This chili recipe is many years in the making and I have won several awards with it. I think you'll be pleased with it. You can alter it to your own spice levels to achieve your perfect chili. Garnish with shredded mozzarella cheese, and use corn chips for dipping.

4 tablespoons vegetable oil
1 green bell pepper, chopped
1 yellow onion, chopped
2 ½ pounds lean ground beef
2 beef bouillon cubes
⅔ cup red wine
2 (16 ounce) cans whole peeled tomatoes, chopped, juice reserved
garlic cloves, crushed
1 (12 ounce) can tomato paste
1 ½ teaspoons paprika
2 ½ teaspoons chili powder
1 teaspoon cayenne pepper
2 ½ teaspoons dried basil
½ teaspoon dried oregano
2 tablespoons dried parsley
½ teaspoon black pepper
1 teaspoon salt
12 drops hot pepper sauce (e.g. Tabasco™)
1 (15 ounce) can kidney beans, drained
3 tablespoons flour
3 tablespoons corn meal
½ cup water

Steps:

  • Heat oil in a large saucepan over medium heat. Cook green pepper, and onion, until softened. Add the ground beef and cook until browned. Crumble over bouillon cubes, and stir in wine; continue to cook for a few minutes. Stir in chopped tomatoes, garlic, and tomato paste. Season with paprika, chili powder, cayenne pepper, basil, oregano, and parsley. Stir in salt and pepper.
  • Bring to a boil over high heat. Reduce heat to medium low. Cover, and simmer for 90 minutes, stirring occasionally.
  • Stir in kidney beans, and hot pepper sauce. You can add the reserved tomato juice if more liquid is needed. Continue to simmer for an additional 30 minutes.
  • In a small bowl, whisk together the flour, corn meal, and water until smooth. Stir into chili, and cook for a further 10 minutes, or until chili has thickened up.

3 Anaheim chiles, roasted, peeled, chopped
3 poblano chiles, roasted, peeled, chopped
12 ounces of bacon, cut crosswise into 1/4-inch strips and sautéed until almost crisp. Reserve 3 tablespoons of bacon fat.
3 tablespoons bacon fat (rendered from the bacon)
2 tablespoons vegetable oil (canola, grape seed or your favorite)
2 red bell peppers, seeds and ribs removed, diced
2 jalapeño peppers, seeds and ribs removed, minced
2 yellow onions, peeled and diced
1 head garlic, peeled and minced (10-12 garlic cloves, 6 tablespoons minced garlic)
1 pound boneless beef chuck, trimmed of fat and gristle, cut into 1/2-inch cubes
2 pounds ground beef
1 pound sweet Italian sausage, casings removed
3 tablespoons chili powder (Try using 3 different chili powders for great depth of flavor - I use ancho, chipotle and Mexican)
2 teaspoons cayenne pepper (Half this amount for less heat)
2 teaspoons ground coriander
2 teaspoons ground cumin
2 teaspoons granulated garlic
2 teaspoons granulated onion
2 teaspoons hot paprika (not smoked)
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper
2 cups tomato sauce (passata, not ketchup for those in the UK)
8 ounces tomato paste
12 ounces of your favorite beer (I use an IPA because I like the hoppy flavor)
1 cup chicken stock
2 15-ounce cans kidney beans, with juice
2 15-ounce cans pinto beans, with juice
Optional Garnishes:
1 bunch green onions, thinly sliced or 1 red onion, finely chopped
Shredded cheddar cheese or Monterey Jack
Sour cream

Steps:

