Fast and easy and good. I got this recipe from my food processor recipe book about 20 years ago. It's real good and faster than the dough setting on my bread machine (although I also love my bread machine).

1 cup lukewarm water (105-115 degrees)
1 (1/4 ounce) package active dry yeast
1 1/2 tablespoons sugar
3 cups all-purpose flour
1 1/2 teaspoons salt

Steps:

  • Combine water, sugar and yeast in a small bowl and set aside.
  • Using steel blade, place flour and salt in bowl of food processor. Pour in yeast mixture through chute; process till dough forms ball.
  • Break dough apart and reprocess 2 or 3 times.
  • Place dough in BUTTERED bowl; turn dough in bowl to butter all sides.
  • Cover and let rise about 1 hour, till doubled in size.
  • Punch down, shape into loaf and place in greased loaf pan.
  • Let rise till doubled (about 45 minutes).
  • Bake in preheated oven (450°) 25 to 30 minutes or till golden brown.

Best homemade bread -- 2 loaves in about 3 hours! This is a variation of Allrecipes' Fabulous Homemade Bread by J. Drury to allow mixing in a food processor for only 2 loaves.

1 ½ cups warm water (100 to 110 degrees F/40 to 45 degrees C)
4 teaspoons bread flour
1 (.25 ounce) package active dry yeast
1 teaspoon white sugar
3 ⅓ cups bread flour
⅔ cup quick cooking oats
⅔ cup whole wheat flour
1 ½ teaspoons salt
3 ½ tablespoons brown sugar
3 ½ tablespoons vegetable oil

Steps:

  • Pour the warm water into a large bowl, and whisk in 4 teaspoons of bread flour, the yeast, and the white sugar until thoroughly combined and the sugar has dissolved. Allow to stand until the yeast starts to form creamy bubbles, about 5 minutes.
  • Fit a dough blade into a large food processor, and place 3 1/2 cups of bread flour, the oats, whole wheat flour, salt, brown sugar, and vegetable oil into the work bowl. Start the food processor running, and slowly add enough of the water-yeast mixture to allow the dough to form a firm ball and pull away from the sides of the processor, about 1 minute. Process for another 30 seconds to knead.
  • Place the dough into an oiled bowl, and turn to coat the dough with oil. Cover with a damp cloth, and allow the dough to rise until doubled, about 1 hour. Punch down the dough, and divide into 2 equal-sized pieces. Form each piece into a loaf; pinch the seams and ends closed.
  • Grease 2 4x8-inch loaf pans, and place the loaves into the pans with the seam sides down. Allow to rise until the dough is 1 inch above the rim of the pans, about 1 more hour.
  • While dough is rising, preheat oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until the tops are browned, about 35 minutes. Allow bread to cool in pans for 10 minutes, then turn out onto cooling racks to finish cooling.

3/4 cup oatmeal
2 tablespoons molasses
3 tablespoons vegetable oil
1 1/2 teaspoons salt
2 cups whole wheat flour
2 cups white flour, saving 1/2 cup
2 1/2 teaspoons yeast
3 tablespoons water
1 teaspoon sugar
1 1/2 cups boiling water or 1 1/2 cups apple juice

Steps:

  • Sprinkle yeast over a mixture of3 tbsp water and 1 tsp sugar. Let this stand 10 minute.
  • Place in bowl boiling liquid, molasses, oil, salt.
  • Cool slightly and add yeast mixture.
  • In processor add flour (reserving 1/2 cup), oatmeal, & salt.
  • Add liquid through spout and add reserved flour until right consistancy. About 45 seconds.
  • Let rise in greased bowl until double.
  • Punch down.
  • Shape into loaves.
  • let rise.
  • Brush with molasses and sprinkle with oats.
  • Bske 375 until done (hollow sound when tapped).

1/2 stick (1/4 cup) unsalted butter, softened
1/2 cup firmly packed dark brown sugar
1 3/4 cups old-fashioned rolled oats
2 1/2 cups hot water
two 1/4-ounce packages (5 teaspoons) active dry yeast
5 to 6 cups unbleached all-purpose flour
1/2 teaspoon salt
1 egg, beaten lightly, for brushing dough

Steps:

  • In a large bowl combine butter, sugar, and 1 1/2 cups oats. Stir in hot water and let mixture stand until lukewarm. Sprinkle yeast over mixture and let stand until foamy, about 5 minutes. Stir in 5 cups flour and salt, stirring until mixture forms a dough, and turn dough out onto a floured surface. Knead dough 10 minutes, adding as much of remaining cup of flour as necessary to form a smooth and elastic dough, and let rest, covered with an inverted bowl, 15 minutes.
  • Lightly oil 2 loaf pans, 9 by 5 by 3 inches. Form dough into 2 loaves and transfer to pans. Brush surface of dough with egg and sprinkle with remaining 1/4 cup oats. Let dough rise in a warm place until doubled in bulk, about 1 hour.
  • Preheat oven to 375°F.
  • Bake bread in middle of oven 45 to 50 minutes, or until browned and bottoms sound hollow when tapped. Turn bread out onto racks to cool completely.

2 very ripe medium bananas ½ cup butter or margarine, chilled 1½ cups all purpose flour ¾ cup sugar 2 eggs ¼ cup milk 2 teaspoons lemon juice or vinegar 1 teaspoon baking soda ½ teaspoon salt nuts or raisins or Craisins or dried blueberries if desired. ½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees. Butter or spray-butter loaf pan or several small pans. 2 very ripe medium bananas, peeled, cut in approx 1" pieces ½ cup butter or margarine, chilled, cut in 6 pieces Add these to food processor and process about 20 seconds until blended. Add the following ingredients and process 10 seconds. 1½ cups all purpose flour ¾ cup sugar 2 eggs ¼ cup milk 2 teaspoons lemon juice or vinegar 1 teaspoon baking soda ½ teaspoon salt Scrape down sides of bowl with spatula. Add nuts or raisins or Crazins or dried blueberries if desired. ½ cup chopped walnuts or other add-ins Do not over-process as this will make the bread coarse. Pour mixture into loaf pan. Bake until bread springs back when touched or when inserted toothpick comes out clean. Bake loaf pan size about 55-60 minutes. Bake less time for smaller pans. Cool on rack before removing bread from pan.

  • Autolyse:Weigh out your starter and water in a glass or ceramic bowl. Mix them together so that the starter is dissolved.Then add your flour, salt and chopped rolled oats and mix altogether with the end of a wooden spoon.
