For years, I had trouble finding a pizza sauce recipe my family liked, so I started making my own. The evening I served it to company and they asked for my recipe, I knew I'd finally got it right! - In a large saucepan over medium heat, combine tomato sauce and paste. Add remaining ingredients; mix well. Bring to a boil, stirring constantly. Reduce heat; cover and simmer for 1 hour, stirring occasionally. Cool. , Pour into jars or freezer containers, leaving 1/2-in. headspace. Freeze up to 12 months. Thaw frozen sauce in refrigerator before serving.

FREEZER PIZZA SAUCE
I love to double this recipe and freeze it in small containers or bags to have on hand. Combine this with a bread machine pizza dough recipe and homemade pizza is a breeze.

- In a medium saucepan, heat olive oil on medium heat. Add onion and garlic and saute until just soft, not browning.

- Cut an "x" in the bottom of each tomato. Fill a large mixing bowl with ice water.
- Bring a large pot of water to a boil. Add tomatoes to the boiling water until skins start to curl, about 30 seconds. Remove tomatoes from the boiling water and submerge in the bowl of ice water. When tomatoes have cooled enough to handle, remove from ice water. Remove and discard tomato skins; transfer tomatoes to a blender.
- Blend tomatoes until liquefied, and transfer to a medium saucepan. Add onion, garlic, basil, oregano, salt, and pepper. Simmer over medium heat until sauce reduces to desired consistency, 60 to 90 minutes.
- Puree sauce with an immersion blender until smooth. Use sauce immediately, or store in the refrigerator overnight to allow flavors to develop.

HOMEMADE FREEZER PIZZA
Instead of buying one of those freezer pizza's that you can't really choose the toppings on why not make a few yourself and have ready in the freezer! This tried-and-true method preserves a fresh, crisp crust even through the freezing process! The secret's in the cheese; when applied to the crust before any toppings or sauce, the cheese seals the crust against the moisture in the sauce. Do not thaw before baking!

- Put in automatic bread machine: place ingredients in container in following order: water, olive oil, flour, sugar, salt and yeast.
- Select Dough setting and press Start.
- Spray pizza pan with non-stick cooking spray or brush with olive oil.
- Gently stretch pizza crust to fit pan, forming raised edge at lip.
- Sprinkle crust with grated mozzarella cheese.
- Dot with browned sausage, ground beef, pepperoni and chopped and sautéed onion.
- Gently spread marinara sauce to cover cheese and toppings.
- Sprinkle with parmesan cheese and salt to taste.
- To freeze: flash freeze pizza in pan.
- When frozen, wrap in aluminum foil.
- To prepare: do not thaw pizza.
- Heat oven to 400°.
- Bake frozen pizza for 20 to 25 minutes, until crust is browned, sauce bubbles and cheese is fully melted.

- If using fresh tomatoes, bring a large pot of water to a boil.
