1 cup fresh cranberries (rinsed and drained)
8 oz can Dole pineapple chunks
2 cups miniature marshmallows
2 cups shredded coconut
8 oz can Dole pineapple tidibts (drained)
1 cup chopped pecans
8 oz container Cool Whip

Steps:

  • Pulse fresh cranberries and pineapple chunks together in food processor or blender. Refrigerate for 2 hours.
  • Combine cranberry-pineapple mixture with marshmallows, coconut, pineapple tidbits and pecans in a large bowl.
  • Fold in Cool Whip.
  • Refrigerate until ready to serve.

1 can (20 ounces) crushed pineapple, juice drained and reserved
1 cup water
1 package (6 ounces) strawberry gelatin
1 can (14 ounces) whole-berry cranberry sauce
3 tablespoons lemon juice
1 teaspoon grated lemon zest
1/2 teaspoon ground nutmeg
2 cups sour cream
1/2 cup chopped pecans
Fresh strawberries, optional

Steps:

  • Combine pineapple juice and water in a 2-qt. saucepan; heat to boiling. Remove from heat; add gelatin and stir until it dissolves. Stir in cranberry sauce, lemon juice, zest and nutmeg. Chill until mixture thickens slightly. Add sour cream; stir until thoroughly combined. Fold in pineapple and pecans. Pour into an 8-cup mold; chill until firm. Unmold onto a serving plate. Garnish with fresh strawberries, if desired.

1-1/2 cups JET-PUFFED Miniature Marshmallows

Steps:

  • Microwave raspberries in medium microwaveable bowl on HIGH 1 min. or just until thawed.
  • Add dry pudding mix and cranberry juice; stir 2 min.
  • Add cranberry sauce; stir until blended. Gently stir in COOL WHIP, then marshmallows.
  • Refrigerate 1 hour.

1-1/2 cups sugar
3/4 cup water
1 envelope unflavored gelatin
1/4 cup lemon juice
2 tablespoons orange juice
1-1/2 cups heavy whipping cream
3 tablespoons confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • In a saucepan, bring the cranberries, sugar and water to a boil. Reduce heat and cook until berries burst. Strain through a food mill or sieve into a large bowl. , Stir in the gelatin, lemon juice and orange juice. Cool until mixture coats the back of a spoon. , In a small bowl, whip cream until soft peaks form. Add confectioners' sugar and vanilla; beat until stiff peaks form. Fold into cranberry mixture. Chill until set.

1 (6-ounce) box orange jello (8-serving size)
2 1/4 cups boiling water
3/4 cup orange juice
1 (8-ounce) package cream cheese, softened
1/2 cup sugar
1 cup whipping cream
1 cup cut-up orange sections

Steps:

  • 1. Chill small mixer bowl.2. Line bottom and sides of an 8 x 8 x 2-inch baking dish with wafers. Set aside.3. In medium bowl dissolve gelatin in boiling water. Stir in orange juice. Set aside.4. In large mixing bowl beat cream cheese and sugar on medium speed of electric mixer until fluffy. Gradually beat in gelatin mixture. Cover and refrigerate until partially set.5. Meanwhile, in chilled bowl beat whipping cream on medium speed of electric mixer until stiff peaks form. Refrigerate until ready to use.6. Beat gelatin mixture on medium speed of electric mixer until fluffy. Fold in whipped cream and orange sections. Pour over wafers in dish. Cover and refrigerate at least 4 hours or until set.
