HOMEMADE EGGNOG
This creamy variation of homemade eggnog will have even your self-professed 'non-noggers' asking for seconds. The eggs in this recipe are cooked. Alcohol is not included but can be added to your preference!

Steps:
- Cream egg yolks and sugar in a large bowl with an electric mixer until light and fluffy. Set aside.
- Combine milk, whipping cream, and nutmeg in a large saucepan. Cook over medium heat until mixture just begins to simmer with 1 to 2 bubbles every 2 to 3 seconds, about 3 minutes. Remove from the heat.
- Add a very small amount of the hot milk mixture into the egg yolk mixture while constantly whisking the eggs. Continue adding small amounts of the milk mixture, whisking until all has been added; transfer eggnog back into the saucepan. Continue to cook over medium heat, whisking constantly, until liquid reaches 160 degrees F (70 degrees C). Pour eggnog into a large pitcher, cover, and refrigerate 6 hours to overnight.
- Blend cooled eggnog with an immersion blender until no lumps remain, about 1 minute. Ladle into 7 cups and top each with a dollop of whipped cream and a sprinkle of cinnamon.

- Combine all ingredients in a blender or stand mixer (a blender is less messy), and mix thoroughly. Chill completely before serving.
- **Extra Creamy Version:
- The one thing I don't love about raw eggnog is that it's not quite as creamy as the cooked versions. So, I came up with this quick technique to increase the creaminess.
- Combine milk, 1.5 cups of cream, and all other ingredients (minus the egg whites) in a blend and combine thoroughly.
- With a stand mixer or hand mixer, beat the remaining 1/2 cup of cream and 2 tablespoons of egg whites until stiff peaks have formed.
- Fold the whipped cream mixture into the egg mixture. Chill and enjoy!
- And don't forget to sprinkle your finished eggnog with an extra pinch of nutmeg to make it pretty after you pour it into the glass. Serve with a straw, if desired.

- Heat the Eggnog in the microwave or a small saucepan. Pour into cup and froth with milk frother until foamy and thick.
- Prepare espresso or very strong coffee, add the espresso to the cup slowly.
- Add whipped cream and sprinkle with cinnamon or nutmeg if desired.

- For the dough: In a bowl, sift together the flour, baking soda, baking powder, nutmeg and cream of tartar. Set aside. *MAKE SURE YOU GENTLY SPOON YOUR FLOUR INTO YOUR MEASURING CUP, VS SCOOPING THE FLOUR. SCOOPING CAN RESULT IN TOO MUCH FLOUR.
- In a separate bowl, cream the butter and sugars until fluffy. Add the eggs, eggnog and vanilla or rum extract. Mix well.
- Stir in the dry ingredients. Stir until just combined.
- Cover bowl (or remove dough from bowl and wrap in plastic wrap) and chill for 1+ hours.
- When ready to bake, Preheat the oven to 350 degrees. Form the dough into 1 inch balls. Mix nutmeg and sugar in a small bowl and roll each ball of dough through the sugar mixture to coat one side.
- Place on a greased baking sheet or a cookie sheet covered with wax paper or silicone baking mat.
- Bake 8-9 minutes. Do not overbake. Allow to cool on baking sheet for at least ten minutes before transferring to a wire cooling rack.

It is amazing to me how when there is a familiar aroma in the air it can quickly take you back to a place and time you hadn't remembered till then. Our sense of smell is so powerful and can evoke wonderful memories of times gone by. That is just what Eggnog does for me. It takes me back to my Grandma's house and to the memories of the sweet holiday seasons of when I was a young girl. Not to mention, the flavors of Eggnog are even more wonderful than the smell. - 1. The history of eggnog starts in England. "Nog" is an old English word that was used to describe a kind of strong beer back in the seventeenth century. It was often used to toast one's health. It was also called an "egg flip". It was a drink more commonly enjoyed by the upper class - mostly because there was no refrigeration and all the farms belonged to the big estates. Those who could get milk and eggs to make eggnog mixed it with brandy or Madeira or even sherry. It became most popular in America, where farms and dairy products were plentiful, as was rum (which was far more affordable than the heavily taxed brandy). An English creation, eggnog descended from a hot British drink called a "posset", which consists of eggs, milk, and ale or wine. The recipe for eggnog (eggs beaten with sugar, milk or cream, and some kind of liquor) has traveled well, adapting to local tastes wherever it has landed. In the American South, bourbon replaced ale (though nog, the British slang for strong ale, stuck). - 2. George Washington reportedly loved eggnog, so much so that he even concocted his own, rather boozy brew for those extra cold nights at Mt. Vernon. His version of the drink contained not only rum, but ample slugs of sherry, brandy, and whiskey.
- 3. In the 1820's Pierce Egan, a period author, wrote a book called "Life of London: or Days and Nights of Jerry Hawthorne and His Elegant Friend Corinthina Tom". The riot eventually involved more than one-third of the cadets by the time it ceased on Christmas morning. HOMEMADE EGGNOG RECIPE
Rich and creamy, a non-alcoholic eggnog the whole family can enjoy. An easy eggnog recipe that's sure to be a holiday hit with everyone! Infused with cinnamon, nutmeg and vanilla bean paste. Perfect for the holidays, everyone will love this traditional Christmas drink.

- Place the milk, cream, cinnamon, nutmeg and vanilla bean paste into a saucepan. Heat to a low simmer. Remove from heat.
- In a bowl, beat the egg yolks and sugar until it's thick and pale in color. Remove the cinnamon sticks from the infused hot milk.
- While continually whisking the eggs, use a ladle to slowly pour small amounts of hot milk into the egg mixture. Slowly add and whisk until all the milk is combined with the eggs. Don't pour too fast so the eggs don't scramble!
- Place your eggnog back into a saucepan a heat for a few minutes, until temperature reaches 165°F/75°C. Place eggnog into the fridge until it's cool.
- Garnish with whipped cream and some grated nutmeg and a cinnamon stick.
