This traditional French Onion Soup recipe has a rich, decadent broth loaded with caramelized onions and topped with everyone's favorite part: the toasted bread and melty cheese.

8 tablespoons butter
4 tablespoons canola oil
6 pounds yellow onions (, sliced 1/4 inch thick with the grain)
1/2 cup sherry wine
1/2 cup red wine
1/8 cup tomato paste
1/4 cup garlic purée
1 bouquet garni
4 tablespoons concentrated beef base
10 cups chicken stock
thyme leaves for garnish
1 baguette (, cut into 1 inch slices)
8 slices provolone cheese
2 cups shredded gruyere cheese (, (optional))

Steps:

  • In a large stock pot or dutch oven, melt the butter and canola oil together over high heat and add the onions. Sauté, stirring occasionally until they start to caramelize, about 15 minutes. Reduce the heat to medium high and continue to sauté until the onions are a deep brown color, about 1 hour.
  • Deglaze with the sherry and red wine and cook until the liquid is nearly evaporated.
  • Stir in the tomato paste and garlic purée. Add the bouquet garni, chicken stock, and beef base and bring to a simmer and cook for 45 minutes.
  • Skim the butter fat/foamy liquid from the top, and discard. Taste for seasoning and add salt or pepper as desired. Remove the bouquet garni.
  • Ladle the soup into oven-safe bowls and top with 2-3 slices of the baguette, then top with a slice of provolone cheese and grated gruyere if desired. Place the bowls on a baking sheet and broil for 3-4 minutes or until the cheese is melted. Garnish with fresh thyme leaves and serve.

1 garlic clove, minced

1 can (46 ounces) tomato juice
2 teaspoons beef bouillon granules

4 large yellow onions, thinly sliced
1 tablespoon flour
1 1/2 teaspoon salt
4 cups water
1 can (1 pound, 12 ounce) tomatoes, undrained
OR
4 cups Italian plum tomatoes, in chunks
6 slices toasted French bread, 1" thick
2 cups grated Gruyere, Swiss or cheddar cheese

Steps:

  • Saute onion in Dutch oven with butter, stirring until golden, 15 minutes. Add flour and cook until it turns golden. Add salt and the water. Bring to a boil; reduce heat, and simmer, covered, 10 minutes. Meanwhile, put tomatoes through blender to make a puree. Add to onion; simmer, covered, 15 minutes. Pour soup into individual heat proof bowls or into a large, shallow one. Arrange toast on top; sprinkle with cheese. Run under broiler 3 to 5 minutes, or until cheese melts and brown slightly. (If your bowls are not broiler safe, a hot oven will do the trick also.)

1 tablespoon butter
1 large onion, chopped
6 tomatoes, peeled and quartered
1 large potato, peeled and quartered
6 cups water
1 bay leaf
1 clove garlic, pressed
1 teaspoon salt
½ cup long-grain rice

Steps:

  • Melt butter in a large saucepan over medium heat. Saute onions in butter until tender and lightly browned, about 10 minutes. Add tomatoes, and continue cooking for 10 more minutes, stirring frequently. Add the potato, and 2 cups of water. Season with the bay leaf, garlic and salt. Bring to a boil, then reduce heat and simmer, covered, for about 20 minutes.
  • Stir in the remaining water, and bring to a boil again. Discard bay leaf, and strain the solids from the broth, reserving both. Puree the vegetables in a food processor or blender, and stir them back into the broth. Bring to a boil, and add the rice. Cover and simmer over low heat for about 15 minutes, or until rice is tender. Serve hot.

1 medium sized sweet onion (chopped)
1 tsp minced garlic
1/2 tsp thyme
4 TBSP butter
2 cans Hunt's Fire Roasted Diced Tomatoes
1 cup beef broth
1 TBSp brown sugar
water
sliced baguette topped with cheese (for garnish)

Steps:

  • Add the onion, garlic, thyme and 1/4 cup water to a hot pan. Cook over medium-high heat for 15 minutes, stirring occasionally and adding an additional 3 TBSP water every 4-5 minutes. Onions should caramelize and turn dark brown in color.
  • Add in butter, tomatoes, broth and brown sugar. Cook on medium heat until bubbling, then decrease heat and simmer for 20 minutes.
  • Blend until smooth. Top with toasted baguette and cheese. Sprinkle with fresh basil, if desired.

This past spring we made an amazing soup l'onion. It was from a recent New York Times Magazine (the original recipe dated to 1908 I think). It involved about 12 onions sweated
2 baguettes
some fancy Gruyère like cheese
and a simple tomato paste. The cheese is baked onto rounds of baguette and layered with the onions and the tomato paste inside of the pot then baked for a while. It was absolutely fantastic
crispy and creamy. It would be well worth it to find this recipe

2 yellow onions, thinly sliced

1/3 cup all-purpose flour
2 pounds tomatoes, coarsely chopped
1/2 cup dry white wine
6 cups water
4 to 6 slices country bread, well toasted
1/2 pound Gruyère or Tomme de Savoie cheese, diced (about 1 cup)

Steps:

  • In a large sauté pan, heat the oil and butter and sauté the onions over medium-high heat until golden brown, about 10 minutes. (I find it easiest to do this in two batches.)
  • Salt the onions lightly, then sprinkle them with the flour and place them in the slow cooker insert. Add the tomatoes, wine, and water. Cover and cook on low for 6 to 8 hours, or until the onions are quite soft and flavors have had a chance to meld.
  • When you are ready to serve the soup, adjust the salt to your taste, place a slice or so of bread in the bottom of each soup bowl, then toss in some of the cheese. Ladle some hot soup and vegetables over the top of the bread and cheese and serve.

  • I would enjoy either a dry, acidic white wine such as an Alsatian Pinot Gris or Riesling, or a good, fruity mountain red.
