MOM'S FLUFFY SCRAMBLED EGGS

I make these fluffy scrambled eggs when family comes for breakfast or when I just want to do something extra special for myself in the morning. My favorite cheese for this recipe is freshly grated white cheddar, but whatever you have in the fridge works! -Kailey Thompson, Palm Bay, Florida

8 bacon strips
12 large eggs, beaten
6 tablespoons butter, divided
2 cups shredded white cheddar cheese
1/4 cup minced fresh parsley
1/4 cup snipped fresh dill
1/2 teaspoon salt
1/4 teaspoon pepper
8 bread slices, toasted
Hot pepper sauce

Steps:

  • In a large nonstick skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove; drain on paper towels and break into 1-inch pieces. Discard drippings. In the same pan, cook and stir eggs over medium heat until almost set. Stir in 2 tablespoons butter; cook and stir until no liquid egg remains. Add cheese, parsley, dill, salt, pepper and remaining 4 tablespoons butter; stir gently until cheese is melted., Top toast with eggs and bacon; drizzle with hot pepper sauce.

The perfect fluffy scrambled eggs require nothing more than some eggs, a little technique, and a little bit of butter.

1/8 teaspoon kosher salt
1/2 tablespoon unsalted butter
Freshly ground black or white pepper
Minced shallot

Steps:

  • In a small bowl, beat eggs with salt.
  • In a nonstick skillet, melt butter over medium-high heat until foamy. Add eggs and cook, stirring and scrambling gently with a silicone spatula, until large, fluffy curds form and eggs are fully cooked through about 3 minutes. Season with pepper and serve.
  • Garnish with fresh shallot.

Scrambled Egg Whites is a healthy and delicious option for breakfast. Serve it with some toast and fruits and milk on the side.

1 tbsp Olive Oil
2 tsp Garlic (Chopped)
1/2 tsp Dry Parsley
1/2 tsp Dry Rosemary
1/2 tsp Dry Oregano
8 Egg White
Salt to taste
1/8 tsp Black Pepper Powder

Steps:

  • Heat olive oil in a non stick frying pan.
  • When the oil is hot, add garlic and fry for a few seconds, till they turn slightly brown.
  • Add dried parsley, rosemary and oregano in the pan and immediately add the egg whites in the pan. Simmer the heat to medium low.
  • Add salt and pepper and keep mixing the whites with a spatula so that they don't form lumps.
  • Switch off the heat once the whites are 80% done. They will cook further with the heat in the pan.
  • Serve hot with whole grain bread toast.

2 boneless skinless chicken breasts, cut into strips
3 tablespoons butter or 3 tablespoons margarine
6 eggs, beaten well
1/3 cup light cream or 1/3 cup whole milk
1/4 cup grated cheddar cheese
salt and pepper

Steps:

  • Saute chicken pieces in melted butter until cooked.
  • Combine eggs, cream/milk, cheese and seasonings and pour over chicken in skillet, stirring gently over medium heat.
  • Cook only until eggs are thickened but still moist and not browned (about 5 minutes).
  • Serve with vegetables and muffins.
