A bit unusual mixing technique assures a perfect cake every time. Frost with 2 1/2 to 3 batches of my semi classic buttercream frosting recipe, #14307, any flavor will do, but we like the milk chocolate best. I like to split the cakes and do two more layers of frosting and/or fill the middle with jam. Adapted from Rose Beranabum's "The Cake Bible"

14 large egg yolks (259 gms)
2 1/3 cups milk (560 grams)
5 1/4 teaspoons pure vanilla extract
7 cups sifted cake flour (700 grams)
3 1/2 cups superfine sugar (700 grams)
7 7/8 teaspoons baking powder
1 3/4 teaspoons salt
28 tablespoons unsalted butter, cool room temperature (397 gms)

Steps:

  • Preheat oven to 350 degrees.
  • Grease two 12-inch x 1 1/2 inch cake pans, line bottoms with parchment paper grease bottom and flour entire pan.
  • In a medium bowl lightly combine the yolks, 1/2 cup milk, and vanilla.
  • In a large mixing bowl combine the dry ingredients and mix on low speed for 30 seconds to blend.
  • Add the butter and remaining milk.
  • Mix on low speed until the dry ingredients are moistened.
  • Beat for 90 seconds at medium speed to develop cake structure.
  • Stop mixer, scrape down the sides.
  • Gradually add the egg/milk/vanilla mixture in 3 batches, beating 20 seconds after each addition.
  • Stop mixer, scrape down the sides and give it a final mix by hand.
  • Pour the batter in the prepared pans and smooth surface.
  • (Pans will be half full.) Bake 40 to 50 minutes or until toothpick inserted in cake comes out clean and the cake springs back when pressed lightly in center.
  • (The cakes should start to shrink from the sides of pans after taking them out of the oven.) Cool the cakes in the pans for 10 minutes, then invert onto a buttered rack.
  • Reinvert cakes so that tops are right side up.
  • Cool to room temperature and wrap tightly with plastic wrap.

Number Of Ingredients 8

4 eggs, separated
1 cup butter, SOFTENED or 1 cup margarine
2 cups sugar
1 teaspoon extract (vanilla, lemon, almond, rum etc.)
2 1/2 cups cake flour or 2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk

Steps:

  • 1. Preheat oven to 350°F.
  • 2. Grease and flour or line two 9-inch round cake pans ( or 1 10-inch round 3-inch deep) with parchment paper. Set aside.
  • 3. In an electric mixer with wire whisk attachment, beat egg whites until soft peaks. Set aside.
  • 4. In an electric mixer on medium speed, cream the butter. Gradually add sugar and beat until light in color. Add vanilla. Add egg yolks, one at a time, beating well after adding each one.
  • 5. In another bowl, combine flour, baking powder, and salt. Add the flour mixture to the butter mixture alternately with the milk. Begin and end with the flour mixture. Mix until batter is smooth.
  • 6. Carefully fold the egg whites into the flour mixture.
  • 7. Pour batter into prepared pans. Bake 25-30 mins (55-60 if using 10-inch pan) or until a tester comes out with a fine crumb. Remove pans from oven and place on a wire cooling rack. Cool cakes in pans for 5-10 minutes. Carefully remove cakes from the pans & continue to cool on wire racks. Remove and discard parchment paper before decorating.
  • 8. When cool, frost as desired or wrap in foil then plastic wrap for up to two months.
  • YIELD: TWO 9-INCH ROUND LAYERS OR ONE 10-INCH 3-INCH DEEP ROUND LAYER OR 24 CUPCAKES.

1/4 teaspoon baking soda

1 3/4 cups sugar

3 egg yolks
3 eggs

Steps:

  • Heat the oven to 350°F Coat 9x13 pan with butter and flour, and tap out any excess flour. Set aside.
  • Combine flour, baking powder, salt, and baking soda in a small bowl and whisk break up any lumps. Set aside.
  • Place butter in the bowl and mix on medium-high speed until fluffy and light in color, about 3 minutes. Add sugar and vanilla, and continue to beat another 5 minutes. Add yolks one at a time, letting each incorporate fully before adding the next. Scrape down the sides of the bowl.
  • Add whole eggs in the same manner, allowing 1 minute between additions. Scrape down the sides of the bowl and the paddle.
  • Add 1/2 of the flour mixture, and turn the mixer to low speed, mixing until the flour is just incorporated. Add 1/2 of the milk, and mix until just incorporated. Continue with remaining flour mixture and milk, until all ingredients are incorporated and smooth.
  • Pour in prepared pan and bake until cake edges slightly pull away from the pan and a cake tester inserted in the center comes out dry with just a few crumbs, about 35 to 40 minutes.
  • Remove the pan from the oven and let cool on a wire rack, about 10 to 15 minutes. Run a knife around the perimeter of cake, and turn out onto the rack to cool completely (at least 1 1/2 hours) before frosting.

