- In a small bowl, stir together the All-Purpose Flour (1 1/4 cup), Caster Sugar (1/4 cup), Baking Powder (3/4 teaspoon), Salt (1/2 teaspoon), and Ground Cinnamon (1/4 teaspoon).
- In a separate large bowl, stir together Light Beer (1 cup), Egg (1), Oil (2 tablespoon) and Vanilla Extract (1/2 teaspoon).
- Add the dry ingredients to the wet ingredients, stirring just until combined.
- Heat a large nonstick skillet over medium heat. Pour batter into skillet, using about 1/4 cup for each pancake.
- Cook 3 to 5 minutes on each side, or until lightly browned. Serve warm with your favorite pancake toppings. Serve and enjoy!

- Dries: In a small bowl, stir together the flour, sugar, baking powder, salt, and cinnamon.
- Wets: In a separate large bowl, stir together beer, egg, oil, and vanilla.
- Mix: Add the dry ingredients to the wet ingredients, stirring just until combined (it's okay if the batter is a little lumpy).
- Cook: Heat a large nonstick skillet over medium heat. Pour batter into skillet, using about ¼ cup for each pancake. Cook 3 to 5 minutes on each side, or until lightly browned. Serve warm with your favorite pancake toppings.

- Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour".
- Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
- Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

Steps:
- Combine together the flour, sugar or sweetener, baking powder, baking soda, and salt in a large sized bowl.
- Make a well in the centre and add the milk, slightly cooled melted butter, vanilla, and egg.
- Use a wire whisk to whisk the wet ingredients together first before slowly folding them into the dry ingredients. Mix together until smooth (there may be a couple of lumps, but that's ok).
- The batter will be thick and creamy in consistency. If you find the batter too thick, and it doesn't pour or ladle out of the measuring cup smoothly, fold in a couple tablespoons of extra milk into the batter at a time until reaching desired consistency.
- Set the batter aside and allow to rest while heating up your pan or griddle.
- Heat a nonstick pan or griddle over low medium heat and wipe over with a little butter to lightly grease pan. Pour 1/4 cup of batter onto the pan and spread out gently into a round shape with the back of your ladle or measuring cup.
- When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining batter.
- Serve with honey, maple syrup, fruit, ice cream, or frozen yogurt, or enjoy plain.
