Four-Star Chili image

This spicy chili features traditional ingredients like ground beef, green peppers and tomatoes, but carrots and white beans, make it deliciously different. Serve it over rice for a hearty meal. - Frank Fenti, New York

Number Of Ingredients 16

1-1/2 pounds ground beef
2 large green peppers, diced
1 medium onion, diced
4 garlic cloves, minced
1 can (28 ounces) crushed tomatoes
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (14-1/2 ounces) chicken broth
1 medium carrot, chopped
1 celery rib, chopped
2 jalapeno peppers, finely chopped
2-1/2 teaspoons pepper blend
1 teaspoon paprika
1/2 teaspoon crushed red pepper flakes
Hot cooked rice
Sour cream
Shredded Colby cheese

Steps:

  • In a stockpot, cook the beef, green peppers and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Add the tomatoes, beans, broth, carrot, celery, jalapenos and seasonings; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours or until thick and bubbly. , Serve with rice, sour cream and cheese.

Spice up this winter classic with surprise of salsa and some Italian dressing. Each serving 1 cup. This came from Kraft Food & Family. I have not tried this just posting for safe keeping.

1 lb beef, for stew cut into 1/2-inch-inch pieces
1 lb pork, for stew cut into 1/2-inch-inch pieces
1 large onion, chopped (about 3 cups)
1/2 cup kraft Italian dressing, divided
14 ounces beef broth
16 ounces taco bell original salsa
1 tablespoon chili powder
32 ounces black beans, drained and rinsed (2 - 16oz cans)
4 cups hot cooked MINUTE White Rice

Steps:

  • Brown meat and onion in dressing in Dutch oven on medium-high heat 5 minutes, stirring occasionally.
  • Add broth, salsa and chili powder; stir. Bring to boil. Reduce heat to medium-low; cover. Simmer 1 hour or until meat is tender.
  • Stir in beans; cook, uncovered, 30 minutes. Serve over rice.
  • Substitute: 1 pound each ground beef and ground pork for 1/2"-inch pieces of meat. Top with Knudsen or Breakstone's sour cream.
