DUMPLINGS
My mother was one of the best cooks I ever knew. When she made stews we mostly found dumplings in them. We never ate things from packages or microwaves and you sure could taste what food was. That's the only way I cook today - I don't use any electronic gadgets to cook with except an electric stove.

Steps:
- Preheat the oven to 190°C/375°F/gas 5.
- Put your flour into a mixing bowl. Using a coarse grater, grate your cold butter into the flour. Add a pinch of sea salt and black pepper.
- Using your fingers, gently rub the butter into the flour until it begins to resemble breadcrumbs. Add a splash of cold water to help bind it into a dough.
- Divide the dough into 24 pieces and gently roll each into a round dumpling. The dumplings will suck up quite a bit of moisture so if your stew looks dry, add a cup of boiling water and give it a good stir.
- Place the dumplings on top of your fully cooked stew and press down lightly so that they're half submerged. Cook in the oven or on the hob over a medium heat with the lid on for 30 minutes.

DUMPLINGS FOR STEW-GRANDMA'S OLD FASHIONED RECIPE
These dumplings were a staple in Grandma's recipe file. She made them for chicken, turkey, and beef stews and soups. These dumplings are basically fluffy biscuits without a crust. They are moist when done and they actually melt in your mouth. I'm also posting her dessert dumplings recipe using stewed fruit. Yummm.....

Steps:
- 1. Mix all ingredients together so that it is sticky but able to drop from a tablespoon. Last 15 minutes before serving your stew or soup drop in broth with a tablespoon(you can make them smaller but they puff up as you can see in the photo)cover and cook for the remainder of time. Will make 6 very good sized dumplings, but could make as many as 10. Don't lift the lid while cooking.

FLUFFY HOMEMADE DUMPLINGS
All I can say is if you make these dumplings, you will want to make them again. They are worth the trouble. If you are like me you will have to triple this recipe every time you make it.

Steps:
- (Have chicken already cooked and boiling).
- Put all DRY ingredients in food processor, combine milk, salad oil, and food coloring; add to dry ingredients in food processor and process on high just till well blended.
- Lay large clean dry cloth on table and have it already dusted with flour.
- And about a cup of flour right in the middle.
- Pour soft gooey dough on mound of flour and put some flour on top of dough so dough won't stick to your hands while you work the flour into the dough. Keep working flour into dough till of a consistency to roll out into dumplings. Roll as thin as you like (I like mine very thin) and then cut with a pizza cutter or knife and then drop into BOILING juice with chicken already cut up and cooked.
- Simmer covered on very low heat (so as not to boil over or stick) for about 20 to 25 minutes. DO NOT Stir. If you check them and think they are sticking, take a pancake turner and scoot them around on the bottom till unstuck, but DO NOT stir. Then shut off and let sit for about 30 minutes.
- Then turn back on till boiling, shut off and let sit for another 30 minutes.
- Serve and enjoy.

- Peel and finely dice onion and garlic. Peel and dice carrot. Wash tomato and bell pepper, then cut into chunks. Peel and dice potatoes. Cut chicken thighs meat into large chunks and season with salt & pepper.
- In a pot, heat 1 tbs olive oil, then add chicken and gently fry until golden brown, stirring regularly to prevent sticking to the pan. When the meat is done, remove from pot.
- Add some more olive oil, if needed, then add diced onions and lightly fry until translucent. Add garlic, carrots, tomato, bell pepper and potatoes, and bay leaves. Cook for a couple of minutes, until the carrots begin to soften a bit, then return the chicken to the pot and add stock. Season with salt & pepper, add chopped parsley and bring to a boil, then reduce heat and let it simmer for about 20 minutes, until the vegetables are almost cooked through.
- Meanwhile, preheat oven to 190°C / 375°F and start the dumplings. Place flour in a bowl, add a pinch of salt and baking powder. Grate in butter and mix together until the dough looks like breadcrumbs. Add 50 ml of cold water and knead together into a ball of dough. Divide the dough into smaller pieces and shape into balls (about 6-8).

- Place the chicken thighs in a large deep pot. Cover with at least 12 cups of water. The pot should be 2/3 full of water. Add the bouillon cubes, salt, pepper, and thyme. Bring to a boil over high heat, keeping an eye on the pot so it doesn’t boil over. Reduce heat to medium and cook covered with a lid until the chicken is done about 1 hour. Transfer the chicken to a bowl and turn off the heat under the broth. Cover the chicken with a foil tent and allow the chicken to rest for at least 15 minutes. Remove the skins, allow the chicken to cool enough to handle, remove it from the bones and cut it into bite-size pieces. Cover the chicken to prevent it from drying out while you make the dumplings.
- Add the chicken broth, milk, cornstarch & salt to a medium saucepan. Whisk over medium heat until the sauce thickens, about 8 to 10 minutes. Remove from heat and set aside.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Using two forks or a pastry blender, cut in the shortening. Add the buttermilk and chicken broth and mix just to combine. The mixture should be pretty wet.
- Meantime, bring the broth in the pot back to a boil over medium-high heat. Drop the dumplings by large spoonfuls into the broth, separating them from each other in the broth. I use a 1/2 cup large ice cream/cookie scoop to drop the dumplings, to make sure they are all the same size, so they cook through at the same time. Cover the pot with a lid and reduce the heat to low. Simmer for 10 minutes. DO NOT PEAK OR REMOVE THE LID during this time. Remover lid after 10 minutes. Gently ladle some of the broth over the top of the dumplings and allow them to cook for an additional minute. Add the chicken and gravy to the pot and very gently mix to combine.
