Shun pre-packaged frozen pizzas for this convenient recipe. You can eat these cherry tomato margherita pizzas now or cook from frozen when you need a quick meal

500g pack bread mix or pizza base mix
little plain flour , for rolling
6 tbsp tomato pasta sauce or passata
small bunch basil leaves , shredded
18 cherry tomatoes , halved
250g ball mozzarella torn (dry well with kitchen paper, to keep the base crispy)
25g parmesan (or vegetarian alternative), grated

Steps:

  • Make up the bread dough following pack instructions, and transfer to an oiled bowl to rise for about 1 hr.
  • Knock back in the bowl by squashing all the air out of the dough with your fist. Divide the dough into 6 and roll each one on a lightly floured surface to a circle about 18cm in diameter. Put dough you're not using under a damp tea towel or oiled cling film to stop it drying out.
  • Put the pizza bases on large oiled baking sheets - you may need 2 or 3. Spread 1 tbsp sauce or passata on each base, then scatter on the basil, tomatoes, mozzarella and Parmesan (or whatever you fancy). You can freeze the pizzas now, if you like, on the baking sheet, wrapped in cling film. Or if eating straight away, heat oven to 240C/220C fan/gas 9. Cook for 8-12 mins, until crisp and golden. To cook from frozen, remove the cling film and heat oven to 220C/200C fan/gas 7. Bake for 10-14 mins until crisp and golden.

Instead of buying one of those freezer pizza's that you can't really choose the toppings on why not make a few yourself and have ready in the freezer! This tried-and-true method preserves a fresh, crisp crust even through the freezing process! The secret's in the cheese; when applied to the crust before any toppings or sauce, the cheese seals the crust against the moisture in the sauce. Do not thaw before baking!

2 cups all-purpose flour
2 teaspoons active dry yeast
1 teaspoon sugar
1/2 teaspoon salt
3/4 cup water
2 tablespoons olive oil
12 ounces mozzarella cheese, grated
1/4 lb Italian sausage, browned
1/4 lb ground beef, browned
1/4 cup onion, chopped and sauteed
2 ounces pepperoni slices
1 1/2 cups marinara sauce
2 tablespoons parmesan cheese, freshly grated
salt

Steps:

  • Put in automatic bread machine: place ingredients in container in following order: water, olive oil, flour, sugar, salt and yeast.
  • Select Dough setting and press Start.
  • Spray pizza pan with non-stick cooking spray or brush with olive oil.
  • Gently stretch pizza crust to fit pan, forming raised edge at lip.
  • Sprinkle crust with grated mozzarella cheese.
  • Dot with browned sausage, ground beef, pepperoni and chopped and sautéed onion.
  • Gently spread marinara sauce to cover cheese and toppings.
  • Sprinkle with parmesan cheese and salt to taste.
  • To freeze: flash freeze pizza in pan.
  • When frozen, wrap in aluminum foil.
  • To prepare: do not thaw pizza.
  • Heat oven to 400°.
  • Bake frozen pizza for 20 to 25 minutes, until crust is browned, sauce bubbles and cheese is fully melted.
