AUTHENTIC JAMBALAYA RECIPE (EASY & HEALTHY JAMBALAYA)

Authentic Jambalaya Recipe (Easy & Healthy Jambalaya) image

An authentic jambalaya recipe is savory, spicy, meaty, and oh so flavorful! And it's very easy to make as well! Let me share with you my favorite healthy jambalaya with lots of meat, crushed tomatoes, and jambalaya seasoning.

Provided by Savory With Soul

Categories     Main Course

Time 1h30m

Number Of Ingredients 18

3 Tbsp olive oil ((or oil of choice))
1 medium onion, (chopped)
2 large stalks celery, (chopped)
1 medium bell pepper ((any color, but I used red))
4 Tbsp garlic, (minced)
1 pound chicken breast, (cut into 1/2-inch pieces)
9-10 ounces sausage, ((link type) cut into bite-size medallions (andouille or any sausage of choice))
1 tsp cayenne pepper ((more or less to taste))
2 tsp paprika ((more or less to taste))
salt (to taste)
black pepper (to taste)
1 tsp thyme (, dry )
1 Tbsp oregano (, dry)
1 Tbsp basil (, dry)
1 can crushed tomatoes, (undrained (28 ounces))
3 cups chicken broth ((or stock))
1 cup rice, (uncooked (I used Lundberg Jubilee, a wild mixed rice))
½ pound shrimp (medium size, tail on or off, raw or cooked)

Steps:

  • Heat the oil on medium in a large Dutch oven on the stove top.
  • Add onion, celery, and bell pepper and cook about 5 minutes.
  • Add garlic, basil, oregano, and thyme and stir. Cook for about 5 more minutes.
  • Add the chicken and sausage and let brown for 5-10 minutes, stirring often.
  • Add cayenne pepper and paprika to the meat mixture and blend lightly.
  • Pour in the crushed tomatoes, chicken broth, and rice and mix. Bring to a light boil, then lower the heat to 1-2 and cover.
  • Cook covered on low for 45 minutes, stirring a couple times to make sure the rice isn't sticking to the bottom.
  • During the last 5-10 minutes of cooking, add the shrimp to the top of the mixture and cover. Check again after about 5 minutes and flip shrimp over, making sure not to cover it deeply so you can keep an eye on its doneness. Cover and cook 5 more minutes or until shrimp is opaque pink and white.
  • Serve right away with a side salad and crusty bread if desired.

JAMBALAYA

Jambalaya image

A fragrant chorizo, chicken and seafood jambalaya inspired by Creole cooking. An easy one-pot flavoured with thyme, oregano, smoked paprika and cayenne

Provided by John Torode

Categories     Dinner, Main course, Supper

Time 1h10m

Number Of Ingredients 22

2 tbsp olive oil
6 skinless boneless chicken thighs fillets, chopped
200g cooking chorizo , sliced
2 onions , finely sliced
4 garlic cloves , crushed
2 red peppers , sliced
2 celery sticks , chopped
1 tsp fresh thyme leaves
1 tsp dried oregano
½ tsp garlic salt
1 tsp smoked paprika
1 tsp cayenne pepper
½ tsp mustard powder
pinch of white pepper
300g long-grain rice
400g can cherry tomatoes
300ml chicken stock
12 large raw tiger prawns (whole in their shells)
12 mussels , cleaned and de-bearded
24 clams
½ small pack parsley , chopped
4 spring onions , sliced on a diagonal

Steps:

  • Heat oven to 200C/180C fan/ gas 6. Heat the oil in a heavy-based flameproof casserole dish on a medium-high heat. Season the chicken thighs, add to the dish and cook for 4 mins until they start to brown, stirring occasionally so they don't stick. Add the chorizo and cook for a further 4 mins until it releases its oils and has started to crisp. Remove the meat with a slotted spoon and set aside on a plate.
  • Add the onions to the chorizo oils, lower the heat and soften for 8 mins. Stir through the garlic, peppers, celery, thyme and oregano, and cook for 2 mins more.
  • Return the meat to the dish, add the garlic salt, paprika, cayenne, mustard powder and white pepper, and cook for 2 mins until fragrant. Stir in the rice, then the tomatoes. Add the stock and give it all a really good stir. Bring to the boil, then cover with a well-fitting lid and put in the oven for 20 mins.
  • Take from the oven and fluff up the rice with a big fork. Fold through the prawns, then put the mussels and clams on top. Put the lid on, return to the oven for 10 mins, then take the dish out and give everything a good stir. Sprinkle with the parsley and spring onions to serve.

