FLAT APPLE PIE WITH PERFECT PIE CRUST



Flat Apple Pie with Perfect Pie Crust image

5 Granny Smith apples, peeled and sliced
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar
2 tablespoons all-purpose flour
1/4 teaspoon salt
Juice of 1/2 lemon
1 recipe Perfect Pie Crust, recipe follows
6 tablespoons butter
3 cups all-purpose flour, plus more for dusting
1 teaspoon salt
1 1/2 sticks cold butter
3/4 cup vegetable shortening
1 egg
5 tablespoons cold water
1 tablespoon distilled white vinegar

Steps:

  • Preheat the oven to 375 degrees F.
  • In large bowl, stir together the apples, brown sugar, granulated sugar, flour, salt and lemon juice. Set aside and see how long you can keep from sneaking a slice of apple.
  • With a rolling pin, begin rolling out the Perfect Pie Crusts into large circles. Roll the dough from the center outward. Be gentle and patient, it'll take a little time to get the dough completely rolled out.
  • If you think the bottom is really sticking to the surface below, use a nice, sharp spatula to loosen the dough and sprinkle some extra flour on top. Then flip it over to finish rolling. Remember to roll from the center in single, outward strokes, no back-and-forth rolling.
  • Again with a spatula, loosen and lift the dough and carefully place the circles on large baking sheets.
  • Place half the apple mixture on one crust and the other half on the other crust. Fold over the edges of each crust so that it covers 2 to 3 inches of the apple mixture. No need to be artistic - the more rustic the better. Dot the tops of the pies with chunks of the butter.
  • Bake until the filling is golden and bubbly, 30 to 40 minutes. If the crust appears to brown too quickly, cover the edges with aluminum foil for the remaining baking time.
  • Allow to cool slightly, then slice into wedges with a pizza cutter. Eat 'em on the go!
  • Combine the flour and salt in a large bowl. Add in the butter and shortening. Using a pastry cutter, gradually work the butter and shortening into the flour until the mixture resembles tiny pebbles. This step should take 3 or 4 minutes.
  • Lightly beat the egg with a fork, and then add it to the mixture. Next, add in the cold water and vinegar. Stir the mixture together until it's just combined, and then remove half the dough from the bowl.

This is a great recipe given to me by my Mother in law. This is my husband's favorite pie and I love making it for him. Even if you don't like raisins too much, they are not overwhelming.

2 9 inch pie crusts, unbaked
6 granny smith apples, peeled,cored and sliced into 1/8 inch thin (or any tart apples)
1 cup raisins
1 tablespoon lemon juice
3/4-1 cup white sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 tablespoons flour or 2 tablespoons cornstarch
1 teaspoon fresh lemon rind
1 cup confectioners' sugar
1 -2 tablespoon milk

Steps:

  • Preheat oven to 450 degrees.
  • Place one crust in a 9 inch pie pan.
  • Mix apple slices and raisins and place in pie shell.
  • Sprinkle with lemon juice.
  • Mix remaining ingredients (not Icing) and sprinkle on top of apples and raisins.
  • Dot with butter if desired and place 2nd crust on top.
  • Crimp or flute edges as desired.
  • Bake at 450 degrees for 10 minutes, then reduce heat to 375 degrees and Bake 40 more minutes.
  • When pie is cool, mix the icing and drizzle over the crust.

This is a great pie for a picinic or potluck. You can pick it up and eat it with your hands. No gooey, drippy mess, but super moist!! The picture that I posted is one of the pictures of the pie my "little" brother made. He is such a great cook as well.

3 3/4 c flour
3/4 tsp salt
1 1/2 c shortening
1 egg yolk plus enough milk to make 1 cup of liquid
2-3 handfuls of cornflakes
10 granny smith apples sliced and cored
butter
1 c sugar
1 tsp cinnamon
1 egg
1 tsp sugar
2/3 c powered sugar and a few drops of vanilla and milk

Steps:

  • 1. Mix ingredients for crust (which are the first 4 ingredients on the list).
  • 2. Roll out half of the dough to fit a cookie sheet.
  • 3. Sprinkle with cornflakes.
  • 4. Place sliced apples on top of cornflakes.
  • 5. Mix sugar and cinnamon and sprinkle on top of apples and dot with butter.
  • 6. Add top crust to cover.
  • 7. Beat egg white and sugar and brush on top of pie. Cut a few slits in the top of the pie crust.
  • 8. Bake at 425 degrees F for 25-30 mintues.
  • 9. Mix powered sugar, vanilla and enough milk to make a thin frosting. Drizzle over hot pie.

