FRIED TATERS
My husband loves my fried taters. It's just something I've whipped up and the spices are more to the person's taste than anything. They can be a bit spicy so you can hold back on the salt. Let me know what you think.

Steps:
- In a large skillet, pour the olive oil and heat on med-high heat.
- Wash potatoes well and cut with skin on into thin cubes or triangles.
- Add potatoes to skillet.
- Next sprinkle the lemon& pepper, garlic salt, garlic powder and essence over the potatoes as you turn them to make sure you get all of the potatoes.
- Lower your heat to medium and turn potatoes until browned on each side.
- Takes about 10-15 minutes.

TATER WEDGES

- For the taters: Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
- Thoroughly wash the skins of the potatoes. Cut each in half lengthwise, then slice the halves into 2 to 3 wedges each.
- Place the wedges in a large mixing bowl. Drizzle in the olive oil and sprinkle in the rosemary, salt, black pepper and granulated garlic. Toss until the potatoes are thoroughly coated.
- Spread the potatoes out on the prepared baking sheet, being sure to leave space in between the wedges. Bake in the middle of the oven until almost tender, about 25 minutes. Flip the wedges over and bake until the edges are crispy and turning brown, about 10 minutes more.
- For the dipping sauce: Meanwhile, place the mayonnaise, sour cream, dill, parsley, mustard, pepper and salt in a food processor. Pulse until the fresh herbs are chopped and the ingredients are combined, about 30 seconds. Pour into a small bowl and serve alongside the warm potato wedges.
TASTY TATERS (AKA OVEN ROASTED POTATOES)
This is actually a recipe I have had for many years at camp when I would cook over a fire. Just recently I tried it in the oven and it worked really well, so here it is! ENJOY!

- Preheat oven to 450 degrees Fahrenheit.
- Put potatoes, oil and soup mix in a plastic bag; close and shake until potatoes are coated.
- Put coated potatoes in a 13x9 inch pan; bake uncovered for 40 minutes until potatoes are golden brown.

- 1. PREP/PREPARE
- 2. You will need a large pot or skillet to make this recipe.
- 3. If you do not have any red or golden potatoes, you can always use russets.
- 4. Gather your ingredients (mise en place).
- 5. Cut the potatoes in half, or if they are small, in quarters.
- 6. Toss them into a pot of lightly salted boiling water and cook for about 8 minutes.
- 7. Remove from the water and allow to dry out on a few paper towels, for 5 minutes.
- 8. Add to a bowl, and toss with a small bit of oil, and then salt and pepper, to taste.
- 9. Add the oil and butter to a large skillet, or pot over medium heat.
- 10. When the butter melts, add the taters, cut side down.
- 11. Cook, covered, for about 8 - 10 minutes, or until the taters are brown and crispy.
- 12. Flip and cook, covered, an additional 3 - 4 minutes.
- 13. PLATE/PRESENT
- 14. Serve any old way you please... Even by themselves. I served them at a casual outdoor event with Asian fried beef, and ciabatta bread.
- 15. Keep the faith, and keep cooking.
LOADED SMASHED TATERS
You can make an entire pot of smashed taters in the time it takes to bake a single potato! I like to use baby Yukon Golds because the skins are very thin and easy to mash. Make this to your taste-sometimes I add in garlic and chives or sub shallots for the green onions. You can do these in an oven, on a BBQ grill, in a camp fire or even in a skillet without the foil. This is a easy way to pre prep for a camping trip, hunting trip, picnic where you will cook them later. Just cut everything and mix together in a zip lock bag to be put in foil and cooked later

- 2. Mince garlic cloves
- 3. Put all ingredients except bacon drippings in zip lock bag and mix well.
