Focaccia is one of my favorite bread recipes. It's one of the least labor-intensive since there isn't any kneading. The dough is very wet, which is perfect for a tender, yet chewy, bread with a very distinct salt bite. -James Schend, Taste of Home Deputy Editor

1 package (1/4 ounce) active dry yeast
1-1/4 cups warm water (110° to 115°), divided
1 tablespoon honey
3 cups (375 grams) all-purpose flour
1/4 cup plus 3 tablespoons olive oil, divided
3/4 teaspoon kosher salt
1 teaspoon flaky sea salt, optional

Steps:

  • In a large bowl, dissolve yeast in 1/2-cup warm water and honey; let stand for 5 minutes. Add flour, 1/4 cup oil, salt and remaining 3/4-cup water; mixing until smooth (dough will be wet). Scrape the sides of the bowl clean; cover and let rise in a warm place until doubled, about 45 minutes., Preheat oven to 425°. Brush a 13x9-in. baking pan with 1 tablespoon oil. Gently scrape dough directly into pan. With oiled hands, gently spread dough. If dough springs back, wait 10 minutes and stretch again. Make indentations in the dough with your fingers. Drizzle with remaining 2 tablespoons oil; let rise until doubled in size, 30-40 minutes. , If desired, sprinkle with sea salt. Bake until golden brown, 20-25 minutes. Cut into squares; serve warm.

2 ¾ cups all-purpose flour
1 teaspoon salt
1 teaspoon white sugar
1 tablespoon active dry yeast
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried thyme
½ teaspoon dried basil
1 pinch ground black pepper
1 tablespoon vegetable oil
1 cup water
2 tablespoons olive oil
1 tablespoon grated Parmesan cheese
1 cup mozzarella

Steps:

  • In a large bowl, stir together the flour, salt, sugar, yeast, garlic powder, oregano, thyme, basil and black pepper. Mix in the vegetable oil and water.
  • When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic. Lightly oil a large bowl, place the dough in the bowl, and turn to coat with oil. Cover with a damp cloth, and let rise in a warm place for 20 minutes.
  • Preheat oven to 450 degrees F (230 degrees C). Punch dough down; place on greased baking sheet. Pat into a 1/2 inch thick rectangle. Brush top with olive oil. Sprinkle with Parmesan cheese and mozzarella cheese.
  • Bake in preheated oven for 15 minutes, or until golden brown. Serve warm.

2 packages dry yeast
1 cup, plus 2 tablespoons, lukewarm water
2 cups all-purpose flour
1 1/2 cups whole-wheat flour
1/4 teaspoon salt, if desired
1 teaspoon sugar
6 tablespoons olive oil, plus oil for greasing the baking sheet and mixing bowl
1/2 cup freshly grated pecorino or romano cheese
1 teaspoon finely minced garlic
1 teaspoon finely chopped fresh rosemary, or half the amount dried
2 teaspoons freshly ground black pepper

Steps:

  • Put the yeast into the container of a food processor and add the water, all-purpose and whole-wheat flours, salt and sugar.
  • Start blending while adding two tablespoons of the oil. Blend until the dough comes away from the sides of the bowl of the container. Empty the dough onto a lightly floured board and knead briefly. Shape the dough into a ball. Lightly oil a mixing bowl and add the ball of dough. Cover with clear plastic wrap and let stand half an hour or longer in a warm place.
  • Preheat the oven to 400 degrees.
  • Lightly oil a baking sheet. Roll out the dough into a rectangle measuring about 11 by 13 inches. Place the rectangle of dough onto the baking sheet. Using two fingers, make indentations all over the surface of the dough, leaving a half-inch border all around. Combine the cheese, garlic, rosemary and black pepper. Sprinkle the top of the dough all over with this mixture. Press down once more all over the top of the dough with two fingers. Dribble the remaining four tablespoons of olive oil all over the dough.
  • Place the dough in the oven and bake 30 minutes. Cut into six to 10 wedges and serve hot.

2 1/2 cups all-purpose flour, plus more for dusting
1 1/4 teaspoons instant yeast
1 teaspoon salt
Extra-virgin olive oil
1 cup water
1/2 cup marinara sauce
About 12 small (or 6 large, halved) meatballs, uncooked
8 ounces fresh mozzarella, sliced
1/4 cup grated Parmesan

Steps:

  • For the dough: In the bowl of a stand mixer, whisk together the flour, yeast and salt. Make a small well in the center and then add 2 tablespoons oil and the water. Using the paddle attachment, mix on low until combined. Remove the dough to a flour-dusted work surface and knead for a few minutes until shiny and smooth.
  • Place the dough in a lightly oiled bowl, cover with plastic wrap and set aside in a warm, draft-free place until doubled in volume, about 1 hour. Remove the dough from the bowl and gently punch it down. Coat a 10-inch cake pan with 3 tablespoons oil. Place the dough in the pan and poke it all over with your fingers. Cover again with plastic wrap and set aside in warm place until puffy, about 45 minutes.
  • For the pizza: Preheat the oven to 425 degrees F. Spread the focaccia with the marinara sauce, then scatter with the meatballs. Tear the mozzarella slices and scatter them over the meatballs. Sprinkle with the Parmesan. Cover the pan with foil and bake for 15 minutes. Remove the foil and bake an additional 5 minutes, until the cheese is golden brown and bubbling and the crust is golden.

This is a nice focaccia recipe. I don't always put all the toppings on, and often add toppings depending on what I have around and what I'm craving.

Number Of Ingredients 15

2 teaspoons fast rising yeast
1 cup water
2 tablespoons sugar
3 1/2-4 cups flour
1 tablespoon coarse salt
1/4 cup olive oil
cornmeal, for dusting
2 tablespoons olive oil
1 onion, diced
2 garlic cloves, minced
10 kalamata olives, pitted and quartered
1/4 cup shredded parmesan cheese
1 tablespoon coarse salt
fresh ground black pepper
2 tablespoons fresh rosemary

Steps:

  • In the bowl of a standing mixer fitted with a dough hook, proof the yeast by combining it with the warm water and sugar.
  • Stir gently to dissolve.
  • Let stand 3 minutes until foam appears.
  • Turn mixer on low and slowly add the flour to the bowl.
  • Dissolve salt in 2 tablespoons of water and add it to the mixture.
  • Pour in 1/4 cup olive oil.
  • When the dough starts to come together, increase the speed to medium.
  • Stop the machine periodically to scrape the dough off the hook.
  • Mix until the dough is smooth and elastic, about 10 minutes, adding flour as necessary.
  • Turn the dough out onto a work surface and fold over itself a few times.
  • Form the dough into a round and place in an oiled bowl, turn to coat the entire ball with oil so it doesn't form a skin.
  • Cover with plastic wrap or damp towel and let rise over a gas pilot light on the stovetop or other warm place until doubled in size, about 45 minutes.
  • Coat a sheet pan with a little olive oil and corn meal.
  • Once the dough is doubled and domed, turn it out onto the counter.
  • Roll and stretch the dough out to an oblong shape about 1/2-inch thick.
  • Lay the flattened dough on the pan and cover with plastic wrap.
  • Let rest for 15 minutes.
  • In the meantime, coat a small saute pan with olive oil, add the onion, and cook over low heat for 15 minutes until the onions caramelize.
  • Preheat oven to 400 degrees F.
  • Uncover the dough and dimple with your fingertips.
  • Brush the surface with more olive oil and then add caramelized onions, garlic, olives, cheese, salt, pepper, and rosemary.
  • Bake on the bottom rack for 15 to 20 minutes.
