1 1/4 cup All-Purpose Flour
1/4 cup Caster Sugar
3/4 teaspoon Baking Powder
1/2 teaspoon Salt
1/4 teaspoon Ground Cinnamon
1 cup Light Beer
1 Egg
2 tablespoon Oil
1/2 teaspoon Vanilla Extract

Steps:

  • In a small bowl, stir together the All-Purpose Flour (1 1/4 cup), Caster Sugar (1/4 cup), Baking Powder (3/4 teaspoon), Salt (1/2 teaspoon), and Ground Cinnamon (1/4 teaspoon).
  • In a separate large bowl, stir together Light Beer (1 cup), Egg (1), Oil (2 tablespoon) and Vanilla Extract (1/2 teaspoon).
  • Add the dry ingredients to the wet ingredients, stirring just until combined.
  • Heat a large nonstick skillet over medium heat. Pour batter into skillet, using about 1/4 cup for each pancake.
  • Cook 3 to 5 minutes on each side, or until lightly browned. Serve warm with your favorite pancake toppings. Serve and enjoy!

1 ¼ cup flour (140 g)
¼ cup sugar (100 g)
¾ tsp baking powder
½ tsp salt
¼ tsp cinnamon
1 cup light beer (236 mL)
1 egg
2 Tbsp oil (30 mL)
½ tsp vanilla extract (2 mL)

Steps:

  • Dries: In a small bowl, stir together the flour, sugar, baking powder, salt, and cinnamon.
  • Wets: In a separate large bowl, stir together beer, egg, oil, and vanilla.
  • Mix: Add the dry ingredients to the wet ingredients, stirring just until combined (it's okay if the batter is a little lumpy).
  • Cook: Heat a large nonstick skillet over medium heat. Pour batter into skillet, using about ¼ cup for each pancake. Cook 3 to 5 minutes on each side, or until lightly browned. Serve warm with your favorite pancake toppings.

1 cup all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 large egg
3/4 cup milk
1/4 cup shortening or butter, melted

Steps:

  • In a small bowl, combine flour, sugar, baking powder and salt. Combine egg, milk and shortening; stir into dry ingredients just until moistened., Pour batter by 1/4 cupfuls onto a greased hot griddle. Turn when bubbles form on top of pancakes; cook until the second side is golden brown.

2 tablespoons white vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 egg

Steps:

  • Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour".
  • Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.

2 cups all-purpose flour
1/4 cup granulated sugar or 1/4 cup artificial sweetener
4 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 3/4 cups milk (I used almond milk and didn't notice a difference)
1/4 cup butter
2 teaspoons pure vanilla extract
1 large egg

Steps:

  • Combine together the flour, sugar or sweetener, baking powder, baking soda, and salt in a large sized bowl.
  • Make a well in the centre and add the milk, slightly cooled melted butter, vanilla, and egg.
  • Use a wire whisk to whisk the wet ingredients together first before slowly folding them into the dry ingredients. Mix together until smooth (there may be a couple of lumps, but that's ok).
  • The batter will be thick and creamy in consistency. If you find the batter too thick, and it doesn't pour or ladle out of the measuring cup smoothly, fold in a couple tablespoons of extra milk into the batter at a time until reaching desired consistency.
  • Set the batter aside and allow to rest while heating up your pan or griddle.
  • Heat a nonstick pan or griddle over low medium heat and wipe over with a little butter to lightly grease pan. Pour 1/4 cup of batter onto the pan and spread out gently into a round shape with the back of your ladle or measuring cup.
  • When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining batter.
  • Serve with honey, maple syrup, fruit, ice cream, or frozen yogurt, or enjoy plain.
