GERMAN APPLE PANCAKES (APFELPFANNKUCHEN)
Perfectly fluffy and wonderfully sweet, these German apple pancakes are a great addition to any brunch and can even be enjoyed as a dessert. Loaded with apple inside and sliced apples on top, the cinnamon and sugar make them enjoyable on their own - or with a drizzle of syrup and powdered sugar!

Steps:
- Wash the apples and peel them, if desired. Cut the one whole apple into small cubes and the 1/2 apple into very thin slices. See the photo above for reference. Optional: You can sprinkle some lemon juice on top of the apples to avoid browning. Set the apples aside for now.
- Separate the eggs and put the egg whites into a medium-sized mixing bowl. Make sure that no egg yolk gets into the egg whites.
- Use an electric hand mixer to beat the egg whites until they are stiff. When tilting the bowl, the egg whites should barely move. This means that they are stiff enough.
- In a separate bigger mixing bowl, beat the egg yolks, milk and sugar until the mixture becomes frothy.
- Mix the flour, salt, and cinnamon together and add it to the egg yolk mixture in small increments with your electric mixer on the lowest setting. Keep mixing until the batter is smooth. At this point, your batter might be quite thick - that's okay.
- Set your hand mixer aside and carefully fold the beaten egg whites into the egg yolk batter with a spatula. Add in the apple cubes (not the slices!) and slowly fold them into the batter as well.
- Heat 1 tablespoon of oil in a pan and add approximately one soup ladle of batter per pancake. Since the batter can be quite thick, smooth it out with your ladle or a spoon. Now add the little slices of apple on top of the batter in the pan. You can get creative with your design but should not overlap apple slices to allow for even cooking.
- Fry your pancake on medium-heat for approximately 5 minutes on the first side, flip it, and then fry it for a slightly shorter amount of time on the other side. Once both sides are golden brown, remove your pancake from the pan and repeat the steps until all your pancake batter has been used up.
- Serve your pancakes with powdered sugar (traditional), maple syrup, or jam. Apple pancakes also go well with bacon for a North American brunch.

FLUFFY APPLE MOUSSE
One blogger's apple crepe filling gone wrong and a wonderful discovery is made. An amazing alternative to the ubiquitous chocolate mousse! The recipe calls for 6 egg yolks but no egg whites. I hate freezing egg whites, they always get lost in my TARDIS of a freezer, so I make a Pavlova with the whites and use the mouse as a filling. Good, huh? Pardon me while I pat myself on the back for my ingenuity....

Steps:
- To make the mousse:.
- In a double boiler, beat the eggs with the sugar, apple and lemon juice with a wire whisk. You should get a foamy mixture.
- Don't think you can do this in the microwave or on a pot straight over a flame. Trust me, use a double boiler, or in my case, a Pyrex bowl over a pot of simmering water. Okay, double boiler rant over.
- Keep whisking while it cooks, to keep it foamy until it gains volume up, doubles in size and is thick enough to coat a spoon. Chill.
- In a separate bowl, whip the cream and when the sauce is cold, gently fold it inches
- To make the caramalized apple:.
- Dice the apple and add it to the sugar and butter in a frying pan, over medium heat. Remove it when it starts to golden.
- Putting it all together:.
- Pour into the serving cups, over fresh diced apple or caramelized apple, if you've got a sweet tooth.
- Alternatively, use it (with the caramalized apple) as a wonderful filling for Pavlova.

- In a cup, add the gelatin and tablespoon of water and heat in the microwave for 10 - 15 seconds until dissolved. Give it a stir and set aside.
- Puree the washed strawberries and place in a mixing bowl and add the dissolved gelatin. Give it a good stir. Taste the strawberry mixture and add as much powdered sugar as you wish. I only added 1 1/2 tablespoons as my strawberries were already sweet.
- Whip up the cream until semi stiff. Do not over whip as it will be too stiff. Then add the cream to the strawberry mix and gently combine so you don't knock out the air.
- Transfer the mousse in to serving bowls and cover with plastic wrap. Refrigerate for about 4 hours. Serve as it is or see below for some serving ideas.

- Add the heavy cream to a large bowl (or the bowl of a stand mixer fitted with the whisk attachment). Beat for 2-3 minutes, or until the cream has doubled in size but not yet reached the soft peak stage.
- Note: Start on low speed and work your way up to medium-high. If you go straight to high speed, you’ll end up with a mess!
- Once the cream has thickened slightly, add the remaining ingredients and beat until it forms stiff peaks— about 3 more minutes. Scrape down the sides and bottom of the bowl to make sure everything is evenly incorporated.

- Then cut ½ apple and chop it in fine pieces then transfer it to a bowl, and store in a refrigerator until we complete all preparations.
- Now it's time to whipping cream so transfer the whip cream into a big mixing bowl. then start whisking with help of a hand whisker or electric beater until it becomes fluffy and double its original size or making soft pikes. (Electric beater takes only 2-3 minutes but hand whisker need 5-8 minutes to get fluffy)
- Once the whipping cream is done, remove the chopped apple pieces from the refrigerator and add them to whipped cream.