2 1/2 cups flour
1/2 teaspoon salt
1 cup shortening
1 egg, separated
milk
Special K cereal or corn flakes cereal
8 -10 apples, peeled and thinly sliced
1 cup sugar
cinnamon
butter

Steps:

  • Mix together the flour and salt; cut in the shortening.
  • Separate the egg yolk from the egg white. Set the egg white aside to glaze the top crust.
  • Put the egg yolk in a measuring cup; add milk to make 2/3 cup; beat slightly.
  • Add the milk/egg mixture to the flour mixture all at once.
  • Mix together until it holds together.
  • Gather into a ball and separate into 2 equal portions.
  • Roll out the first half to fit into a jelly roll pan or a large cookie sheet.
  • Sprinkle 2 or 3 handfuls of crushed cereal on top of the crust. I just use my hands to crush the cereal.
  • Mix the apples with the sugar and spread on top of the cereal.
  • Sprinkle the apples with cinnamon and dot with butter.
  • Roll out the second crust. Gently place over the top of the apples.
  • Whisk the reserved egg white until frothy; brush the top crust with it.
  • Cut small uniform slits on the top crust.
  • Bake at 375 degrees Fahrenheit for 45 minutes.
  • Glaze lightly with a powdered sugar glaze while still warm if desired.

PEELED & SLICED
2 Tbsp flour (+ 3 tbsp)
1/2 lemon (juice from)
1/2 c sugar (+ 3/4 c)
1/2 c brown sugar, packed

1 perfect pie crust recipe
6 Tbsp butter
1 large egg
1 c sour cream
1/4 tsp apple pie spice
PERFECT PIE CRUST
3 c flour
1 tsp salt
1 1/2 c vegetable shortening
1 large egg
5 Tbsp cold water
1 Tbsp distilled white vinegar

Steps:

  • 1. Preheat oven to 375-degrees. In a large bowl, stir together the apples, flour, lemon juice, granulated sugar, brown sugar and salt. Set aside.
  • 2. PIE CRUST DIRECTIONS 1. Combine the flour and salt in a large bowl. 2. Add in the shortening. Using a pastry cutter, gradually work the shortening into the flour until the mixture resembles tiny pebbles. This should take 3-4 minutes. 3. Lightly beat the egg with a fork, then add it to the mixture. Next, add the cold water and vinegar. 4. Stir the mixture together until it's just combined, then remove half the dough from the bowl. 5. Place in a large plastic bag (do not seal) and slightly flatten with a rolling pin. After flattening, seal the bag tightly. Freeze. (Repeat to freeze second half.) 6. When you're ready to use a crust, remove one from the freezer and allow it to sit on the counter to thaw slightly, about 20 minutes. Remove from the bag and place on a lightly floured surface. 7. With a rolling pin, begin rolling the dough from the center, outward. Be gentle and patient; it'll take a little time to get the dough completely rolled out. 8. If you think the bottom is really sticking to the surface below, use a nice, sharp spatula to loosen it and sprinkle some extra flour on top. 9. Flip it over to finish rolling. Handmade Pastry
3 tablespoons all-purpose flour, plus more for dusting
3 pounds apples such as Rome, Cortland, or Granny Smith, or a combination, peeled, cored, and cut into 3/4-inch wedges (about 8 cups)
1/2 cup sugar, plus more for sprinkling
1/2 to 3/4 teaspoon ground spices (combination of cinnamon, ginger, allspice, nutmeg, and clove)
1 tablespoon freshly squeezed lemon juice (or orange juice)
1 teaspoon grated lemon zest (or orange zest), optional
Pinch of salt
2 tablespoons unsalted butter, cut into pieces
2 tablespoons heavy cream

Steps:

  • Preheat oven to 400 degrees. On a lightly floured surface, roll one disc of dough into a 12-inch round that's 1/8-inch thick. Fit into a 9-inch pie plate. Set aside in the refrigerator.
  • In a large bowl, combine apples, sugar, flour, spices, lemon juice, zest, and salt; toss to combine. Pour into lined pie plate. Dot with butter. Roll second disc of dough into a 12-inch round that's 1/8 inch thick. Lay dough over fruit. Cut vents into top crust. Trim edges to 1 inch over pie pan, and seal, crimping edges with thumb and forefinger. Chill for 30 minutes.

1/2 teaspoon lemon extract (or 2 tsp of zest)
1 cup butter
8 tablespoons water
4 pealed and thinly sliced granny smith apples

1 teaspoon cinnamon
3 tablespoons tbsps cornstarch
1/4 cup of melted butter
4 tablespoons tbsps honey
2 teaspoons sugar
1/2 teaspoon cinnamon
1 1/2 tablespoons warm water

Steps:

  • Crust:.
  • Mix flour and lemon together to combine.
  • Cut butter into mixture to make a coarse meal then add the water.
  • Mix until the mixture forms a ball if more water is needed, add by 2 tbsp increments.
  • Wrap in plastic wrap and put in the fridge for 45 minute.
  • Filling:.
  • Combine apples,sugar,cinnamon,cornstarch,and melted butter until it fully coats the apples.
  • Preheat the oven to 400°F.
  • Take dough out of fridge and roll it out into the shape of a rectangle and carefully place on a lightly greased cookie sheet.
  • Pour filling on top of the dough but leave room around the edges so you can fold them over later.
  • Topping:.
  • Mix honey, cinnamon, sugar, and water then drizzle over the apples.
  • Fold edges of crust over the filling so it looks like a picture frame then brush melted butter over crust.
  • Put into a 400°F oven for 45 minutes.
  • Serve with whipped cream and enjoy!
