4 cups broccoli florets
1-1/2 cups KRAFT Shredded Cheddar Cheese
1/4 cup OSCAR MAYER Real Bacon Bits
1/2 cup KRAFT Classic Ranch Dressing

Steps:

  • Heat oven to 400°F.
  • Combine stuffing mix and water; spoon onto centers of 6 large sheets heavy-duty foil. Top with remaining ingredients; fold to make 6 packets.
  • Place in single layer on rimmed baking sheet.
  • Bake 30 to 35 min. or until chicken is done (165°F). Remove packets from oven; let stand 5 min. Cut slits in foil to release steam before opening packets.

1/2 teaspoon salt
1 teaspoon Italian seasoning
1/2 teaspoon tarragon (optional)
6 potatoes, sliced
2 cups carrots, sliced

Steps:

  • Spray foil with cooking spray. On each piece of foil, place a chicken breast, potatoes and carrots. Sprinkle each with seasoning. Create a packet with the foil sealing down the middle, and then at ends. Bake at 400° for 30 minutes or on the grill for 45 minutes. Be careful opening as the steam escaping is very hot. Serve with butter, salt & pepper.

2 cups chopped broccoli
1 cup shredded cheddar cheese
4 slices cooked bacon; crumbled
4 tablespoons ranch dressing

Steps:

  • Preheat oven to 400F.
  • Spray 4 large sheets of aluminum foil with oil. Set aside.
  • Mix stuffing and water together in a mixing bowl. Spoon 1/4 of the mixture onto each aluminum foil sheet and set a chicken breast on top of each. Top each one with 1/2 cup of broccoli. Sprinkle with 1/4 cup cheese, 1/4 of the bacon, and a drizzle of ranch dressing.
  • Fold the sides of the foil up into a packet.

  • Pre-heat oven to 400F. Line a baking sheet with 4 sheets of foil (about 6-8 inches) and set aside.
  • Combine the brown rice, and water in a medium bowl and soak for 5 minutes. DIvide rice (and it's water) into 4 sheets of foil.
  • Pound chicken breasts with a meat tenderizer or a rolling pin until they are even. Place the chicken breasts and broccoli florets on the rice. Seasoning each chicken breast generously with 1 teaspoon of chili powder, Italian seasoning, black pepper, and salt to taste. Drizzle each packet with olive oil and fold the sides of the foil over the chicken, covering completely; seal the packets closed.
  • Bake for 40-45 minutes, or until chicken's internal temperature reaches 165F. Remove from oven and carefully open up the foils. Serve immediately.
