Steps:
- Preheat oven to 320F.
- Beat eggs with a pinch of salt until foamy. Start adding sugar a few tablespoons at a time. Add next portion once previous sugar has been dissolved.
- Continue beating egg and sugar mix for 10 more minutes (should take around 15 minutes total).Stand mixer will be really handy.
- Mix corn starch with flour.Start sifting in corn starch and flour mix into the beaten eggs. Fold it gently moving your spatula from the bottom to the top. Once first portion of flour mix is incorporated, add in another portion. Continue until you have used all the mix.As a result you should get very light and airy batter.
- Grease and flour the baking pan, remove access flour.Or use a parchment paper liner instead.
- Pour in the sponge cake batter into the pan. Level with a spatula if needed.
- Bake in a preheated to 320F oven for 40-50 minutes.
- Do a toothpick test at 40 minute mark. If toothpick come out dry (not sticky and without any crumbs stuck to it) sponge cake is ready. Otherwise leave for another 5-10 minutes.Of course, look for nice light golden brown color as well.
- Take the pan out of the oven and let the cake cool before taking it out.Dust with powdered sugar and serve or use further in the other recipe.
CORNFLOUR SPONGE CAKE
Just three ingredients results in a light and feathery cake that serves as a subtle canvas for sweet fruit or just powdered sugar.

Steps:
- Preheat oven to 180C. Grease with butter or cooking spray, 20cm/8 inch round cake pan; line base with baking paper.
- Beat eggs with 2 tsp vanilla extract at medium high speed for about 10 minutes or until thick and creamy. Gradually add sugar, beating until dissolved between additons at medium speed.
- Sieve in the corn flour little by little for the third time and fold well in with a rubber spatula.
- Pour mixture into pan and spread evenly; bake for about 20 minutes or skewer inserted into the cake comes out clean.
- Turn sponge onto a wire rack to cool.
- Dust with a little sifted icing sugar and top with some fresh blueberries or any berries you like. Can also spread some jam to go with it.
FLUFFY SPONGE CAKE RECIPE

- Preheat oven to 350F/180C (fan forced)
- Cut out a round piece of parchment paper to fit the bottom of your cake tin. Grease the tin lightly with butter, then place the parchment paper round in the bottom of the tin.
- Sift the flour, baking powder and cornstarch/cornflour 7 times.
- In a medium-sized bowl, whisk the egg whites until soft peaks appear.
- Gradually add sugar, beating after each addition.
- Whisk in egg yolks, one at a time.
- Gradually and carefully, fold in the flour. Use a figure 8 method to fold, and make sure you're not over folding.
- Evenly pour the batter into the prepared tins.
- Place tins in the middle rack of the oven, side by side.
- Bake for 20 minutes, or until the sponge cake is started to brown on top.
- To test if it's ready, poke a metal skewer into the middle of the cake, the skewer should come out clean.
- Let the cakes cool in the pan for 10 minutes, before turning them out onto a wire rack.
- To turn out the cakes, carefully and gently run a butter knife outside the edge of the cake. Place a cooling rack upside down on the top of the cake tin, and carefully flip. The cake should come out straight away, if not, gently whack the bottom of the cake tin to loosen it.
- To serve - cool cakes completely, then sandwich together with whipped cream, raspberry jam, and/or strawberries. Top with cream, dust with icing sugar or top with chocolate icing.

- Preheat oven to 350.
- Butter and flour a 10 cup loaf pan or a 12 cup bundt pan.
- Sift the flour with the cornstarch, baking powder, and salt.
- Set aside.
- Beat the butter until smooth.
- Gradually beat in all but 1/4 cup of the sugar.
- Beat in the extract.
- Continue to beat for 5 minutes, until butter is very light and fluffy.
- Stir in the flour/cornstarch mixture in 3 additions, alternating with the half and half.
- In a clean bowl, beat the egg whites until it forms a soft peak.
- Beat in the remaining 1/4 cup of sugar, and continue beating until stiff, glossy peaks form when the beater is raised.
- Gently fold the beaten whites into the batter in 3 additions.
- Scrape the batter into the prepared pans.
- Bake for 1 hour and 10 minutes, or until the cake is well browned and springs back when lightly pressed in the center.

- Preheat the oven to 320°F (160°C).
- In a small pot over medium heat, whisk together the butter, cream cheese, and milk until melted and smooth. Remove from the heat and let cool.
- In a large bowl, whisk the egg yolks until smooth, then slowly drizzle in the cream cheese mixture, stirring until evenly combined.
- Sift in the flour and the cornstarch, whisking to make sure there are no lumps.
- In another large bowl, beat the egg whites with a hand mixer until soft peaks form. Gradually add the sugar while continuing to beat until stiff peaks form.
- Fold about ¼ of the egg whites and into the yolk mixture, then repeat with the remaining egg whites until the batter is evenly combined.
- Grease the bottom of a 9 x 3-inch (23 x 7.5 cm) round cake pan, then line the bottom and sides with parchment paper. If using a springform pan, make sure to wrap the bottom and sides completely in foil twice to prevent any leakage.
- Pour the batter into the pan and shake to release any large air bubbles.
- Place the pan into a larger baking dish lined with 2 paper towels at the bottom. The paper towels ensure that the heat is distributed evenly along the bottom of the pan. Fill the larger pan about 1-inch (2-cm) high with hot water.
- Bake for 25 minutes, then reduce the heat to 285°F (140°C), and bake for another 55 minutes, until the cake has risen to almost double its original height.
- Remove from oven, and carefully invert the cake onto your dominant hand and peel off the paper. Be extremely careful, the cake will be hot. You can also invert the cake onto a plate, but this will cause the cake to deflate more.
- Dust the top of the cake with powdered sugar, then slice and serve with strawberries while still warm!
