1 cup paneer / cottage cheese (cubes)
1 tsp ginger garlic paste
¾ tsp kashmiri red chilli powder
¼ tsp salt
2 tsp oil
2 tbsp oil
2 clove garlic (finely chopped)
½ onion (finely chopped)
4 tbsp spring onion (chopped)
½ carrot (chopped)
4 beans (chopped)
¼ red capsicum (chopped)
¼ green capsicum (chopped)
3 tbsp cabbage (shredded)
1 tsp chilli sauce
1 tbsp vinegar
1 tbsp soy sauce
½ tsp pepper powder
½ tsp salt
3 cup cooked rice

Steps:

  • firstly, in a bowl take 1 cup paneer. make sure to make small cubes.
  • add 1 tsp ginger garlic paste, ¾ tsp chilli powder and ¼ tsp salt.
  • mix well making sure all the spices are well combined. marinate for 20 minutes.
  • now heat 2 tsp oil and add marinated paneer.
  • roast on low to medium flame till it turns golden brown. do not overcook as it turns rubbery. keep aside.
  • in a large wok, heat 2 tbsp oil and saute 2 clove garlic, ½ onion and 2 tbsp spring onion on high flame.
  • now add ½ carrot, 4 beans, ¼ red capsicum, ¼ green capsicum.
  • stir fry on high flame till the veggies are cooked yet crunchy.
  • further add 3 tbsp cabbage and stir fry for few seconds.
  • also add 1 tsp chilli sauce, 1 tbsp vinegar, 1 tbsp soy sauce, ½ tsp pepper powder and ½ tsp salt.
  • stir fry until sauces are well combined.
  • add in 3 cup cooked rice. you can use freshly cooked rice or leftover rice here.
  • stir fry on high flame combining everything well.
  • add in roasted paneer, 2 tbsp spring onion and mix well.
  • finally, enjoy paneer fried rice with gobi manchurian gravy.

This recipe came from a book about the healing properties of food. The main healing ingredient is turmeric. I could not tell you why though. My recipe card smells of turmeric from when I make this recipe. I serve this with my Recipe #254228. My husband says this meal cures a sore throat. This is one of my all time favorite meals.

2 cups basmati rice, rinsed and soaked for an hour
3 tablespoons olive oil
3 tablespoons pine nuts
2 large onions, diced
1 cup raisins
1/2 teaspoon turmeric
1 teaspoon salt

Steps:

  • Heat the oil in a 2 quart sauce pan.
  • Toast pine nuts until they are fragrant, about 3 minutes.
  • Add onions and cook until soft.
  • Add raisins, rice, turmeric and salt.
  • Add water until rice is covered. boil and cook until the water has mostly absorbed. Keep this up until the rice is cooked, about 25 minutes (almost like cooking a risotto).

It's a good dish to prepare if you have guests over and want to seduce them with the aroma of the food before it even touches their plate. The core of the recipe here is really the layering of fragrances by the various spices, so you may choose to omit the paneer, or substitute with other pretty and colorful veggies.

250 g panir (cut in small cubes)
2 1/2 cups basmati rice
1 1/2 tablespoons ghee
3 cloves
3 cinnamon sticks
3 bay leaves
5 -6 cardamom pods
2 teaspoons salt
1 1/2 teaspoons cumin seeds
2 tablespoons rose water
1 pinch saffron
2 1/2 cups water

Steps:

  • Heat ghee and add cloves, cinammon, bayleaves and cardamom.
  • After a minute, stir in rice (rinsed and drained), water and salt.
  • Allow to boil, reduce heat and cover.
  • Cook on simmer for 15-20min until the rice is cooked and tender.
  • Add the paneer.
  • Dissolve saffron in rose water.
  • Drizzle this over the rice and toss to mix evenly.
  • Serve with curry.
