Homemade Cheese Spread image

Easy Homemade Cheese Spread Recipe - Use up your leftover cheese in this amazing party appetizer.

1/2 pound leftover cheese, (any variety, at room temperature)
1/8 cup dry white wine
2 tablespoons unsalted butter, (softened)
1 tablespoon fresh parsley, (basil, thyme, or rosemary)
1/2 teaspoon minced garlic

Steps:

  • Remove any rinds from hard cheeses. Cut cheeses into 1/2-inch cubes.
  • Place cheese, wine, butter, herbs, and garlic in a food processor and blend until smooth, 2 minutes.
  • Serve as-is or refrigerate for at least one hour for a firmer consistency. This can be stored in the refrigerator for up to one week.

3 tablespoons milk
1 teaspoon italian seasoning
1/8 teaspoon salt

  • Beat all ingredients in a medium glass bowl with electric mixer on medium speed 2-3 minutes, or until light and fluffy.
  • Cover and refrigerate until serving.

8 ounces cream cheese, softened
2 tablespoons unsalted butter, softened
1 small garlic clove, quartered
1/4 teaspoon kosher salt
1/4 cup chopped parsley leaves
1 tablespoon chopped chives
Crackers or toasts (for serving)

Steps:

  • Combine cream cheese, butter, garlic, and salt in the bowl of a food processor. Pulse until smooth. Add parsley and chives and pulse a few times until well combined. Pack mixture into a small bowl, ramekin, or glass jar. Cover and chill at least 30 minutes. Serve with crackers or toasts.
  • Do Ahead
  • Cheese can be made 5 days ahead. Cover and chill.

1/2 cup feta cheese with herbs
1/4 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, grated
3 ounces cream cheese, softened and cut into chunks
1/2 teaspoon garlic, minced
4 -5 green olives, pitted
1/4 teaspoon italian seasoning
1/4 teaspoon dried parsley
1/4 teaspoon savory
1 tablespoon cooking sherry
2 teaspoons olive oil

Steps:

  • 1. Combine all ingredients except olive oil in food processor.
  • 2. Pulse chop until well mixed, gradually adding olive oil until it reaches desired consistency.
  • 3. Enjoy with crackers, crusty bread, or pita.

Good game day spread to serve with crackers or chips. Heat is easily adjusted by using more or less jalapenos.

1 small onion, quartered
2 fresh jalapeno chiles, seeded (more or less to your taste)
2 (3 ounce) packages cream cheese
1 lemon, juice of
1 tablespoon Worcestershire sauce
4 ounces sharp cheddar cheese, grated
4 ounces longhorn cheddar cheese, grated
4 ounces pimento cheese
1/4 cup chopped pecans
1 teaspoon paprika
parsley

Steps:

  • Finely chop the onion and jalapeños in a food processor; add the cream cheese, lemon juice, and Worcestershire, process until well blended.
  • In a medium bowl, combine the cheeses, pecans and paprika; stir until thoroughly blended; add the jalapeño mixture, mix well.
  • Shape mixture on a serving plate, garnish with parsley.
  • Serve with crackers or chips.

I always make it around the holidays, or for football and hockey game nights. Everyone begs for this recipe. Turn this into a pub spread by adding a half cup of your favorite dark ale. Use brick cream cheese for a spread, or spreadable cream cheese for a dip. Serve with crispy crackers, toast, or bagels.

1 (8 ounce) package cream cheese
1 (8 ounce) container cold pack aged sharp Cheddar cheese (such as MacLaren's Imperial Sharp Cold Pack Cheddar Cheese product)
¼ cup finely chopped red onion
1 tablespoon Worcestershire sauce
2 teaspoons freshly ground black pepper
1 teaspoon paprika
1 dash hot sauce, or to taste

Steps:

  • Place cream cheese and cold pack Cheddar cheese in a microwave-safe bowl; slice cheese into chunks with a knife. Microwave cheese in 30-second intervals on high just until softened, stirring between intervals.
  • Stir red onion, Worcestershire sauce, black pepper, paprika, and hot sauce into cheese mixture with a fork until evenly combined; spoon into an airtight container and refrigerate, 8 hours to overnight.
  • Remove cheese spread from refrigerator about 30 minutes before serving.

  • Food processor instructions: In the bowl of a food processor fitted with the steel blade, combine the cream cheese, mayonnaise, Worcestershire sauce, 1/4 teaspoon of salt, garlic powder, and cayenne pepper. Process until smooth and evenly combined. Remove the blade, scraping any of the mixture back into the bowl. Switch to the grating blade. Cut the Cheddar cheese into pieces that will fit into the feed tube. With the machine running, add the cheese through the feed tube until it is all grated in. Transfer the contents of the food processor to a large mixing bowl. Add the diced pimentos and stir everything together to combine. Taste and adjust seasoning, if necessary. (I usually add about 1/4 teaspoon more salt, but it depends on the saltiness of the cheese.)
  • Mixer instructions: In the bowl of an electric mixer fitted with the paddle attachment or beaters, combine the cream cheese, mayonnaise, Worcestershire sauce, 1/4 teaspoon salt, garlic powder, and cayenne pepper. (It's a good idea to taste the pimento cheese on the crackers you plan to serve it with, as the saltiness can vary.)
  • Transfer the spread to a serving bowl and serve with crackers and/or crudités. If serving later, cover and refrigerate for up to 5 days; bring to room temperature before serving.
