ORANGE SODA SHERBET
For birthdays, we pull out the old-fashioned ice cream maker and crank out a sherbet made with orange soda. We're all crazy about it, especially my son. -Heather Craft, Paducah, Kentucky

- Refrigerate unopened cans of soda, milk and pineapple until completely cold. In a large bowl, combine soda, milk and pineapple; mix until blended., Fill cylinder of ice cream maker no more than two-thirds full; freeze according to the manufacturer's directions. (Refrigerate any remaining mixture until ready to freeze.), Transfer sherbet to freezer containers, allowing headspace for expansion. Freeze 2-4 hours or until firm.

- In a large saucepan, combine milk and sugar. Cook and stir over medium heat until sugar is dissolved and mixture reaches 175°. Refrigerate until chilled. , Stir in the lime juice, zest and food coloring if desired. Freeze in an ice cream freezer according to manufacturer's directions. , Transfer sherbet to a 2-1/2-qt. freezer container. Allow to soften slightly; fold in whipped topping. Freeze for at least 4 hours before serving.

- In the bowl of a food processor combine all of the ingredients except the milk and process until the sugar is dissolved, approximately 1 minute. Transfer the mixture to a mixing bowl and whisk in the milk. Cover the bowl and place in the refrigerator until the mixture reaches 40 degrees F or below, approximately 1 hour.
- Pour the mixture into an ice cream maker and process until it is the consistency of soft serve ice cream. You may serve now or transfer to a lidded container and place in freezer until firm, approximately 3 hours.

- In a saucepan bring 1 cup water and sugar to a boil stirring frequently.
- Boil for 1 minute or until the sugar is completely dissolved.
- Remove from heat then stir in the thawed orange juice concentrate, lemon juice and remaining 2 cups water.
- Transfer to a freezer-safe bowl mixing.
- Cover and freeze until semi-frozen but still a mixable consistency.
- Remove from freezer then using an electric mixer beat until blended, then add in the cream and beat until combined.
- Cover and return to the freezer until solid.
- Remove about 12-15 minutes before scooping out of the bowl.

My Grandmother has been making this for over 50 years. Easy, Refreshing and tastes like a Creamsicle. My Grandmother says it's good served with a pork chop or chicken dinner.

Steps:
- Soak gelatin in 1 teaspoon of water.
- Heat orange juice and dissolve gelatin and sugar in it. Cool to lukewarm.
- Pour orange mix into an 8x8 glass or ceramic dish (I think I'll try tupperware). Cover with plastic wrap and place in freezer until it becomes slushy, approximately 2 hours.
- Whip cream and whisk or use mixer to combine with orange slush until no white streaks remain.
- Return to freezer for approximately 2 more hours.
- *If it separates, mix again.
