- 3. Use a fork or a pastry cutter to incorporate the crisco into the flour. Until it looks like little balls.
- 4. Take a tablespoon of cold water and add it to the mixture. Gently working it in.
- 5. Continue to add water a tablespoon at a time until you form a ball of dough. It should still be a tiny bit dry. You don't want it soaked.
- 6. Wrap it in wax paper and put it in the fridge for about an hour.
- 7. Filling Directions
- 8. Take all the filling ingredients and put them in a bowl and mix. Let them sit for about 15 minutes till the apples and ingredients get nice and juicy.
- 9. At this point you want to preheat your oven to 425 degrees.
- 10. Roll out your bottom crust and place in a 9 inch pie pan.Just a little note if you have a marble rolling pin put it in the freezer for about a half hour before you roll out the dough. It makes it much easier to roll.
- 11. Put the apple mixture into crust and get ready to make your topping.

- 13. Take flour and brown sugar and incorporate them together using a wire whisk.
- 14. Take your stick of cold butter and slice it into the mixture.
- 15. With a fork or pastry cutter cut the butter into the flour mixture until it resembles little balls.
- 16. Flute the edges of your pie crust BEFORE you put the crumb topping on.
- 17. Spread crumb topping over the apples until it is completely covered.
- 18. Bake at 425 degrees for 50 minutes... Cover the pie with foil the last 15 minutes of baking so your crumbs don't burn.
- 19. The pies juices should be bubbling up through the crust. That's how you know it's done. Enjoy!

- 1. Preheat oven to 425 degrees. PIE FILLING: Stir together sugar, spices, and cornstarch. Mix with apples in a medium bowl and set aside while making topping. Measure 1 tablespoon plus 1 teaspoon cold butter and set aside in a separate small dish.
