VEGETARIAN ENCHILADAS



Vegetarian enchiladas image

Pack flavour into your meal with these easy veggie enchiladas that are filled with nutritious ingredients. This comforting, cheesy dish is the perfect crowd-pleasing family dinner

1 tsp olive oil
2 onions, chopped
280g carrots, grated
2-3 tsp chilli powder (mild or hot, according to your taste)
2 x 400g cans chopped tomatoes
2 x 400g cans pulses in water, drained (we used mixed beans and lentils)
6 small wholemeal tortillas
200g low-fat natural yogurt
50g extra-mature cheddar cheese (or veg alternative), finely grated

Steps:

  • Heat the oil in a large frying pan. Cook the onions and carrots for 5-8 mins until soft - add a splash of water if they start to stick. Sprinkle in the chilli powder and cook for 1 min more. Pour in the tomatoes and pulses and bring to the boil. Turn down the heat and simmer for 5-10 mins, stirring occasionally, until thickened. Remove from the heat and season well.
  • Heat grill to high. Spread a spoonful of the bean chilli over a large ovenproof dish. Lay each tortilla onto a board, fill with a few tbsp of chilli mixture, fold over the ends and roll up to seal. Place them into the ovenproof dish. Spoon the remaining chilli on top.
  • Mix the yogurt and grated cheese together with some seasoning, and spoon over the enchiladas. Grill for a few mins until the top is golden and bubbling. Serve with a green salad.

2 tablespoons chicken or vegetable broth
2 cans (15 ounces each ) black beans, rinsed and drained, divided
1-1/2 cups picante sauce, divided
12 flour tortillas (6 inches)
2 medium tomatoes, chopped
1/2 cup shredded cheddar cheese
1/2 cup shredded part-skim mozzarella cheese
3 cups shredded lettuce

Steps:

  • In a nonstick skillet, cook and stir onion and green pepper in broth for 2-3 minutes or until tender. Mash one can of black beans. Add to the skillet with 3/4 cup of picante sauce and remaining beans; heat through., Spoon 1/4 cup mixture down the center of each tortilla. Roll up and place, seam side down, in a 13-in. x 9-in. baking dish coated with cooking spray. Combine tomatoes and remaining picante sauce; spoon over enchiladas., Cover and bake at 350° for 15 minutes. Uncover; sprinkle with cheeses. Bake 5 minutes longer. To serve, place 1/2 cup lettuce on each place and top with two enchiladas. Serve with sour cream.

2 cups shredded Mexican cheese blend, divided
½ cup chopped onion
12 small corn tortillas

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Mix refried beans, 1 1/2 cup Mexican cheese blend, and onion in a microwave-safe bowl; heat in microwave until cheese is melted, about 1 minute.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Heat olive oil in a large skillet over medium heat; cook and stir onion and bell pepper in hot oil until tender, about 5 minutes. Reduce heat to medium-low and add refried black beans, corn, and cream cheese; stir well. Season with cumin, salt, and pepper. Simmer until bean mixture is hot, about 5 minutes. Remove from heat.

¼ teaspoon chili powder
¼ teaspoon Slap Ya Mama
½ teaspoon pepper
¼ teaspoon salt
16 oz can refried beans
2 15 ounce cans red enchilada sauce
8 flour tortillas
2 cups cheddar cheese, (shredded and divided)

Steps:

  • Preheat oven to 375° and spray a 13x9 casserole dish with cooking spray.
  • In a large skillet, brown ground beef and add seasonings. Drain grease and return to pan.
  • Add refried beans and stir until meat and beans are combined.
  • Pour 1/4 cup of enchilada sauce on the bottom of the prepared baking dish.
  • Pour 1/2 can of enchilada sauce onto a large tray or plate. One at a time, coat both sides of tortillas in sauce.
  • Place meat and bean mixture into the center of tortilla and top with cheese. Roll up and place seam side down in the casserole dish.
  • Continue dipping tortilla in sauce, filling with meat mixture, and cheese until meat is gone.
  • Pour the remaining enchilada sauce on top of the enchiladas and top with the remaining cheese.
  • Cover with foil and bake for 25-30 minutes. Uncover and bake for an additional 10 minutes until cheese is melted and bubbly.

These vegan enchiladas with black beans and bell peppers are super delicious and satisfying! And they are really easy to make, so they make a great weeknight dinner for the whole family!

1 red onion
2 cloves of garlic, minced
3 bell peppers ((I used different red, yellow, and green ones))
2 cans of black beans
1 teaspoon cumin
1/2 teaspoon smoked paprika powder
juice of half a lime
salt, to taste
black pepper, to taste
6 large corn tortillas or several smaller ones
2 tablespoons olive oil or canola oil
2 tablespoons all-purpose flour or gluten-free flour blend
1 28 oz can crushed tomatoes
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon dried oregano
salt, to taste
black pepper, to taste
3/4 cup vegan cheese
green onions
fresh cilantro or parsley
red pepper flakes

Steps:

  • Finely chop the onion and cut the bell peppers into small pieces.
  • Heat some oil in a large pan and sauté the onion and the garlic for about 2-3 minutes. Then add the bell pepper and cook for another 4 minutes.
  • Drain and rinse the canned black beans or use home-cooked beans. Place them in a large bowl and mash them with a potato masher. Leave some beans intact for texture.
  • Add the onion, garlic, and bell pepper mixture to the mashed beans. Season with cumin, smoked paprika powder, lime juice, salt, and pepper.
  • Fill the tortillas with the bean bell pepper mixture and roll them up.
  • Lightly spray a baking dish with non-stick spray. Place the enchiladas seam side down in the baking dish. Preheat your oven to 350 °F.
  • Now make the vegan enchilada sauce. Heat two tablespoons of oil in a large pan. Then add two tablespoons of flour and cook for about 2 minutes. Stir constantly and be careful not to burn it. Then add the crushed tomatoes and the spices. Cook for 5 minutes.
  • Pour the enchilada sauce over the enchiladas and spread evenly.
  • Sprinkle with vegan cheese.
  • Bake the enchiladas at 350 °F for 25 minutes. Sprinkle with chopped cilantro and green onions. If you don't like fresh cilantro, you can replace it with parsley. Serve immediately.

8 large flour tortillas
1 (15 ounce) can red kidney beans, drained
1 (15 ounce) can garbanzo beans, drained
1 (15 ounce) can black beans, drained
1 (15 ounce) can great northern beans, drained
1 (10 3/4 ounce) can cream of chicken soup
diced green chilis
1/3 cup chopped onion (optional)
1 (12 ounce) can enchilada sauce (I like the green lately)
1 1/2 cups shredded monterey jack cheese or 1 1/2 cups cheddar cheese

Steps:

  • FILLING: Combine beans, soup, onions and chiles in a large bowl. Spoon about 1/4 cup filling onto one end of each tortilla. Starting at the end with the filling, roll up each tortilla. Arrange tortillas seam side down in a 9- x 13-inch baking dish. Next spoon on your enchilada sauce so that it covers all of the tortillas. Cover with foil. Bake in a 350°F oven for 25 minutes. Then take out and sprinkle with cheese. Put it back in the oven until cheese is melted, about 10 minutes.
  • Top with whatever you would like. My favorites are: sour cream, tomatoes, spinach, avocado, olives and green peppers. : ).

3 cups diced peeled butternut squash
2 medium poblano peppers, seeded and chopped