  • Spray bottoms only of 2 (9-inch) round cake pans, dust with flour & set aside.

8 ounces (2 sticks) unsalted butter, softened, plus more for pans
3 cups cake flour, plus more for dusting
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
2 cups sugar
4 large eggs, separated (egg whites whipped to stiff peaks)
1 teaspoon pure vanilla extract
1 cup buttermilk, room temperature

Steps:

  • Preheat oven to 350 degrees. Butter and line two 9-inch round cake pans with parchment. Butter parchment, then flour pans, tapping out excess. Set aside.
  • Whisk together flour, baking powder, baking soda, and salt in a medium bowl; set aside. Put butter and sugar in the bowl of an electric mixer fitted with the paddle attachment; cream on medium-high speed until pale, 2 to 3 minutes. On medium speed, add eggs yolks one at a time, mixing well after each addition. Add vanilla and mix, scraping down sides of bowl. On low speed, add the flour mixture in three batches, alternating with two batches of buttermilk. Fold in egg whites. Stir with a rubber spatula until the batter is evenly blended.

MY LIGHT AND FLUFFY YELLOW CAKE: FOLLOW DIRECTIONS EXACTLY
2 1/2 C cake flour, ( do not use all purpose will not be as fluffy)
1 1/4 tsp baking pdr
1/4 tsp soda
3/4 tsp salt
1 3/4 C sugar ( 12 1/4 oz)
1 1/4 stks butter (10 tbs) melted and cooled slightly
1 C buttermilk, @ room temp
3 TBS veg. oil
2 Tsp vanilla extract
6 Lg egg yolks, @ room temp
3 Large eggs whites, @ room temp
MUST FOLLW DIRECTIONS EXACTLY FOR RESULTS TO BE LIGHT AND FLUFFY

Steps:

  • 1. Bring all ingredients to ROOM temperature before starting Recipe. Non Stick Spray can be used for Greasing pans, Flour as usual. Adjust your Oven racks to Middle Position. Preheat Oven @ 350 degrees. Grease and Flour (2) 9" round pans, line with parchment paper. Grease paper rounds, dust pans with flour and knock off excess flour.
  • 2. Whisk Flour Baking Pdr, Soda salt, and only 1 1/2 c Sugar together in large Bowl.
  • 3. In 4 cup measuring cup whisk together well, Butter melted, Buttermilk, Oil, Vanilla, and Yolks.
  • 4. in Your Clean Electric Mixer, Bowl with Whisk atachment ready, Beat your Egg Whites @ med. Speed until foamy, about 30 sec. With Mixer running gradually add the remaining 1/4 Cup of sugar; Continue to Beat until stiff peaks form, about 30-60 sec. transfer to bowl and set aside.
  • 5. Add your Flour Mixture to your now Empty Mixing Bowl, with Whisk attachment and mixer running on low, gradually pour in the butter mixture, Mix until almost incorporated. ( a few Streaks of flour will remain visable) about 15 sec of mixing time. STOP THE MIXER. Scrape whisk and sides of Bowl. Turn mixer on to Med-low Speed, Beat 10-15 sec, till fully incorporated. . No More.
  • 6. With Rubber Spatula, Stir 1/3 of the egg whites into the batter to Lighten, then add remaining whites folding gently into the batter, until no white streaks remain.
  • 7. Divide Batter evenly between 2 pans. Lightly tap pans against the Counter 2-3 times to remove any large air Bubbles.
  • 8. Bake Until Cake Layers Begin to Pull away from the sides of the pans, and toothpick int=serted into the center comes out clean, 20-22 minutes. Cook Cakes in pans, on wire rack, and peel off Parchment. Invert Cakes again to Cool Completely about 1 1/2 hrs. FROST WITH YOUR FAVORITE FROSTING and Enjoy. NOTE: This cake Shoud Be LIGHT and FLUFFy in testure If Directions are FOLLOWED EXACTLY!