  • Preheat the oven to broil (500ºF) Set an oven rack at the top, directly under the broiler. Spread the chiles out on a low-sided oven tray and roast for 15-20 minutes, turning peppers with tongs every five minutes, until their skins are about 60-70% blackened on all sides. Put the hot peppers directly into a paper bag. Roll down the top of the bag so they're tightly contained. Let them sit and steam for 15-20 minutes until the skins are loosened and easy to peel off. Peel off skins, remove seeds and membranes, and chop.
  • Add the bacon grease and oil to a large heavy pot or Dutch oven (6-quart), over medium-high heat. Add the chopped chiles, red bell peppers, jalapeño peppers and onions. Cook for 5 minutes or until the vegetables just start to become translucent. Add garlic and cook 1 minute longer. Transfer all the sautéed vegetables to a bowl and set aside. No need to wash the pot, you'll use it to brown the meat.
  • Add the cubed beef chuck to the pot and cook, stirring often, until lightly browned on all sides, about 4 minutes. Add the ground beef and sausage and cook for 7-10 minutes, stirring to break up the sausage and ground beef, until the meat is no longer pink. Return the cooked vegetables to the pot along with the reserved bacon.
  • chili powders, cayenne, coriander, cumin, granulated garlic, granulated onion, paprika, salt and black pepper. Cook, stirring, for 1 minute, until fragrant.
  • Add the tomato sauce and paste. Cook, stirring, for 2 minutes, to combine. Add beer, chicken stock, kidney beans with their liquid and pinto beans with their liquid. Bring to a boil, lower to a simmer, and cook for 2 hours, uncovered.
  • Ladle chili into bowls. Top with garnishes or put garnishes into small bowls for self serve.

2 tablespoons olive oil
2 medium onions, chopped
2 garlic cloves, minced
1 medium green pepper, chopped
1-1/2 teaspoons salt
2 tablespoons chili powder
3 teaspoons beef bouillon granules
1/8 teaspoon cayenne pepper
1/4 teaspoon ground cinnamon
1 teaspoon ground cumin
1 teaspoon dried oregano
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 cup water
1 can (16 ounces) kidney beans, rinsed and drained
Optional: Sour cream and jalapeno slices

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink, 5-7 minutes; crumble beef. Drain and set aside. , In the same pot, heat oil; saute onions until tender. Add garlic; cook 1 minute longer. Stir in the green pepper, salt, chili powder, bouillon, cayenne, cinnamon, cumin and oregano. Cook for 2 minutes, stirring until combined. , Add tomatoes and browned beef. Stir in water. Bring to a boil. Reduce heat; cover and simmer for about 1 hour. Add beans and heat through. If desired top with sour cream and jalapeno.

A ground beef chilli recipie for the heat lovers! You can add more chillies if you desire, sometimes a bit more ghost chilli to get your chilli fix! The smokiness of the smoked paprika and chipotle chilli are essential!

250 g beef mince
400 g chopped tomatoes
200 ml beef stock
1 -2 tablespoon oil (I use olive oil or sunflower oil)
1 medium onion (chopped)
4 garlic cloves (minced)
1 dried ghost chile (crumbled)
1 teaspoon dried chili pepper flakes
2 medium green chilies (chopped with seeds)
2 medium red chilies (chopped with seeds)
1 tablespoon cumin powder
1 teaspoon coriander powder
1 1/2 teaspoons dried chipotle powder (or equivalent whole chillies or other dried smoked chilli)
1 1/2 teaspoons hot smoked paprika
1 tablespoon dried oregano
400 g kidney beans (drained and washed)
200 g basmati rice
jalapeno (to serve)
grated cheddar cheese (to serve)
salt and pepper

Steps:

  • Brown beef mince in a heavy based sauce pan, transfer to a fine mesh sieve to drain excess fat.
  • Add half the oil and sauté onions till soft and translucent, then add the fresh chillies and turn up the heat to get some colour on the onions.
  • Turn down the heat and add the remaining oil and dryry ingredients except for the oregano, cook for around 30seconds.
  • Add the chopped tomatoes, garlic, oregano, dried chilli and drained mince. Cook over a medium heat till the mixture looses some of it moisture,around 10mins then re-hydrate with some the beef stock, add salt and pepper to taste and simmer with the lid on for ideally 45-60mins. Stirring every 10mins, if the chilli become too dry just top up with beef stock.
  • Cook basmati rice to packet instructions.
  • Then add the kidney beans to the chilli and continue to cook with the lid off for a further 10mins or untill the chilli is to the consistency you like.
  • Serve with basmati and topped with some jalapeño slices and grated cheddar.