SIMPLIFIED VENISON SAUSAGE & SHRIMP JAMBALAYA

Simplified Venison Sausage & Shrimp Jambalaya image

This dish was born of necessity and scarcity (of time, not ingredients). I operate a fishing lodge in southeast Alaska. After long days of hiking in the rain and chasing steelhead, everyone's cold, wet, and very hungry. The perfect antidote? Jambalaya. It's great comfort food and very filling. This...

Provided by Rick Matney

Categories     Main

Yield 4-5

Number Of Ingredients 11

1 1/2 pound andouille sausage (I use venison, but commercial will work)
1 1/2 pound shrimp (wild harvested is best, but store-bought works)
1 coarsely chopped white or yellow onion, roughly 3/4-inch pieces
7 cups stock (1/2 ungulate and 1/2 bird, preferably from wild game)
6 cloves garlic, pressed
2/3 stick of salted butter
2 cups white long grain rice
1 tbsp. Tony Chachere's Creole Seasoning
1 tbsp. Old Bay seasoning
2 15 ounce cans fire roasted tomatoes
1 bunch green onions, diced (separate the greens from the whites)

Steps:

  • In large (5 quart) Dutch oven or deep frying pan, melt the butter and add the crushed garlic. As soon as the garlic begins to get fragrant, add the chopped yellow onion and the white onion bottoms (from the green onion bunch) and sauté on medium-high heat until the onion is translucent. Add the rice and stir until evenly coated with butter. Add 5 cups of stock to rice (reserve the remaining 2 cups to finish cooking the rice; added as needed). Simmer on medium-low heat until rice softens.
  • If the andouille sausage is fresh, you will need to grill it. Let it cool before slicing into bite-sized rounds. If the andouille is already smoked, slice the links into bite-sized rounds.
  • Once rice is al dente, add the entire two cans of fire roasted tomatoes and their juice. Add the Tony Chachere's and Old Bay seasoning. Mix well, and continue to simmer until most of the standing juice is incorporated into the rice. Continue to stir. Bring heat back up to medium and add sliced andouille. Continue to cook. If the rice needs more stock to finish cooking, add 1/2 cup of stock at a time until all liquid is absorbed. Continue to add stock until the rice is fully cooked.
  • Once rice is soft and the desired thickness of dish is achieved, add raw shrimp. Stir in shrimp and cook for an additional 2 to 3 minutes. The shrimp will continue to cook even after it's removed from heat.
  • Remove from heat and garnish with green onion tops. Serve with toasted french baguette.

FOUR MEAT JAMBALAYA

Four Meat Jambalaya image

We just love jambalaya....This recipe is one that I threw together after finding one here at the zaar and adding my own touches to it.... I hope you enjoy as much as we did....

Provided by gertc96

Categories     One Dish Meal

Time 45m

Yield 6-8 serving(s)

Number Of Ingredients 17

4 -6 slices bacon, chopped
1 -2 boneless skinless chicken breast, chopped
3 small onions, chopped
1 green bell pepper, chopped
1/4 cup celery, diced
4 garlic cloves, minced
1 tablespoon olive oil
1 (16 ounce) package smoked sausage, chopped
1 lb shrimp, peeled and de-veined and cooked
1 (14 1/2 ounce) can diced tomatoes
1 1/2 cups long grain rice, uncooked
3 cups chicken broth
1 teaspoon salt
1/2 teaspoon ground pepper
1/4-1/2 teaspoon ground thyme (to taste)
1/2-3/4 teaspoon Tabasco sauce (to taste)
1 bay leaf

Steps:

  • In a dutch oven, fry the bacon and chicken until they are done.
  • Remove the bacon and chicken into a paper towel lined bowl. Be sure and leave all the grease in the pan.
  • Cook the onions, garlic, bell pepper and celery in the grease left in the dutch oven. About 5-7 minutes.
  • Add the shrimp and sausage to the onion mixture and cook about 4 minutes or until heated through. Be careful not to cook this to long or the shrimp will be tough.
  • Remove this mixture from the pan.
  • Add about a tablespoons of olive oil to the pan.
  • Put in your rice and cook about ten minutes stirring frequently to prevent the rice from scorching.
  • Add the chicken broth, tomatoes, salt, pepper, thyme, tabasco and bay leaf. Stir.
  • Bring this mixture to a boil and then turn heat down to simmer, cover and cook about 15-20 minutes.
  • Remove bay leaf from rice mixture.
  • Stir in your bacon and chicken mixture and your shrimp and onion mixture.
  • Hope you enjoy this -- Thank you to Sue L from the zaar for the great ideas and recipe to take from.
