Cod with Cashews Baked in Foil Envelopes image

Baking fish fillets en papillote (that is, wrapped in an envelope-like package) holds in flavor and moisture. This technique usually calls for parchment paper, and while aluminum foil doesn't look as dramatic, it is easier to use. You must rely on blind faith when cooking en papillote because it is not advisable to open the packages to check for doneness. Be sure that your oven temperature is accurate-you should have an oven thermometer anyway. For a lighter sauce, substitute 1 teaspoon of dark Asian sesame oil for each tablespoon of butter in the foil packages.

1 tablespoon vegetable oil
1 red bell pepper, seeds and ribs discarded and cut into long, ¼-inch-wide strips
4 scallions, white and green parts, chopped
1 tablespoon shredded fresh ginger (use the large holes of a box grater)
1 garlic clove, finely chopped
4 ounces sugar snap peas
Salt and freshly ground pepper to taste
Four 6-ounce cod fillets
4 tablespoons soy sauce, divided
4 tablespoons unsalted butter, divided
½ cup unsalted roasted cashews, very coarsely chopped

Steps:

  • Position a rack in the center of the oven and preheat the oven to 400°F. Have ready four 12-inch squares of aluminum foil. Lightly oil the dull sides of the foil squares. Fold each square in half.
  • Heat the oil in a large skillet over medium-high heat. Add the red pepper and cook, stirring often, just until it begins to soften, about 1 minute. Add the scallions, ginger, and garlic, and stir until the garlic gives off its aroma, about 30 seconds. Remove from the heat, add the sugar snap peas, and stir just until they are coated with the oil. Season the vegetables lightly with salt and pepper (the soy sauce and ginger will provide salt and heat).
  • Lightly season the cod with salt and pepper. Open a foil square and place a fillet on the bottom half. Top with one-fourth of the vegetables, 1 tablespoon soy sauce, and 1 tablespoon butter, cut into a few pieces. Sprinkle with one fourth of the chopped cashews. Fold the square over to enclose the fish and vegetables, and tightly crimp the edges closed. Place on a large baking sheet. Repeat with the remaining fish, vegetables, soy sauce, and butter.
  • Bake for 15 minutes. Remove from the oven and let stand for 5 minutes (this will complete the cooking of the fish).
  • To serve, place a foil packet on each dinner plate. Allow everyone to open each foil package by piercing it with the tip of a sharp dinner knife. You can spill the contents of the package onto each plate or eat directly out of the foil. Take care: The escaping steam can be very hot!

The 'no smell' fish recipe that is the ONLY one I make for my family (I hate fish, they LOVE it!). Take foil packets to table for service, and keep them around for the discarding of bones and skin. Then when dinner's done, haul those babies to the outside trash.

2 rainbow trout fillets
1 tablespoon olive oil
2 teaspoons garlic salt
1 teaspoon ground black pepper
1 fresh jalapeno pepper, sliced
1 lemon, sliced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Rinse fish, and pat dry.
  • Rub fillets with olive oil, and season with garlic salt and black pepper. Place each fillet on a large sheet of aluminum foil. Top with jalapeno slices, and squeeze the juice from the ends of the lemons over the fish. Arrange lemon slices on top of fillets. Carefully seal all edges of the foil to form enclosed packets. Place packets on baking sheet.
  • Bake in preheated oven for 15 to 20 minutes, depending on the size of fish. Fish is done when it flakes easily with a fork.

1 green onion, sliced
1 salt, to taste
1 lb fresh fish filets
1/2 tomato, sliced
1/2 Tbsp basil
1 tsp white pepper
3 slice lemon

Steps:

  • 1. Cut aluminum foil into 12X16 inch rectangle.
  • 2. Place green pepper, tomato, and green onion on lower half of foil sheet.
  • 3. Sprinkle with 1/4 teaspoon basil, salt, and pepper.
  • 4. Place fish on vegetables.
  • 5. Sprinkle with remaining basil, salt, and pepper.
  • 6. Top with lemon slices.
  • 7. Fold upper half of foil over fish and vegetables.
  • 8. Double fold edges of foil to make a tight 1/2 inch seal.
  • 9. Place foil envelope on baking sheet and bake at 450 for 15 minutes or until envelope puffs.
  • 10. To serve, cut an "X" in top of envelope and fold foil back.

1 large fish fillet (I used walleye but any fillet is great!)
2 medium potatoes (wedges)
1 large carrot (sliced)
2 small peppers (red and green, cut in strips)
1 medium zucchini (sliced)
1 large tomato (sliced)
vegetable oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
juice from half a lemon
zest from half a lemon
3-4 garlic cloves (sloced)
medium or large baking sheet
aluminium foil
bamboo spatula
fork

Steps:

  • Pre heat oven to 475 F
  • Line a baking sheet with aluminium foil. Make sure you cover the surface evenly so the juice from the vegetables and fish won't spill out while cooking.
  • Place fish in the middle of the sheet.
  • Top with all vegetables.
  • Drizzle oil.
  • Add salt, pepper, lemon juice, lemon zest and garlic and mix well with your hands.
  • Wrap foil well and bake for 15 minutes.
  • Remove baking sheet from the oven, open the foil to expose the fish and return to oven. Bake for additional 5 minutes or until the fish gets a light golden crust.
  • Test with a fork as specified in the article above.
  • Enjoy your fish in foil!