This recipe produces the most FLAVORFUL red chile con carne that rivals any Mexican restaurant. Since it's made in the crockpot and uses prepared store-bought chili paste, it's super simple and foolproof! (Finding the chile paste is half the battle...I use a prepared chili paste that is found in the freezer section of most Arizona grocery stores, but it may not be available nationwide [I've had trouble finding it online]. If you can't find it at your grocery store, you're better off trying to make your own with dried New Mexico chile pods softened in hot water and processed till smooth [no salt or anything else should be added]...there are instructions everywhere online. Enchilada sauce is NOT a recommended substitution as it has flavorings and salt added. You just want pure chile paste.) Yield amount is approximate.

4 lbs roast (any kind is fine)
2 tablespoons canola oil
1 medium onion, chopped
3 tablespoons chili powder
1/2 tablespoon cumin
1 teaspoon garlic powder
1 (8 ounce) can Mexican tomato sauce (El Pato brand)
8 ounces beef broth
8 ounces chili paste
salt and pepper
hot sauce (I use Tapatio brand)
2 (4 ounce) cans diced green chilies

Steps:

  • Trim the meat of any visible fat and season with salt and pepper.
  • Heat oil in a large skillet over medium-high heat. Place roast in the skillet and brown quickly on all sides. (This step can be skipped if cooking from frozen, or if you're short on time.).
  • Transfer the meat to a crockpot and add all of the remaining ingredients except for the green chilies and hot sauce.
  • Cook on low for 8 hours.
  • One hour before done, shred the roast with a fork and stir in the green chiles and hot sauce to taste.
  • Serve with grated cheddar cheese in a warmed tortilla.

You will need the following:
Large Dutch oven or boiling pot.
Large non-stick skillet or frying pan.
3 lbs. of ground sirloin, ground buffalo, leanest ground beef, or stew meat, or venison chopped.
2 ½ lbs. of dried Black beans, kidney beans, chili beans, red beans, pinto beans or a mixture of any of these. (You may substitute with 4 cans 15 oz. canned beans if you wish.)
12-14 cups of water.
3 celery sticks chopped.
1 onion chopped.
3 medium tomatoes chopped. (Or two 15 oz. cans of chopped tomatoes.)
¾ cup of mild chili peppers chopped.
¼ cup bell pepper, chopped.
½ tablespoon cilantro, chopped.
1 teaspoon minced garlic.
1 teaspoon chili powder.
½ teaspoon ground cinnamon.
¼ teaspoon kosher or sea salt.
¼ teaspoon black pepper.
¼ teaspoon lemon pepper.
½ teaspoon Hershey's chocolate powder or syrup.
12 oz. beer or ale.
2 tablespoons lemon juice.
½ cup olive oil.
½ tablespoon of Tapatio hot sauce.
6 oz can tomato paste.
Two 1.25 oz. packets of chili seasoning.

Steps:

  • If you are using dried beans, put beans in a large pot of cold water (about 7 cups of water) and let them soak eight hours or overnight. Drain the water out and rinse the beans. (This is very important!) Put the beans back in the pot with about 6 cups of water and ½ tablespoon of olive oil. Bring beans to a boil. Lower heat, and simmer low, covered for 2 ½ hrs. Check the beans every half hour or so, careful not to burn beans. Drain the water, again add 2 cups fresh water, ½ tablespoon of olive oil, and set aside. If you are using canned beans, drain any liquid from beans, put beans in boiling pot and set aside. Put about a tablespoon of olive oil and meat into skillet and brown it. Add meat to the bean pot. Put onion, garlic, chili peppers and bell pepper in skillet, with 1 teaspoon olive oil, and sauté with ONE of the chili seasoning packets, until onions are caramelized and garlic and peppers are browned, and then put this mixture into the bean pot. Add ALL the other ingredients to the pot, add a little water if needed, it should be like soup at this stage, and bring to a boil. Cover and simmer on low (check and stir every ½ hour or so, careful that the beans do not burn) about 2 ½ hours until beans and meat are tender and chili thickens. Serve with corn bread, muffins or tortilla chips and a salad. Garnish with grated sharp cheddar cheese or sour cream. Serves about 12 half cup servings.
