GRILLED FISH IN FOIL
I adopted this recipe from the Recipezaar account. Last summer, I prepared this recipe with a few changes (as stated in the comment section below) and really enjoyed it.

Steps:
- On 4 large buttered squares of heavy-duty aluminum foil, place equal amounts of fish.
- In small saucepan, melt margarine; add lemon juice, parsley, dill weed, salt and pepper.
- Pour equal amounts over fish.
- Sprinkle with paprika; top with onion slices.
- Wrap foil securely around fish, leaving space for fish to expand.
- Grill 5 to 7 minutes on each side or until fish flakes with fork.
- Refrigerate leftovers.

- Preheat the broiler to medium-high. Cut two large squares of aluminum foil; one square should be enough to lay all the fillets in comfortably with a couple of inches spare around the edges.
- Lay the fish fillets, skin-side down, in the center of one of the foil squares. Brush the fillets with the melted butter and sprinkle the seasoning and salt over the top.
- Lay the second square of foil over the top and fold the edges of the bottom square up and over. Fold again so that you have a leak-proof parcel.
- Place the parcel in the broiler. Cook for about 7 minutes, turn the parcel over and cook for another 7 minutes until the fish is soft and flaky.
- Serve the fillets with the buttery juices drizzled over the top.

EASY GRILLED FISH FILLET IN FOIL PACKETS
This super easy method for grilling fish is pretty foolproof, and you can use any fresh fish that's available to you in your area. It's almost 90 degrees today, which means I'm grilling tonight. In fact I use my outdoor grill just about every night in the summer to make quick, easy, healthy dinners.

- Place the fish in the center of the foil, season with salt and pepper and drizzle with olive oil.
- Place a slice of lemon on top of each piece of fish, then a sprig of herbs on each.
- Fold up the edges so that it's completely sealed and no steam will escape, creating a loose tent.
- Heat half of the grill (on one side) on high heat with the cover closed.
- When the grill is hot, place the foil packets on the side of the grill with the burners off (indirect heat) and close the grill.
- Depending on the thickness of your fish, cook 10 to 15 minutes, or until the fish is opaque and cooked through. My porgy fillets took about 12 minutes.

GRILLED PEACH CRISP FOIL PACKS
We've cut out the bubbly bake time with these simple, lower-fat crisps-for-one. Grill them in makeshift bowls made of foil and eat them straight out of the pack for your own private piece of summer. (Frozen yogurt is optional but our nutritional values include it.)

- Prepare a grill for medium-high heat. Cut four 12-inch square pieces of heavy-duty foil.
- Toss together the sugar, butter and salt in a small bowl.
- Cut the peaches in half and remove the pits. Stuff each half with some of the brown sugar-butter mixture.
- Put two peach halves, stuffed-side down, in the center of each piece of foil. Gather up the sides of the foil and crimp the edges tightly to make 4 purse-shaped packets.
- Put the packets on the grill, close the lid and cook for 15 minutes, changing the position of the packets on the grill about half way through. (You can remove and open the packets to check their progress at any time. Be careful of the steam.) Remove from the grill and let rest for a few minutes.
- Carefully open each packet (hot steam will escape) and use a spoon or fork to flip the peach halves over, they should be tender with a caramelized sauce. Top each serving with 1 tablespoon of granola and a scoop of frozen yogurt if desired.

- If grilling, preheat the grill to Medium-High.
- If baking, preheat the oven to 400F.
- Prepare 4 sheets of foil, put them on the counter and spray with non-stick cooking spray.
- Slice the butter into 8 pieces.
- Put each fish fillet in the middle of the foil sheet.
- Sprinkle the fish with salt and pepper.
- Put 2 pieces of butter on top of each fish fillet.
- Put the lemon slices on top of the fish.
- Fold the foil up from both ends to make closed foil packets.
- If grilling, put the foil packets on the grill, close the grill and grill for 7 minutes per side.
- If baking, put the foil packets on the baking sheet, put in the oven and bake for 15 minutes.
- Unwrap 1 foil packet to check for doneness (the fish should be opaque and flake easily with a fork). If not done, wrap it back and cook the fish for 5 more minutes.
STEAMED WALLEYE (PICKEREL) ON THE GRILL
Steps:
- Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
- Place 2 fillets onto the center of a sheet of heavy duty aluminum foil. Drizzle with butter and lemon juice, season with salt and pepper, and place some of the onion rings over top. Bring the sides of the aluminum foil over the fish and fold several times. Roll up the ends, making the pouch airtight. Repeat with remaining ingredients.
- Place the pouches onto the grill, and cook until the fish is no longer opaque in the center, and flakes easily with a fork, 15 to 20 minutes.
