Steps:
- Mix cream cheese and cookie crumbs until blended. Shape into 12 oval shapes to resemble footballs, using a level tablespoon for each. Place on waxed paper-covered baking sheet. Freeze 15 minutes.
- Microwave semi-sweet chocolate in microwaveable bowl on HIGH for 30 seconds; stir. Microwave 30 seconds more; stir. Continue heating and stirring in 10-second increments until completely melted.
- Dip each ball in melted chocolate using a fork, letting any excess drip back into the bowl; return to baking sheet. Refrigerate 15 minutes or until chocolate is firm.
- Melt white chocolate as directed on package; pour into resealable plastic bag to make decorating easier. Cut a small corner off the bag, then use to pipe chocolate onto footballs to resemble the laces. Refrigerate 15 minutes or until chocolate is firm. Reserve sprinkles for later use.

- In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter and sugar together on high speed until completely smooth and creamy, about 2 minutes. Add the egg, vanilla, and almond extract (if using) and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.
- Add the dry ingredients to the wet ingredients and mix on low until combined. If the dough seems too soft, you can add 1 Tablespoon more flour until it is a better consistency for rolling.
- Divide the dough into 2 equal parts. Roll each portion out onto a piece of parchment paper or a lightly floured silicone baking mat (I prefer the nonstick silicone mat) to about 1/4-inch thickness. The rolled-out dough can be any shape, as long as it is evenly 1/4-inch thick.

- SHAPE into footballs (I used two spoons to shape them into footballs) and place on a parchment paper lined baking sheet. Freeze 10-15 min. Melt chocolate in a microwave safe bowl by microwaving in 30 second intervals, stirring in between each interval (mine took 1 min 30 sec).
- Dip footballs in melted chocolate (I found the best way to do this was to use a small spatula or a butter knife and spread it on the footballs; place in single layer back onto the parchment lined baking sheet.
