2 large eggs
1-1/2 cups all-purpose flour
1/2 cup cornstarch
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup 2% milk
5 tablespoons canola oil
2 teaspoons vanilla extract
1 teaspoon white vinegar
2 tablespoons sugar
1/2 cup club soda, chilled
Optional: Butter and maple syrup

Steps:

  • Separate eggs. Place egg whites in a clean, dry bowl; let stand at room temperature 30 minutes., In another bowl, whisk together next 5 ingredients. In a small bowl, whisk egg yolks, milk, oil, vanilla and vinegar until blended. Beat egg whites until soft peaks form. Gradually add sugar; continue beating until stiff peaks form., Preheat waffle iron. Stir together flour mixture, egg mixture and club soda just until combined. Fold egg whites into batter. Bake waffles according to manufacturer's directions until golden brown. Serve with butter and maple syrup if desired.

Steps:

  • Preheat the waffle iron according to the manufacturer's directions.
  • Place flour, baking powder, sugar, and salt in a bowl. Whisk to combine.
  • In a small bowl, mix egg yolks, milk, and butter. Set aside.
  • In a separate bowl, beat egg whites with a mixer on medium high speed until stiff peaks form. *see note
  • Add egg yolk mixture to flour mixture and stir to combine. Fold in egg whites.
  • Drop by large spoonfuls onto greased waffle iron, close the lid and cook about 3-5 minutes.

These airy, delicate and crisp-edged waffles are so fabulous, yet so simple to throw together, they're destined to become part of your weekend breakfast routine. Freeze leftovers, if you have any, in Ziplock bags and serve them during the week. You can pop them in the toaster to reheat (use a light setting) and they come out nearly as well as freshly made, maybe even slightly crunchier. For a lighter, fluffier waffle, separate the eggs and proceed with step 2 using the egg yolks. Beat the whites until stiff, then fold into the batter. For whole-grain waffles, use 1 1/3 cup all-purpose flour and 2/3 cup whole-wheat flour. You can also substitute brown sugar for the granulated.

  • Preheat waffle iron. Gently coat with nonstick baking spray.
  • In a large bowl, combine the flour, sugar, baking powder, and salt. Use the back of a spoon to create a "well" in the center.

1 cup milk (or water, or non dairy milk of choice*)
2 Tablespoons lemon juice (juice from 1 lemon)
3 Tablespoons canola (or other mild cooking oil like grapeseed, vegetable or coconut oil)
1 teaspoon vanilla extract
1/4 teaspoon almond extract (optional)
1 1/2 cups all-purpose flour
1 1/2 Tablespoons baking powder
3 Tablespoons sugar
1 teaspoon lemon zest

Steps:

  • In a bowl combine milk and lemon juice and let sit for 5 minutes (this is essentially creating buttermilk, you could use buttermilk instead of this step). After 5 minutes add in canola oil, vanilla extract and almond extract (if using.)
  • In another bowl combine flour, baking powder, sugar, and lemon zest, stir to combine.
  • Pour wet ingredients into dry ingredients, stir, and let sit for 5 minutes (let the baking powder do it's thing - the mixture thickens up a bit and bubbles a little.)
  • Warm waffle iron according to manufacture directions. I have this waffle iron and love it so much!
  • Spray heated waffle iron with cooking spray and spoon batter into waffle iron, cook until done (mine is about 5 minutes). Repeat until all waffles are made.
