TRUFFLED MASHED POTATOES

Number Of Ingredients 7

3 pounds red skin potatoes, cut into 2-inch dice
1 1/2 cups light cream
6 tablespoons butter
2 garlic cloves, minced (1 tablespoon)
2 1/2 teaspoons salt
1 teaspoon pepper
2 tablespoons truffle oil

Steps:

  • Put the potatoes into a large saucepan and cover with water. Place over high heat and bring to a boil. Cook until fork tender, about 25 minutes. Drain the potatoes and return to a low heat for 2 to 3 minutes to dry up any excess water.
  • Put the cream and butter into a small saucepan and place over medium heat. Warm until the butter has melted into the cream.
  • Using a masher, mash the potatoes in the saucepan. Add the garlic, cream, butter, salt and pepper and mix well using a large spoon. Stir in the truffle oil and serve.

This is my moms recipe that she uses, and now I make as well. It goes over well with the kids with ketchup, but I like them plain.

4 gold potatoes, sliced 1/4 inch thick
4 tablespoons butter
salt
pepper

Steps:

  • Put the butter in a pan (I use a stick free, the butter is for taste) and melt.
  • Add potatoes, and turn over every few minutes until brown. Not all need to be brown, but make sure they are cooked through. Usually takes about 15 minutes.
  • Add salt and pepper sometime during frying time, to taste.

4 large baking potatoes
2 cups shredded Cheddar cheese
1 (16 ounce) container sour cream and onion dip

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake potatoes in preheated oven for 45 minutes, or until cooked through.
  • Slice tops off of potatoes and scoop the flesh into a large bowl, leaving skins intact.
  • To the potato flesh add the cheese and dip. Mix well and spoon mixture into potato skins.
  • Bake for another 30 minutes, or until heated through.

These potatoes are delicious, rich, creamy and fluffy. Try them, and see for yourself. NOTE: If you use smaller potatoes, use less milk. Start with 1/2 c. and go from there.

8 large potatoes, peeled, and quartered
1 teaspoon sea salt
freshly cracked pepper, to taste
1/2 cup butter
3/4-1 cup milk
1/2 cup sour cream (optional)
2 eggs

Steps:

  • In a large pan, boil potatoes with salt until tender, 15-20 minutes.
  • Drain water, and add remaining ingredients.
  • Mash until smooth, with a potato masher.
  • Do not whip continually with a beater, or they will get gooey, and starchy as the gluten breaks down.
  • Note: You can turn this recipe into garlic mashed potatoes, by adding 3 cloves roasted garlic when you mash.
  • You can turn this recipe into garlic onion mashed potatoes, by adding sauteed onions, and roasted garlic to your taste, while mashing.
  • For another tasty dish, try adding shredded Cheddar cheese, and cooked broccoli pieces.

5 lb russet potato, peeled and cut into large chunks
cold water
1 tablespoon kosher salt, plus more to taste
8 tablespoons unsalted butter, cubed
1 cup heavy cream
½ cup whole milk
freshly ground black pepper, to taste
1 tablespoon fresh chives, chopped, for garnish

Steps:

  • Place the potatoes in a large pot and cover with cold water. Add the salt. Bring to a boil over high heat and cook until the potatoes are fork-tender, about 20 minutes longer.
  • Drain the potatoes and press through a potato ricer into a large bowl. Set aside.
  • Heat the butter, cream, and milk in a small pot over low heat until simmering.
  • Pour the cream mixture over the potatoes and stir to combine. Season to taste with salt and pepper.
  • Garnish with chives, if desired.
  • Note: A potato ricer gives these potatoes a super fluffy texture, but you can use a hand masher if you don't own one.

2 pounds Yukon Gold potatoes, peeled and cut into 2-inch pieces
1/2 cup (1 stick) unsalted butter, room temperature
1/2 cup milk
Freshly ground white or black pepper

Steps:

  • Fill a large pot with about 2 inches of water and add a pinch of salt. Set steamer basket in pot, making sure water doesn't seep through holes. Bring to a boil, then reduce to a rapid simmer.
  • Add potatoes to steamer basket and steam until tender when pierced with the tip of a paring knife, 25 to 30 minutes.
  • Heat butter and milk in a small saucepan over medium heat until the milk is warm and the butter has melted. Remove potatoes from steamer basket. While potatoes are still hot, use a ricer to rice potatoes into a large bowl. Add milk mixture and gently combine with a spatula; season with salt and pepper. Serve immediately.

1 egg
1 cup grated parmesan cheese
1 cup fresh parsley, chopped
1 tablespoon salt
1 tablespoon pepper
½ cup mozzarella cheese, cubed
3 cups mashed potato
2 cups flour
4 cups vegetable oil
fresh parsley, chopped, to serve
marinara sauce, to serve

Steps:

  • Preheat oven to 350ºF (180ºC).
  • In a bowl, mix the ground beef, egg, Parmesan cheese, parsley, salt, and pepper.
  • Take a piece of the meat mixture of about the size of a ping pong ball and slightly flatten it. Add a piece of mozzarella cheese in the center, and seal it with your hands.
  • Bake for 15 minutes.
  • Cover a meat ball with a layer of mashed potatoes, and mold it with your hands, continue molding it into a ball.
  • Dip the meatball in a bowl of flour. Repeat with remaining meatballs.
  • Heat the oil to 350ºF (180ºC). Fry the mashed potato-covered meatballs in batches until golden brown.
  • Transfer to a paper towel-lined plate.
  • Sprinkle with chopped parsley and serve with marinara sauce.
  • Enjoy!
