This recipe has made it to the "TOP" of all my fish recipes. It's steamed in aluminum foil and cooked in the oven. I can't begin to explain how delicious this is. All I can say is that you must add this to your bucket list.

Number Of Ingredients 15

FOR THE FISH YOU WILL NEED
2 4-6 oz cod fillets (or Mahi-Mahi)
1 bok choy (cut of leave and stems)
1 1/2 in ginger (cut match sticks)
1 lemon Zest
2 tsp toasted sesame oil
2 pieces aluminum foil (6" x 6")
FOR THE SAUCE
2 Tbsp sesame oil
1 in Ginger (chopped)
1 tsp thin soy sauce
3-4 in scallions tops (cutmathsticks, green)
2 Tbsp mirin (or dry sherry)
2 Tbsp soy sauce (to taste)
1 dash Shiracha (to taste)

Steps:

  • 1. Preheat oven to 355 degrees. Place some bok choy on a piece of foil and add fillet. Drizzle cod fillet with sesame oil, top with lemon zest and some ginger. Fold the long edges of foil together; make thin folds to seal. Fold outer short edges a few times inward to seal. This will make a pouch. Repeat for each piece of cod
  • 3. Place foil packets on cookie sheet and bake for 15-20 minutes. Fish should be nice and flaky
  • 4. Sauce ingredients- Add 1/2 sesame oil to a hot skillet. Saute ginger for about a minute until oil in fragrant. Add Mirin and simmer for 30 seconds. Add remaining ingredients and simmer for about 1 minute or so. Add 2nd part of sesame oil, chili and soy sauce to taste

Glazed Cod With Bok Choy, Ginger and Oyster Sauce image

This quick one-skillet meal gets a boost of flavor from oyster sauce, a salty-sweet condiment made from concentrated oyster juice and soy sauce that's often used in Chinese cooking. Here, it melds with garlic, ginger and butter to create a velvety glaze for cod fillets. If cod is unavailable, hake, striped bass or even salmon are fine substitutes. Steamed rice, soba or egg noodles are all perfect canvases for soaking up the flavorful juices.

3 tablespoons canola oil
3 garlic cloves, thinly sliced
2 tablespoons minced fresh ginger
1 pound baby bok choy, halved lengthwise
Kosher salt and black pepper
1/4 cup oyster sauce
1 tablespoon low-sodium soy sauce
1 1/2 pounds boneless, skinless cod fillets, cut crosswise into 2-inch pieces
1 tablespoon unsalted butter
1 tablespoon lime juice
Cooked rice, soba or egg noodles, for serving

Steps:

  • In a large nonstick skillet, heat 2 tablespoons oil over medium. Add garlic and ginger and cook, stirring occasionally, until fragrant, 1 minute. Add bok choy, season with salt and pepper, and cook, stirring occasionally, until tender, about 5 minutes. Transfer to a plate.
  • Add oyster sauce, soy sauce and remaining 1 tablespoon oil to the skillet and bring to a simmer over medium. Season fish lightly with salt and pepper and add to skillet. Simmer gently over medium-low for 5 minutes. Turn fish and simmer, spooning sauce over fish, until cooked through, about 5 minutes. Swirl in butter and lime juice and simmer over medium heat until sauce is thickened, about 2 minutes.
  • Serve fish and bok choy over rice or noodles. Drizzle with remaining sauce.

4 skinless cod fillets, (6 to 8 ounces each)
3 tablespoons rice vinegar
2 tablespoons soy sauce
2 tablespoons finely grated, peeled fresh ginger
Coarse salt and ground pepper
6 scallions, green parts cut into 3-inch lengths

Steps:

  • In a large skillet, combine 3 tablespoons rice vinegar, 2 tablespoons soy sauce, and 2 tablespoons finely grated peeled fresh ginger.
  • Season both sides of 4 skinless cod fillets (6 to 8 ounces each) with coarse salt and ground pepper; place in skillet with vinegar mixture. Bring to a boil; reduce heat to a gentle simmer. Cover; cook until fish is almost opaque throughout, 6 to 8 minutes.
  • Meanwhile, cut green parts of 6 scallions into 3-inch lengths; thinly slice lengthwise. Scatter over fish; cook (covered) until fish is opaque throughout and scallions are just wilted, about 2 minutes more.

20 oz cod fillets, 5 oz portions about 1 inch thick
2 Tbsp vegetable oil
zest of 1 lemon
salt & pepper
1 large piece of aluminum foil
FOR THE BOK CHOY YOU WILL NEED
1 bok choy, chopped
4 oz fresh portabello mushrooms, sliced
3-4 scallion bottoms (white), chopped
3-4 garlic cloves, chopped
1/2 tsp ginger, chopped
1/2 chili pepper, chopped-i used yellow cayenne
2 Tbsp soy sauce
2 tsp toasted sesame oil
1 large piece of aluminum foil
FOR THE SAUCE YOU WILL NEED
3 Tbsp vegetable oil
1 Tbsp toasted sesame oil
1 1/2 inch ginger, cut in mathsticks
2 Tbsp dry sherry
1/4 c soy sauce
1 tsp sugar
1 chili pepper, thinly sliced-i used yellow cayenne
3-4 scallions tops (green), cut in mathsticks

Steps:

  • 1. Preheat oven to 355 degrees. Brush cod fillets with vegetable oil, sprinkle with salt and pepper; top with lemon zest. Place cod fillets about 1/2 inch apart on foil. Fold the long edges of foil together; make thin folds to seal. Fold outer short edges a few times inward to seal. This will make a pouch. You can fold in individual pieces of foil if you wish.
  • 2. Place all the bok choy ingredients in the center of foil. Fold the long edges of foil together; make thin folds to seal. Fold outer short edges a few times inward to seal. This will make a pouch.
