1 cup canned pineapple chunks (drained (I used the tidbits))
1 cup small mini marshmallows
1 cup sour cream
1 cup mandarin oranges
1 cup maraschino cherries (I cut mine in half)

Steps:

  • In a large bowl mix together place one cup of marshmallows, 1 cup of pineapple, and 1 cup of sour cream until combine.
  • Fold in 1 up of mandarin oranges.
  • Once combined slice cherries in half and carefully fold into the mixture.
  • If you mix too much the fruit salad will turn pink.
  • Place in the fridge for at least one hour before serving.Serve cold and enjoy!

1 package (10 ounces) frozen mixed vegetables
1 can (15 ounces) kidney beans, rinsed and drained
1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup chopped green pepper
3/4 cup sugar
1/2 cup vinegar
1 tablespoon cornstarch

Steps:

  • Cook the mixed vegetables on the stove or in the microwave until crisp-tender. Drain; place in a large bowl. Add kidney beans, celery, onion and green pepper. In a saucepan over medium heat, bring sugar, vinegar and cornstarch to a boil, stirring constantly, until thickened. Cool slightly. Pour over vegetables and toss. Refrigerate.

A delicious fruit salad made with 1 cup of each ingredient-pineapple, mandarin oranges, sour cream, coconut, and marshmallows.

1 can (8-1/4 oz.) Pineapple Chunks, undrained
1 can (11 oz.) Mandarin Oranges, drained
1 container (8 oz.) Sour Cream (can use light)
1 cup Coconut Flakes (or shredded)
1 cup Miniature Marshmallows

Steps:

  • Drain pineapple chunks, reserving 1 Tbsp. of the juice.
  • Mix pineapple chunks, reserved juice, mandarin oranges, sour cream, coconut flakes and miniature marshmallows; toss lightly. Cover.
  • Refrigerate several hours or until chilled.
