HOMEMADE PIZZA SAUCE

Homemade Pizza Sauce image

For years, I had trouble finding a pizza sauce recipe my family liked, so I started making my own. The evening I served it to company and they asked for my recipe, I knew I'd finally got it right! When I prepare my sauce, I usually fix enough for three to four pizzas and freeze it. Feel free to spice up the sauce to suit your own family's tastes. -Cheryl Kravik, Spanaway, Washington

Provided by Taste of Home

Time 1h20m

Yield about 4 cups.

Number Of Ingredients 8

Time 1h35m

Yield 4

Number Of Ingredients 7

8 large tomatoes, cored
1 small sweet onion, chopped
1 clove garlic, chopped
4 leaves chopped fresh basil
2 tablespoons dried oregano
½ teaspoon salt
freshly ground black pepper to taste

Steps:

  • Cut an "x" in the bottom of each tomato. Fill a large mixing bowl with ice water.
  • Bring a large pot of water to a boil. Add tomatoes to the boiling water until skins start to curl, about 30 seconds. Remove tomatoes from the boiling water and submerge in the bowl of ice water. When tomatoes have cooled enough to handle, remove from ice water. Remove and discard tomato skins; transfer tomatoes to a blender.
  • Blend tomatoes until liquefied, and transfer to a medium saucepan. Add onion, garlic, basil, oregano, salt, and pepper. Simmer over medium heat until sauce reduces to desired consistency, 60 to 90 minutes.
  • Puree sauce with an immersion blender until smooth. Use sauce immediately, or store in the refrigerator overnight to allow flavors to develop.

HOMEMADE FREEZER PIZZA

Homemade Freezer Pizza image

Instead of buying one of those freezer pizza's that you can't really choose the toppings on why not make a few yourself and have ready in the freezer! This tried-and-true method preserves a fresh, crisp crust even through the freezing process! The secret's in the cheese; when applied to the crust before any toppings or sauce, the cheese seals the crust against the moisture in the sauce. Do not thaw before baking!

BEST PIZZA SAUCE RECIPE (NO COOK, AUTHENTIC ITALIAN STYLE)

Best Pizza Sauce Recipe (No Cook, Authentic Italian Style) image

The best and easiest Italian pizza sauce recipe.

Provided by Christina Conte

Categories     Dressings, Sauces, Syrups & Toppings

Time 5m

Number Of Ingredients 6

14 oz (400g) can of European tomatoes (preferably pomodoro pelato S.Marzano dell'Agro Sarnese-Nocerino D.O.P) THIS IS THE MOST IMPORTANT INGREDIENT-do not use inferior quality tomatoes
3 Tbsp good quality extra virgin olive oil
1/2 tsp sea salt
a few pinches of dried oregano
2 or 3 leaves of fresh Italian basil, torn into small pieces
(optional: a clove of fresh garlic, minced) my Italian family uses garlic, but it's only used on one type of pizza in Naples

Steps:

  • Pour the can of tomatoes into a bowl. If it is pomodorini or whole tomatoes, crush them with your hands, or you can roughly cut them with kitchen shears.
  • Add the rest of the ingredients and mix well. Taste for salt and add if needed. (Don't add a lot of sauce to the pizza dough; you don't want to drown it.)

  • If using fresh tomatoes, bring a large pot of water to a boil. Make a small X in the bottom of each tomato and plunge into the boiling water until the skins are slightly loosened, 30 seconds to 2 minutes. Transfer to a bowl of ice water for 1 minute. Peel with a paring knife, starting at the X. If using frozen tomatoes, run each under warm water and peel or rub the skin off. Thaw in the refrigerator or defrost in the microwave until mostly thawed. Chop the tomatoes, reserving any juice.
  • Heat oil in a Dutch oven over medium heat. Add onions and cook, stirring, until beginning to brown, about 4 to 6 minutes. Add garlic and cook, stirring, for 1 minute. Add the tomatoes (and any juice), basil, thyme, oregano, salt, pepper and sugar (if using). Bring to a boil. Reduce heat to maintain a simmer and cook until thickened to the consistency of pizza sauce, about 2 hours. Taste and season with additional salt, pepper and/or sugar.
  • Transfer the sauce to a blender, add tomato paste and blend until smooth. (Use caution when pureeing hot liquids.)

  • In a large soup or stock pot, heat oil over medium heat. When hot, add onion and cook until beginning to turn translucent, or 6-8 minutes, stirring occasionally.
  • Once the sauce is cool, carefully pour a small amount into each section of an ice cube tray. Freeze for 3 hours or until completely frozen. Remove the sauce cubes from the tray and store in a freezer bag or airtight container. Store the leftover sauce in the fridge while it waits to be cubed and frozen.
  • Place sauce cubes in a small Ziploc and seal completely, removing as much air from the bag as possible. Fill a deep bowl with hot water and submerge the bag of cubes until thawed, about 10 minutes.

  • To prepare tomato puree from frozen tomatoes: (assuming they were cleaned and cored before freezing) leave to thaw 24 hours; drain accumulated juices and put through a strainer to remove seeds and peels.
  • To prepare tomato puree from fresh tomatoes: wash, core and halve tomatoes; heat to boiling (I use a 12-quart stockpot and a 6-quart soup pot for 22 pounds); put through a strainer to remove seeds and peels.
  • Make the pizza sauce: in a 12-quart or larger stockpot cook onions and garlic in the olive oil over medium heat until the onion softens, 5-10 minutes. Add tomato puree and all the seasonings (basil through pepper flakes), bring to a boil, reduce heat and cook for about 30 minutes, uncovered. Process with an immersion blender to make a smoother sauce (or carefully blend in batches).
  • Bring back to a boil; reduce heat and simmer, uncovered, until sauce reaches desired consistency (reduced by 1/4 to 1/3), usually an hour or two, depending on if you started with fresh or frozen tomatoes. Make sure to stir occasionally to prevent sticking (if you have a thin-bottomed stock-pot, stir more often to prevent scorching).
